A simple and tasty side dish when fresh green beans are plentiful. Prep time doesn't include time to prep the beans before steaming.

1 1/2-2 lbs fresh green beans (about 1 inch long)
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon olive oil
kosher salt
pepper

Steps:

  • Prepare green beans by snapping them or cutting them to approx 1 inch in length and rinsing them.
  • Over a pot of boiling water, steam beans for 15-20 minutes (until just tender with a little"bite" to them; Also, to steam I use a covered colander over a Dutch oven filled 1/4th full with water) Remove steamed beans and turn into a serving bowl.
  • Add all of the rest of the ingredients, seasoning to taste.
  • Enjoy!

5 slices turkey bacon
¼ cup Swanson® Unsalted Chicken Stock
¼ cup heavy whipping cream
1 ½ teaspoons fresh lemon juice
3 cloves garlic, minced
1 teaspoon dried dill weed
6 egg yolks
¼ teaspoon fresh ground black pepper
2 cups Swanson® Chicken Broth
2 pounds fresh whole green beans, trimmed
½ teaspoon fresh ground black pepper

Steps:

  • Place turkey bacon in a skillet over medium to medium-high heat. Cook to desired crispness, turning occasionally, about 6 minutes. Remove from heat; let cool slightly. Chop bacon into small pieces.
  • Mix Swanson® Chicken Stock, cream, lemon juice, minced garlic, and dill in a microwaveable bowl. Microwave on HIGH for 1 minute, 30 seconds.
  • Place water in the bottom of a double boiler; water should not touch the bottom of the top pan. Bring water to a boil. Lightly beat egg yolks in the top of the double boiler. Cook, stirring until thickened and egg yolks are about double in volume, 3 to 5 minutes. Reduce heat to low.
  • Gradually whisk in stock/cream mixture, whisking until completely combined. Mix thoroughly for another minute. Season with 1/4 teaspoon black pepper. Remove from heat and cover to keep sauce warm.
  • Set a steamer basket insert into a large saucepan. Pour in Swanson® Chicken Broth to just below the bottom of the steamer; bring to a boil. Add green beans, season with 1/2 teaspoon black pepper and steam until crisp-tender, about 5 minutes. Discard leftover chicken broth or reserve for another use.
  • Transfer beans to a serving dish; sprinkle with bacon crumbles. Top with hollandaise sauce and serve.

2 pounds potatoes, preferably Idaho, peeled and quartered
Salt and freshly ground black pepper
1 cup heavy cream
1/2 cup (1 stick) butter
1 pound green beans, trimmed
Olive oil
2 to 3 strips bacon (about 2 ounces), cut crosswise into pieces
1 onion, thinly sliced
1 can (28 ounces) whole, peeled tomatoes
1/2 teaspoon sugar
Salt and freshly ground black pepper

Steps:

  • You can boil the potatoes and steam the beans at the same time. Start with the potatoes: put them in a large pot and cover with cold water. Add 1 tablespoon salt and bring to a boil. Reduce the heat and simmer, uncovered, until the potatoes are tender when you stick a fork in them, about 30 minutes. At the same time, combine the cream and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
  • While the potatoes are cooking, start on the beans. Break the beans in half and put them in a colander large enough to fit over the pot the potatoes are cooking in; set aside. Now heat a large saucepan over medium heat. Drizzle 2 tablespoons of olive oil, add the bacon and cook until the fat is rendered, about 5 minutes. Add the onion and cook, stirring, until softened, about 3 minutes. Add the tomatoes to the pan, crushing them in your hand as you do so, to break them up. Stir in the sugar. Bring to a boil, reduce the heat and simmer, uncovered, until thickened, 7 to 8 minutes. Remove from the heat.
  • When the potatoes have cooked about 20 minutes, put the colander over the pot and cover the whole thing with aluminum foil. Continue cooking until the beans are crisp-tender, 5 to 7 minutes. Remove the colander from pot and dump the beans into the pan with the tomato sauce; fold in the beans and season with salt and pepper.
  • Now drain the potatoes in the same colander and dump them back into the pot. While the potatoes are still hot, pour in the warm cream and butter and mash the potatoes with a potato masher. Season with salt and pepper.

1 whole head garlic, cloves separated and peeled

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix tomatoes, garlic cloves, salt, pepper, and olive oil in a large bowl; spread into a 9x13-inch baking dish.
  • Roast tomatoes in the preheated oven until they are lightly flecked with brown spots and the garlic cloves are tender, about 45 minutes; remove from oven after 20 minutes and mash lightly with a spatula.
  • About 5 minutes before tomatoes are done, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until just tender, about 5 minutes. Place steamed green beans into a serving dish and combine with roasted tomatoes to serve.

Steps:

  • 1. Steam the green beans until tender, about 10 to 15 minutes.

  • Wash Swiss chard and clip tough ends, wash and cut tips off green beans but leave whole.

½ cup (1 stick) pure butter
finely grated rind of 1 lemon
juice of 1 small lemon, or to taste

Steps:

  • You will need a vegetable steamer or a pan or appliance adaptable to steaming. I use an electric wok that has a steaming ring that rests above the water level. Put enough water in the pan, etc., so the water will not touch the beans when it boils. With the steamer in the pan, bring the water to a boil. Place the green beans on the steamer above the water. Cover the pan and steam the beans until crunchy tender. Cooking time will vary. Young beans will steam-cook faster than older, mature green beans, which may take up to 20 minutes. Occasionally taste-test one for doneness. They should be slightly crunchy, not limp. Don't overcook. Meanwhile, as beans are steaming, finely grate the rind from the lemon and set aside. Then squeeze the juice from the lemon and set aside. Melt the butter in a small saucepan over low heat, being careful not to let it burn. Add the grated lemon rind and heat briefly. Then stir in lemon juice to taste and remove from heat. When the beans are done, remove them from the steamer and place in a large bowl. Pour the lemon butter over the hot beans and toss till coated. Taste for seasoning, adding salt and pepper as needed. Place in serving dish.

STEAMED FISH (WITHOUT A STEAMER) WITH GREEN BEANS



Steamed Fish (Without a Steamer) With Green Beans image

My granny used to cook fish on a plate. It's a great way to make perfectly steamed fish without overcooking it. Any white fish fillets will do; Snapper, Gurnard, Terakihi, to mention some New Zealand fish. In Scotland I made this with Haddock. Granny preferred Lemon Sole. This recipe is really only suitable for cooking for one or two. Any more than that and the fish won't fit on the plate!

2 fish fillets (not too thick and no skin, 1 fillet per serving)
salt
pepper
1 lemon
200 g fresh green beans
1/2 cup water (salted)
2 tablespoons olive oil (extra-virgin)

Steps:

  • Prepare the fish first. Trim the fish to remove any bones. Put it on a plate that is bigger than the pan you are going to use to cook the beans. Add salt, pepper and the juice of half a lemon. Save the other half of the lemon for serving.
  • Trim the ends off the green beans.
  • Put the beans in a pan with cold salted water.
  • Put the fish plate on top of the pan and the pan lid on top of the plate to cover the fish. The heat of the plate is your improvised steamer.
  • Bring the pan to a boil and simmer for about 5 to 8 minutes or until the beans are cooked. This should be enough time to cook the fish as well. If your fish fillets are thick, turn the fish half way through cooking the beans.
  • Drain the beans.
  • Pour the juices from the fish over the beans and toss through.
  • Place the fish on plates and drizzle olive oil over the fish. The best extra-virgin olive oil adds a wonderful flavour to the fish. If you don't like the fruity flavour of olive oil, then skip this step or use milder oil.
  • Serve with the beans on the side, lemon wedges and crusty bread to mop up the juices.
