A great side dish to steak and potatoes. This recipe comes from one of my old Junior League cookbooks.

1 small onion, chopped
4 Tbsp butter
1 1/2 c bread cubes (dry, plain)
1/2 c light brown sugar
5 c canned tomatoes (crushed, diced or fire-roasted)
1 tsp salt (or to taste)
1/2 tsp freshly ground black pepper

Steps:

  • 1. Preheat oven to 350 degrees. Saute onion in butter until soft, but not browned. Add bread cubes and brown sugar. Cook and stir over low heat for 3-5 minutes. Stir in tomatoes and season with salt and pepper.
  • 2. Transfer mixture to a greased shallow casserole dish. Bake 30-40 minutes or until bubbly.

2 (14 1/2 ounce) cans stewed tomatoes with onion and green pepper (or the plain or other variety)
1 egg, beaten
1/8 cup chopped onion
1/2 cup crushed saltine crackers
3 tablespoons butter, melted
1/2 cup shredded cheddar cheese
1/4 teaspoon sugar
1/4 teaspoon garlic powder
1/4-1/2 teaspoon thyme
1/4 teaspoon pepper
salt, to taste

Steps:

  • Preheat oven to 350. Lightly grease/spray an 8" or 9" baking pan.
  • In a mixing bowl, combione all ingredients; mix well.
  • Por the mixture into prepared baking dish.
  • Bake, uncovered at 350 for about 45 minutes.

These were always served with Salisbury steaks and mashed potatoes and whole baked apples with brown sugar and cinnamon.

3 slice toast, buttered and sprinkled with garlic powder
3 Tbsp butter or margarine
1 medium onion, chopped
3 celery stalks, chopped
1/2 bell green pepper, chopped
35 oz can crushed tomatoes
2 Tbsp granulated sugar
1 tsp bouquet garni
salt and pepper to taste

Steps:

  • 1. Generously butter a 2-quart casserole. Drop in toast torn in small pieces. Set aside. Sauté in butter the onion, celery, and green pepper in a small skillet until soft. Add tomatoes, sugar, oregano, Bouquet Garni, salt and pepper to onion mixture and mix together. Place in casserole over toast. Bake at 350^ until bubbly and thick, about 1 hour. Grated Parmesan cheese may be added to top before baking.

2 cans stewed tomatoes
1 lb Polish kielbasa sausage, sliced or diced cooked chicken
Italian bread crumbs
1 med jar parmesan
1/2 lb shredded cheese
Zucchini and yellow neck squash, sliced
Salt and pepper
Butter

Steps:

  • Pour stewed tomatoes in large baking dish. Add meat, bread crumbs, both cheeses and stir.
  • Add zucchini, yellow neck squash, salt and pepper and add small pieces of butter to top of mixture. Make sure mixture is completely combined.
  • Bake at 350 degrees F for about 30 to 40 minutes until tender.
