A Kansas City restaurant called Stephenson's Apple Farm is known for these. This recipe is a clipping I had from a newspaper from who knows when. Could be their actual recipe or a very good copycat ! Custom yield is 1 batch. Please make any size your family prefers.

Number Of Ingredients 10

1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
1 egg, beaten
1/2 teaspoon salt
1 cup apple, finely chopped
3 cups flour
1 teaspoon vanilla
1 orange, juice, rind and all
1/2 cup sugar
2 teaspoons baking powder

Steps:

  • Place entire orange in blender and chop finely.
  • Set aside.
  • In a mixing bowl, combine milk, melted butter and egg, mixing slightly.
  • Add apples, orange and vanilla.
  • Sift together flour, salt, baking powder and sugar.
  • Stir dry ingredients into milk mixture with a spoon until blended.
  • Do not over mix !
  • Preheat oil in fryer to 350 degrees.
  • Drop batter off end of teaspoon into hot oil.
  • Turn once for even browning.
  • Cool slightly and roll in powdered sugar.

If you lived in Kansas City, Mo from the late 60's to mid 90's to probably had gone to Stephenson's Restaurants the original being at 40 Highway and Lee's Summit Road. They have long since been closed, however I was able to purchase a recipe book called Stephenson's Restaurants Receipts Old Family Secret Recipes that have some of the original restaurants popular dishes. The Apple Fritters were a signature dish,. This is a wonderful recipe and I am glad I was able to share it again with those who remember it.

Number Of Ingredients 11

1 cup milk
1 egg (beaten)
4 tablespoons margarine
1/2 cup sugar
1/2 teaspoon salt
1 orange, juice and zest of
1 cup apple (chopped fine)
3 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
4 cups vegetable oil, to fry fritters enough they float in a pot

Steps:

  • Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla. Sift together the flour, salt, baking powder and stir into milk mixture with a spoon until blended. Do not over mix. Preheat oil in a skillet to 350 degrees. drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool. Roll in powdered sugar. Serve with salads or eat as dessert.

Easy Apple Fritters image

We usually have these on Hanukkah (2nd or 3rd night), or perfect for a special Sunday Brunch. Usually served with Raspberry preserves or jam.

1 jar of motts applesauce
5 cups swan's down cake flour
1/4 cup unbleached cane sugar
3 eggs
3 cups corn oil
1 cup powdered sugar (optional)
raspberry preserves, as a garnish or dipping sauce

Steps:

  • Pour the oil into a deep-fryer and preheat. An electric skillet works also, but they might not be as crisp.
  • In a mixing bowl, beat the eggs with a fork, and set aside.
  • In another bowl, sift together the flour and sugar, then combine with the eggs and apple sauce. With an electric mixer, mix on a low speed till everything is well incorporated into a reasonably thick batter. The batter should be refrigerated for at least an hour before frying.
  • In a deep fryer, on a medium to high heat, drop the batter by the spoonful into the basket, and lower it into the oil. They burn quickly, and should only be deep fried for a couple of minutes or till golden brown. In an electric skillet on medium, the fritters cook for about 4 minutes on each side. Once they're golden, drain on paper towels and when cool, they may be rolled in powdered sugar and served with Raspberry preserves.

These delicious fritters were made weekly by the school cafeteria cook who, "after hours" let me sample them ...ummmmm so good and easy to make. I never want to lose this recipe! Try them they're nice with a pork dinner .. but my family loves them for dessert...you decide.

1 cup flour
1 1/2 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
1 egg (beaten)
1/3 cup milk
1 cup apple (diced)
1 cup cooking oil
confectioners' sugar (for dusting)

Steps:

  • Measure and sift all dry ingredients.
  • Beat eggs and milk together; slowly incorporating the dry ingredients.
  • Add the chopped apples.
  • In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
  • Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
  • Remove from oil and drain on brown paper.
  • Cool and sprinkle with powdered sugar.
  • Makes 12 small fritters.
  • Eliminate the sugar and serve with pork roast.

1/2 cup milk
1 egg
2 tablespoons melted butter
1 tablespoon grated orange zest
1/2 cup chopped apple (with skin on)
1 teaspoon vanilla essence
1 1/2 cups cake flour

1/4 cup powdered sugar

Steps:

  • Blend sugar with all wet ingredients.
  • Fold in orange zest, salt and baking powder.
  • Fold in flour.
  • Fold in chopped apples. Do not over mix.
  • Drop spoonfuls of batter in 325 degree oil and fry until golden brown.
  • Dust with powdered (icing) sugar for serving.
