1 pound fully cooked smoked turkey sausage, cut into 1/2-inch slices
2 tablespoons olive oil
1/2 cup julienned green pepper
1/2 cup julienned sweet red pepper
1 small onion, sliced and separated into rings
1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried basil
1-1/2 teaspoons dried oregano
1/4 teaspoon pepper
2 medium tomatoes, cut into wedges
4 cups hot cooked rice

Steps:

  • In a nonstick skillet or wok, stir-fry sausage in oil over medium heat until lightly browned, about 10 minutes. Add the peppers, onion and seasonings. Cover and cook for 10 minutes or until the vegetables are crisp-tender, stirring occasionally. Add the tomatoes; cook 1 minute longer. Serve over rice.

Made this tonight for my sis and I and we really enjoyed it. It's on the hot/spicy side and has a wonderful flavor combination. The Andouille sausage adds an additional spice/smoky flavor that we loved. This can be put together and on the table in about 30 minutes. Serve this over rice or whole wheat spaghetti or just by itself.

Number Of Ingredients 11

2 teaspoons vegetable oil or 2 teaspoons olive oil, divided
2 teaspoons Thai red curry paste
2 cups broccoli florets
1 1/2 cups red bell peppers, strips (about 1 red bell pepper)
2 carrots, cut into thin 1-2 inch strips
2 green onions, cut into 1 inch pieces
2 garlic cloves, minced
1 lb cooked smoked andouille sausage, cut into 1/2 inch thick slices (Johnsonville brand)
1 (8 ounce) can sliced water chestnuts, drained
1/2 cup teriyaki sauce, divided
hot cooked rice (optional) or cooked whole wheat spaghetti (optional)

Steps:

  • In a large skillet, heat 1 tsp of oil.
  • Add cut sausage and cook until browned on both sides (about 10 minutes).
  • Remove from pan and drain on paper towels,.
  • Heat the last tsp oil and 2 tsp curry paste in the skillet over medium-high heat.
  • Add broccoli, pepper, carrots, onion and 1/4 cup teriyaki sauce.
  • Stir-fry 3-5 minutes.
  • Add garlic and water chestnuts and stir fry 1-2 minutes.
  • Add sausage and the remaining 1/4 cup teriyaki sauce.
  • Cook until sausage is heated through, about 3 minutes.
  • Serve over rice or pasta or eat by itself.
  • Enjoy.

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

1 can (8 ounces) bamboo shoots, optional
2 tablespoons cornstarch
1/2 teaspoon cayenne pepper
1 can (14-1/2 ounces) beef broth
2 tablespoons soy sauce
Hot cooked rice

Steps:

  • In a large skillet or wok, stir-fry onion and garlic in oil until tender. Add sausage, vegetables and bamboo shoots if desired; stir-fry until heated through.
