SIOPAO (FILIPINO STEAMED BUNS)

This is my recipe for the the dough for the popular Filipino steamed bun with chicken and pork filling (link to recipe in footnotes). Serve hot with noodle soup.

3 ⅓ cups all-purpose flour
½ cup white sugar
½ teaspoon salt
1 (.25 ounce) package active dry yeast
1 cup lukewarm water
¼ cup vegetable oil
1 teaspoon vegetable oil, or as needed

Steps:

  • Mix flour, sugar, salt, and yeast together in a large bowl. Add water and 1/4 cup oil; mix into a dough. Knead until smooth and elastic, at least 10 minutes. Dust with extra flour if necessary.
  • Warm up the oven for 1 minute. Turn oven off.
  • Oil a large bowl; place dough inside and cover with cheesecloth. Place in the warmed oven until size has doubled, about 1 hour.
  • Punch down dough. Keep in the oven until risen, at least 15 minutes more. Knead dough onto a flat work surface and divide into 12 golf-sized balls. Roll out each ball and fill with choice of filling (see footnote for my chicken and pork filling). Gather and twist the edges together to secure the filling.
  • Place each siopao on a 3x3-inch piece of wax paper.
  • Place siopao in a steamer and steam for 30 minutes.

STEAMED BARBECUE PORK BUNS



Steamed Barbecue Pork Buns image

You don't need much experience at all to make beautiful barbecue pork buns, aka. char siu bao. Instead of that mysterious, gelatinous red sauce that Chinese restaurants use, I filled these buns with regular barbecue pork for a more savory version. Regardless of what filling you choose, I hope this helps shape your technique.

¾ cup water
1 ½ teaspoons active dry yeast
2 teaspoons vegetable oil
1 ½ teaspoons white sugar
2 cups self-rising flour
2 cups diced barbecued pork, or to taste
¼ cup finely sliced green onions
1 pinch cayenne pepper, or to taste
2 teaspoons sesame oil
¼ cup hoisin sauce, or to taste

Steps:

  • Pour water into a bowl. Sprinkle in yeast and let stand until yeast softens and begins to form a creamy foam, about 10 minutes. Add vegetable oil, sugar, and self-rising flour. Mix using a wooden spoon until a shaggy dough comes together.
  • Turn dough out onto your counter and knead into a smooth ball, about 10 minutes. Transfer dough ball into a lightly oiled bowl. Flip to lightly coat. Cover and let rise in a warm spot until doubled in size, about 2 hours.
  • Combine pork, green onions, cayenne pepper, sesame oil, and hoisin sauce in a separate bowl. Mix well and refrigerate.
  • Add a couple inches of water to a Dutch oven and set a bamboo steamer on top.
  • Poke dough down to deflate and transfer to a lightly floured surface. Cut dough in half and roll each half into a long tube. Divide each tube into 6 pieces. Roll each piece into a ball and press into a disk. Roll each disk until about 1/8-inch thick and 4 to 5 inches wide. Roll out edges so they are slightly thinner than the center.
  • Transfer a spoonful of filling onto the center of each dough circle. Pinch edges together to form multiple small pleats, moistening edges with water if needed. Squeeze pleats together at the top to seal in the filling. Place pork buns on individual squares of parchment paper. Transfer them to the cold steamer, cover, and let proof until noticeably puffed, 30 to 45 minutes.
  • Bring the water in the Dutch oven to a boil over high heat. Set timer for 10 minutes. Turn off heat and leave buns covered for 15 minutes. Uncover and transfer to plate.

This is a simple recipe for Char-Siu Bau. A wok equipped with a stainless steel steam plate--a plate with holes to allow steam to pass--is required to make these tasty buns.

½ pound boneless pork loin roast
½ cup barbecue sauce
3 tablespoons shallots, chopped
⅓ cup chicken broth
1 tablespoon dark soy sauce
1 tablespoon vegetable oil
1 tablespoon white sugar
1 recipe Chinese Steamed Buns

Steps:

  • Mix together pork, barbecue sauce, shallots, flour, chicken stock, soy sauce, oil, and sugar. Chill in refrigerator for at least 6 hours.
  • Preheat grill for medium heat and lightly oil the grate. Cook the pork until an instant-read meat thermometer reaches 145 degrees F (63 degrees C). Allow to cool; shred or finely chop the meat.
  • Prepare dough for Chinese Steamed Buns (see footnote).
  • Shape dough into balls. Roll each out into a circle, (like won-ton wrappers). Put 1 tablespoonful of prepared meat mixture in the center of each circle, and wrap dough around filling. Place seam-side down onto wax paper squares. Let stand until doubled, about 30 minutes.
  • Bring water to a boil in wok, and reduce heat to medium; the water should still be boiling. Place steam-plate on a small wire rack in the middle of the wok. Transfer as many buns on wax paper as will comfortably fit onto steam-plate, leaving 1 to 2 inches between the buns. At least 2 inches space should be left between steam-plate and the wok. Cover wok with lid. Steam buns over boiling water for 15 to 20 minutes.
  • REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface and produce yellowish "blisters" on bun surfaces. Continue steaming batches of buns until all are cooked.

Commercial versions have fillings like chicken mushroom, chicken curry, teriyaki chicken or beef, shoyu chicken, purple yam (ube), pork hash (bola bola), and lup choung. Some Hawaiian manapua makers offer pizza filled, turkey melt, ham and cheese omelet, teriyaki burger and spicy sausage. Imagine the flavors you could fill with your manapua. Have fun and enjoy!! NOTE: Times do not include proofing time for the dough.

1 (1/4 ounce) package dry yeast
3 tablespoons lukewarm water
2 cups warm water
1 1/2 tablespoons cooking oil or 1 1/2 tablespoons shortening
1/4 cup sugar, shopping list
3/4 teaspoon salt
6 cups sifted flour
1/2 tablespoon sesame oil
1 cup water
2 tablespoons cornstarch
2 tablespoons brown sugar
1 tablespoon hoisin sauce
1 tablespoon dry sherry
1 tablespoon catsup
2 tablespoons oyster sauce
2 tablespoons soy sauce
1 lb chinese barbeque pork, diced (Char Siu)

Steps:

  • Sprinkle yeast over 3 tablespoons lukewarm water and allow to stand until yeast softens.
  • To remaining water, add oil or shortening, sugar and salt, stirring until melted or dissolved. Cool. Add yeast mixture.
  • Place flour in a large mixing bowl or a heavy-duty mixer and add most of the liquid. Combine until flour incorporates liquid and starts to become a ball.
  • Add remaining liquid to make a very heavy dough.
  • Begin kneading the dough in the bowl. Continue kneading until you have a smooth ball that is beginning to show signs of long strands on the outside, indicating that the gluten has fully developed.
  • Remove dough from bowl and rinse out bowl. Pour sesame oil into bowl, return dough and turn it around until covered with a thin layer of the oil.
  • Cover with plastic wrap. Allow to rise until double in bulk (about an hour in a warm room).
  • Place the dough in the refrigerator and allow it to rise (3-6 hours). Punch it down again and allow it to rise again (3 hours).
  • Proceed with the filling while the dough is rising. In a saute pan, stir cornstarch, hoisin sauce, dry sherry, oyster sauce, ketchup, soy sauce and brown sugar into the 1 cup water until dissolved. Bring to a boil, reduce heat and simmer 1 minute, stirring constantly. Add char siu and simmer for 5 minutes. Take off heat and allow to cool completely. Chill covered until 1 hour before you are ready to stuff the manapua. Allow to return to room temperature before using.
  • When ready to cook, cut 12 (3-inch) squares of waxed paper and coat 1 side with very light coat of nonstick cooking spray.
  • Punch down dough and divide into 12 pieces. Roll each into a ball.
  • Make the dough as thin as you can and try to keep the edges thinner than the center.
  • Place the circle of dough in the palm of your hand. Spoon in a couple of tablespoons of filling, cupping the dough around it.
  • With the thumb and finger of the other hand, pinch the edges of the dough as if you were making a fluted edging on a pie crust. Pinch the folds together, twisting them as you do so.
  • Place the completed manapua on a square of greased waxed paper. Allow to plump up into a globe with a taut exterior.
  • Heat a steamer with plenty of water or preheat an oven at 350 degrees F.
  • If using steamer, fill steamer with manapua on their papers about 1 to 2 inches apart. Cover and steam vigorously for 15 minutes. Remove steamer from heat, let stand 5 minutes, then open. If using a metal steamer, place a folded tea towel across top of steamer, holding it in position with the lid. This will prevent steam from dropping onto manapua while steaming.
  • If baking, place manapua on their papers on a baking sheet about 1-2 inches apart. Brush top of buns with a little vegetable oil and bake 20 to 25 minutes. Remove from oven and allow to stand 1 minutes. Serve hot.
  • Manapua can be frozen. Frozen bau may be reheated by wrapping with a paper towel and microwaving for 1 minute.

CHINESE STEAMED BUNS WITH MEAT FILLING

Use meat that is half fat and half flesh for the most tender filling. 8 ounces chopped pork
1 (4 ounce) can shrimp, drained and chopped
1 teaspoon salt
2 green onions
1 tablespoon chopped fresh ginger root
1 tablespoon light soy sauce
1 tablespoon rice wine
1 tablespoon vegetable oil
1 tablespoon white sugar
ground black pepper to taste
2 ½ tablespoons water

Steps:

  • Cook chopped pork in a wok over medium heat. After 3 minutes of cooking add chopped shrimp if desired. Cook until pork is no longer pink. Drain, season with salt and set aside to cool.
  • Mix together green onions, ginger, soy sauce, rice wine, oil, sugar, and pepper. Stir in minced meat. Stir in water and mix thoroughly. Chill in freezer for 2 hours, or in refrigerator overnight to firm up and blend flavors.
  • Prepare dough for Chinese Steamed Buns.
  • Shape dough into balls. Roll each out into a circle, (like Won-Ton wrappers). Put 1 tablespoonful of prepared meat mixture in the center of each circle, and wrap dough around filling. Place seams down onto wax paper squares. Let stand until doubled, about 30 minutes.
  • Bring water to a boil in wok, and reduce heat to medium; the water should still be boiling. Place steam-plate on a small wire rack in the middle of the wok. 1 cup prepared pulled pork
1 teaspoon chopped ginger
2 scallions, finely chopped
2 (7.5-ounce) canisters refrigerated biscuit dough (20 total biscuits)
1/4 cup hoisin
1/4 cup low-sodium soy sauce
1 tablespoon apple cider vinegar

Steps:

  • Special equipment: 1 (2 1/2 or 2 3/4-inch) biscuit cutter; steamer, steamer basket or bamboo steamer
  • For the pork buns: Bring 2 cups water to a simmer in a pot that will fit a steamer basket or a bamboo steamer.
  • In a medium bowl, mix together the pork, ginger and scallions. Set aside
  • Working with 1 dough canister (10 biscuits) at a time, roll out the biscuits with a rolling pin until they are about 3 to 3 1/2 inches in diameter. Place 1 heaping tablespoon pork mixture in the center of 5 of the biscuits. Cover each with a remaining rolled-out biscuits. Gently press the biscuits together all the way around the filling and to the edges. Place a (2 1/2 or 2 3/4-inch) biscuit cutter on top so that it is centered on the bun. Press down on the cutter to form a clean, sealed edge and remove the excess dough from around the outside of the biscuit cutter. (If you do not have a biscuit cutter then just pinch together the edges of the buns with your fingers.) Place the sealed buns onto a sheet tray and cover with plastic wrap. Repeat with the remaining ingredients.
  • Place the buns into the steamer basket. Depending on the size of your steamer, you may have to cook the buns in batches of 5. Place the steamer basket over the pot of simmering water, cover and steam, about 10 minutes. The buns will be puffed and the tops will look somewhat dry and shiny. Let cool 1 to 2 minutes.
  • While the buns are steaming, make the hoisin dipping sauce: In a small bowl, stir together the hoisin, soy sauce, 2 tablespoons water and the vinegar. Serve with the buns.

4 cups self rising flour
1 cup milk
3/4 cup white sugar
2 links Chinese sausage, thinly sliced
5 hard-boiled eggs, cut into 1 ", pieces
1/2 lb barbecued pork (optional)
2 lbs ground pork
10 dried shiitake mushrooms
1 onion, finely chopped
3 tablespoons oyster sauce

Steps:

  • Submerge mushroom in hot water until softened. Take them out, dry and finely juliene. Reserve water.
  • Heat some oil in a skillet, put in onions and let it sweat for a while. Stir in the rest of filling except boiled eggs and BBQ pork. Season with fish sauce and pepper to taste.
  • Add sugar to milk to dissolve. Add flour one cup at a time, after each time kneed the dough before adding the next cup. Put dough into a large mixing bowl, put a damp cheese cloth over to prevent drying out.
  • Cut a handful of dough (size to your choice), roll out thin (use bread roller or the smaller dumpling roller). Add a spoonful of filling, 1 piece of egg, BBQ pork. Seal dough tight around filling and put on a cut-out piece of parchment paper. Steam buns for about 15 minutes. These buns freeze pretty well as well, if you want to make a big batch at a time.

1/4 cup peanut oil
4 teaspoons shallots, minced
3 tablespoons all-purpose flour
3/4 cup chicken stock
2 tablespoons soy sauce
2 cups pork, cooked (1/4 inch dice)
2 tablespoons oyster sauce
4 tablespoons granulated sugar
2 teaspoons sesame oil
1 lb ground pork
1/2 cup bok choy, finely chopped
1/2 cup green onion, finely choppped
1/4 cup soy sauce
2 tablespoons sesame oil
2 tablespoons sherry wine
1 tablespoon granulated sugar
1/4 cup warm water
2 1/4 teaspoons active dry yeast
4 cups all-purpose flour
2 tablespoons shortening
1/2 cup extra finely granulated sugar (Pulse in a grinder for 30 seconds)
1 cup whole milk, warm (105Ã F)
1 tablespoon vegetable oil
1 tablespoon baking powder
1 1/2 tablespoons water

Steps:

  • For Filling #1, heat the oil over medium heat and sauté the shallots 2 minutes or until light brown. Add the flour, stir to combine, and cook 1 minute.
  • Add the chicken stock, stir well, and cook 2 minutes. Add soy sauce and cook one minute.
  • Remove from heat and stir in cut pork and oyster sauce, sugar, peanut oil, and sesame oil. Chill until very firm.
  • For Filling #2, simply mix all ingredients together.
  • To make the dough, combine all dough ingredients into a stand mixer. Mix with the dough hook for 4 minutes.
  • Use the oil to grease the outside of the dough; cover and let rest in warm area 1 ½ hours or until double in size.
  • Punch down dough and divide into 24 pieces.
  • Using a rolling pin, roll each into a round disk, making quarter turn with each roll.
  • Roll to leave the center thick; thinner edges are easier to pleat.
  • Place about 1 tablespoon of filling at the center of each dough round, flat side up.
  • Gather the edges by first pleating counterclockwise, and then twisting to seal securely. Place the bun round side up on a square piece of parchment paper (2.5 X 2.5 inches).
  • Let buns rest, covered for at least 30 minutes.
  • Steam on high heat for 8 to 10 minutes. Do not uncover the steamer any time during the steaming. If a flat lid steamer is used, wrap the lid in a kitchen towel to prevent condensed steam from dripping on the buns.

This came from a good friend who is not Asian but loves to cook all Asian styles. It's an easy recipe although it helps to be able to just buy the Chinese barbecue pork. I do make my own barbecue pork, using a couple of whole filets and "Char Siu" sauce. You can also add sauteed cabbage to the filling if you want to make larger amounts. This is a typical Dim Sum item, served between brunch and 2 pm. with tea. (Amount of water in the dough is corrected.)

2 1/4 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 tablespoon lard
2/3 cup lukewarm water

  • pour in water and knead until smooth.
  • Cover with a damp teatowel and rest for 30 minutes.
  • Saute the onions and pork briefly in the oil.
  • Add water and seasonings and simmer until the sauce thickens.
  • Spread this filling onto a plate to cool.
  • Roll the dough into a long sausage shape and cut into twelve equal pieces.
  • Roll each into a ball and flatten into a circle with your fingers.
  • Place a spoonful of filling in the center and bring the dough up around it.
  • Pinch the dough firmly to join it.
  • Put each bun on a separate piece of parchment or wax paper.
  • At this point the pastries can be frozen (IQF) by placing them on a tray in the freezer.
  • Otherwise, brush each with a little water and set them in a steam basket.
  • Steam over rapidly boiling water for 10 minutes.
  • When steaming, do not crowd the pastries.
  • If necessary steam them in batches.
  • They can be rewarmed (once) carefully in the microwave.

I lived in China back in the early 90's and these were a breakfast favorite dipped in sweetened condensed milk. I thought they were like the bread version of marshmallows! I found them again at a Chinese restaurant this weekend, which sent will on a quest to find the recipe. I'm keeping it here at Zaar so I never lose it. Unfortunately, I'm not a low-carb diet right now. Bummer!

1 tablespoon yeast
1 tablespoon sugar
1 1/2 cups warm water
4 cups all-purpose flour

Steps:

  • In a small bowl, sprinkle yeast and sugar over 4 tablespoons of the warm water and leave it for 15 minutes.
  • Place the flour in a bowl and make a well in the center. Pour in the yeast mixture and the remaining water. Mix everything to form a dough.
  • Turn it onto a floured board and knead until smooth.
  • Return dough to the bowl, cover and let it stand in a warm place for about an hour or until doubled in size.
  • Punch down, cover again and let it stand for 20 minutes longer.
  • Knead the dough again and shape into rolls.
  • Bring the water in the bottom of a steamer to a boil. Place the rolls in the steamer, leaving a 1- inch gap between them. Cook for 10 minutes or until firm and cooked through.

1 cup milk
½ cup white sugar
1 (16-ounce bag) steamed bun flour
½ teaspoon salt
1 tablespoon olive oil
1 pound ground beef
½ cup diced shiitake mushroom caps
1 stalk green onion, diced
1 tablespoon cornstarch
1 teaspoon white sugar
1 teaspoon soy sauce
1 teaspoon oyster sauce
1 teaspoon sesame oil
½ teaspoon salt
⅛ teaspoon Chinese five-spice powder
1 pinch ground black pepper

Steps:

  • Mix milk and sugar for dough together in a bowl. Pour bun flour into another bowl and add gradually the milk mixture, stirring with a spatula.
  • Form the dough into a ball and knead with your hands for about 20 minutes. Add olive oil and knead for 10 minutes more.
  • Transfer dough to a dry bowl, cover with a towel, and let rest for 30 minutes.
  • Combine beef, mushrooms, green onions, cornstarch, sugar, soy sauce, oyster sauce, sesame oil, salt, five-spice powder, and pepper in a bowl with your hands until thoroughly mixed. Form the filling into 12 equally sized meatballs.
  • Roll dough on a lightly floured surface and cut into 12 equal pieces. Roll each piece out with a rolling pin to a circle, no more than 5 inches in diameter.
  • Cover each meatball with a dough circle, pinching the edges to close.

5 tablespoons Homemade Chicken Stock
1 tablespoon oyster sauce
2 1/2 teaspoons sugar
2 1/4 teaspoons tapioca starch
2 teaspoons ketchup
1 1/2 teaspoons dark soy sauce
Pinch freshly ground white pepper
1 tablespoon peanut oil
1 small onion, cut into 1/4-inch pieces
3/4 cup Asian Barbecued Pork
1 1/2 teaspoons Chinese rice wine or gin
1 teaspoon toasted sesame oil
2 1/4 cups bleached all-purpose flour
1/2 cup sugar
3 1/4 teaspoons baking powder
6 tablespoons milk
2 tablespoons melted lard or peanut oil

Steps:

  • Making the filling: In a small bowl, combine chicken stock, oyster sauce, sugar, tapioca starch, ketchup, soy sauce, and white pepper; set aside.
  • Heat a wok over high heat for 40 seconds and add oil. Coat wok with oil using a spatula. When a wisp of white smoke appears, add onion. Lower heat to medium, and cook until onion turns light brown, about 2 minutes. Raise heat to high, add pork, and cook, stirring, for 2 minutes. Add wine, and stir to combine.
  • Stir the reserved stock mixture and add it to the wok. Cook, stirring, until the sauce thickens and turns brown, 1 to 1 1/2 minutes. Add sesame oil, and stir to combine. Transfer to a shallow dish. Cool to room temperature. Refrigerate uncovered, for at least 4 hours or up to overnight.
  • Making the dough: On a clean work surface, combine flour, sugar, and baking powder. Make a well in the center, add milk gradually, and combine flour mixture with fingers. When milk is absorbed, add 3 tablespoons water, and work dough with fingers. Add lard, and continue to work dough with fingers. Using a dough scraper, gather dough in one hand and knead it with the other. Knead until dough is smooth and elastic, 12 to 15 minutes. (If dough is dry, add 1 teaspoon water at a time and continue to knead. If dough is wet, sprinkle a bit of flour on work surface and on hands and continue working it.) When dough is elastic (it will bounce back if you poke it lightly), cover with plastic wrap and let rest 1 hour.
  • Prepare the buns: Cut sixteen 2 1/2-inch squares of parchment or waxed paper. Bring a pan of water to a boil. Roll dough into a cylinder 16 inches long. Cut into 1-inch pieces. Roll each piece into a ball. Work with one piece at a time; cover those not being used with a piece of plastic wrap. Press down lightly on a ball of dough; then, with fingers, press a well into the center. Place 1 tablespoon filling into the well, and pleat the dough with fingers until filling is completely enclosed. Repeat for all 16.
  • Place buns on parchment squares, and place in steamer at least 2 inches apart to permit expansion. Cover steamer. Place over boiling water, and steam until dough is fluffy and dry and filling is hot, 12 to 20 minutes. Remove buns from steamer, and repeat with remaining buns. Serve warm.

1/2 pound boneless pork loin roast
1/2 cup barbecue sauce
3 tablespoons shallots, chopped
1/3 cup chicken broth
1 tablespoon dark soy sauce
1 tablespoon vegetable oil
1 tablespoon white sugar
1 recipe Chinese Steamed Buns

Steps:

  • Mix together pork, barbecue sauce, shallots, flour, chicken stock, soy sauce, oil, and sugar. Chill in refrigerator for at least 6 hours. Prepare dough for Chinese Steamed Buns. Shape dough into balls. Roll each out into a circle, (like Won-Ton wrappers). Put 1 tablespoonful of prepared meat mixture in the center of each circle, and wrap dough around filling. Place seams down onto wax paper squares. Let stand until doubled, about 30 minutes. Bring water to a boil in wok, and reduce heat to medium; the water should still be boiling. Place steam-plate on a small wire rack in the middle of the wok. Transfer as many buns on wax paper as will comfortably fit onto steam-plate leaving 1 to 2 inches between the buns. At least 2 inches space should be left between steam-plate and the wok. Cover wok with lid. Steam buns over boiling water for 15 to 20 minutes. REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface and produce yellowish "blisters" on bun surfaces. Continue steaming batches of buns until all are cooked.

3/4 cup warm water
1/8 cup sugar
1/2 tablespoon dry yeast
1/2 tablespoon melted lard
2 1/2 cups sifted all-purpose flour
5 tablespoons water
Canola oil, to cook
1 tablespoon minced garlic
1 tablespoon minced ginger
2 cups sliced shiitake mushrooms
Salt and black pepper
2 cups ground chicken meat
1/3 cup chopped chives
1 tablespoon truffle oil

Steps:

  • Buns: Mix warm water with sugar to dissolve. Add yeast and let stand for 10 minutes. Mixture should get foamy, or the yeast is dead. Mix in lard.
  • In a food processor, add flour and yeast mixture. While blade is spinning, pour in water until a ball forms. If dough is too sticky, add more flour. If dough appears dry and doesn't form a ball, add more water. As soon as a ball forms, take dough out and knead by hand on a floured surface. For 10 minutes roll dough into one long log about 2-inches thick. Cut into 2-inch pieces.
  • Filling: In a saute pan coated with oil, saute garlic and ginger. Add shiitakes and cook until soft. Season with salt and pepper. Let mixture cool.
  • Assembly: In a bowl, mix shiitakes, chicken, chives, and truffle oil. Season with salt and pepper. Keep filling chilled before stuffing buns.
  • Form thick circles and place about 1 tablespoon of stuffing in the middle of each piece of dough. Encircle stuffing with the dough, but do not seal. Let rest in a warm place for 30 minutes.
  • In a steamer basket, steam buns for 10 to 12 minutes.

¾ cup warm water (100 degrees F (38 degrees C))
3 tablespoons canola oil, divided
2 ½ cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder

Steps:

  • Stir together yeast and water in a small bowl; let stand 5 to 10 minutes. Whisk in 2 tablespoons of the oil.
  • Pulse flour, sugar, baking powder, and salt in a food processor a few times to combine. With machine running, pour yeast mixture through feed tube. Start slowly, then pour faster. Process until a dough ball forms, sides of bowl are nearly clean, and dough is medium-soft and tacky but doesn't stick to fingers.
  • Turn dough ball and bits out onto an unfloured counter and gather into a neat ball. If dough feels stiff, wet hands and knead in the water from your hands. Transfer to an oiled bowl. Cover with plastic wrap and let rise in a warm place until nearly doubled, about 45 minutes.
  • Meanwhile, cut twenty-four 3-inch squares of parchment paper. Put remaining 1 tablespoon oil in a small bowl.
  • Cut dough in half. Roll one half into a rope, about 1 1/2 inches thick and 14 inches long; cut crosswise into 12 equal pieces. Roll each piece into a ball, then smack it with your palm into a disk about 1/3 inch thick. With a rolling pin, roll each disk into a thin oval, about 2 1/2 inches wide by 4 1/2 inches long. Brush half of each oval with oil, then fold in half to form buns.
  • Set each bun on a parchment square; transfer to a bamboo or metal steamer tray, spacing about 3/4 inch apart and away from steamer walls. Set any that don't fit in the steamer on a baking sheet. Loosely cover with a kitchen towel. Let rise in a warm spot until about 1 1/2 times the original thickness, 20 to 30 minutes.
  • Meanwhile, fill a steamer pan or a pot halfway with water; bring to a rolling boil over high heat.

1/2 lb purple sweet potato or 1/2 lb orange sweet potato
1 cup water or 1 cup milk
1/2 cup sugar (I use 2 T sugar for a less sweet bun)
3 teaspoons yeast
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons lard or 4 tablespoons butter

Steps:

  • Peel and cook sweet potato.
  • Puree cooked sweet potato in blender with water or milk and sugar.
  • Pour sweet potato liquid into a bowl, sprinkle with yeast, and allow to dissolve.
  • Sift dry ingredients together.
  • Stir flour mixture into yeast mixture. Knead in 1 additional cup of flour as needed.
  • Melt butter or lard and knead into dough.
  • Let rise until double (60-90 min).
  • Roll dough into flat rectangle; starting from front edge, roll dough into log. Cut log into 16 equal segments. They don't all fit at one time, so I freeze the the rest of the shaped, raw, buns on a flat baking sheet, then transfer to a freezer bag. I can pull them out a few at time to thaw and steam as needed.).

1 (9 ounce) can sweet bean paste (Dow saah)
1 tablespoon sesame oil (for brushing)

Steps:

  • --------Instructionsfor dough----------.
  • Sift flour and baking powder into a bowl add sugar and mix, rub in the lard with your fingertips until evenly distributed.
  • Add water and vinegar together and knead until a fairly soft dough.
  • Shape into a ball and let it rest, covered, for 30 minutes.
  • ----------Tomake the buns-----------.
  • Divide the dough into10 portions.
  • Mould each into a smooth ball.
  • Roll each out on a lightly floured surface to a circle about 4 inches across.
  • Put a heaping teasp of filling in the centre and gather the edges inward, folding and pleating to make a neat join.
  • Twist dough to seal.
  • Put each bun, join downwards, on a piece of bakers paper, lightly greased with sesame seed oil,in a steamer.
  • Cover and steam for 20 min utes.
  • Serve warm.
  • (The cooked buns can be refrigerated overnight and reheated by steaming 3 minutes before serving).
  • -------------Filling------------:The filling for this recipe is simply a teaspoon full of the prepared sweet bean paste.

ANMAN - STEAMED BUNS WITH AZUKI (SWEET RED BEAN) PASTE

This is a popular snack in China and Japan. The buns are great right out of the steamer and can also be saved in the fridge for several days and reheated or eaten cool. Extra azuki paste can refrigerated for about a week, frozen, or used as a spread. I got the recipe for the buns themselves from a RecipeZaar recipe by Ms. See. The azuki paste is a modified version of a recipe I found on About.com Prep & Cooking time do not include the time taken to make the azuki paste.

1 1/3 cups azuki beans
4 cups water
1 cup sugar (do no substitute)
1/2 teaspoon salt
1 1/3 cups flour (all white or half white half whole wheat)
3 1/2 tablespoons sugar (or other sweetener)
1 pinch salt
3/4 teaspoon instant yeast
3/4 tablespoon baking powder
1 1/3 fluid ounces milk
3 1/3 fluid ounces water
1 tablespoon vegetable shortening

Steps:

  • Making the Azuki Paste.
  • Put the azuki beans in a large pot and fill with water. Let them soak overnight.
  • Bring the beans to a boil.
  • Turn down the heat and simmer for 10 minutes.
  • Remove the beans from the pot and drain them.
  • Put the beans back in the pot and add 4 cups of water.
  • Brings the beans to a boil.
  • Turn down the heat and simmer the beans for around an hour, until they're soft.
  • Drain the beans again.
  • Put the beans back in the pot and add the sugar and salt.
  • Simmer and stir the beans until they're thickened.
  • Remove from heat and cool.
  • Making the Buns.
  • Combine the flour, suar, salt, yeast, and baking powder and mix well.
  • Add the milk and water and mix well.
  • Add the shortening and knead the dough until it's smooth (add a little extra flout if it gets too sticky).
  • Let the dough rest for around 30 minutes, it will rise slightly.
  • Divide the dough into 10 balls and flatten them.
  • Take 1-2 spoonfulls of azuki paste, roll into a ball, and place in the center of one of the flattened dough balls.
  • Wrap the dough around the azuki and pinch it closed on top (twist if needed).
  • Repeat for the remaining dough balls.
  • Let the anman sit for 15 minutes.
  • Steam the anman for 15-20 minutes (a bamboo steamer works best). Add a little bit of white vinegar to the water to prevent discoloration.

She made the most delicious cheeseburgers using a coleman gas grill, or if at home, using her stove. Everyone knows how to make cheeseburgers, but my grandmother had a special touch, making everything...

2 lb fresh angus hamburger, or, fresh ground chuck hamburger (do not use frozen patties)
1 or 2 pkg hamburger buns (amount depends on number of patties)
1 or 2 c mayonaise
1 or 2 whole tomatoes-diced
1 or 2 whole onions-diced
1 c mushrooms-diced
8 slice optional: bacon-cooked crisp, broken up or kept as slices
8 slice lettuce-one leaf for each cheeseburger
8 slice american cheese (one slice per patty)
Any other type of condiments: mustard, ketchup, etc.

Steps:

  • 1. Using fresh hamburger, season the meat the way you like, and then make as many patties as you may need. I usually make about eight round patties, and each one is about one-two inches thick, and about four inches diameter. Cook the hamburgers patties using skillet without a lid, or, if using a grill, on top of grill, using medium heat. Make sure hamburger meat is throughly cooked. Never smash down hamburger while cooking them, since this squeezes all the meat juices, making dry hamburgers. Add cheese to each hamburger. Optional: fry about eight bacon slices, and then place them on top of every cooked cheeseburger.
  • 2. Take hamburger buns out of plastic bag, and place bag aside for later use. Split open each hamburger bun, and sit the bottom bun on top of each cheeseburger-inside bun portion on top of cheeseburger. After that, the top half of bun-inside portion- sits on top of bottom bun. When finished, each cheeseburger has one bun sitting on top of each cheeseburger. Place a lid over cheeseburgers and buns (if using skillet), or shut the grill lid (if using grill)...add skillet to medium heat, or grill on medium heat (with lid closed)... for one minute or so..make certain to not overcook cheeseburgers. After about one minute, take off heat, and place every cheeseburger inside steamed buns..and then place every cheeseburger inside the bun plastic bag. Seal the end of plastic bag to hold in steam, keeping cheeseburgers and steamed buns warm.
  • 3. Sometimes I mix diced onions, diced tomatoes, mushrooms, real bacon bits, etc..to a bowl of mayonaise, and top the cheeseburger with a dab of it. Also, I like to spritz my lettuce lightly with water, and slightly freeze the lettuce, then top my cheeseburger with it, along with the mayonnaise mix.

3 lb pork shoulder
1 medium onion, roughly chopped
2 jalapeñoes, roughly chopped
¼ cup lime juice
½ cup orange juice
5 cloves garlic
1 tablespoon instant dry yeast
2 tablespoons sugar
1 cup warm water
3 cups flour
1 teaspoon salt
1 teaspoon baking powder

Steps:

  • For the slow cooker carnitas: Combine the spices in a bowl and rub all over the pork shoulder.
  • In your slow cooker, place onions and jalapeños. Place pork shoulder on top of the onions and jalapeños. Add the lime juice, orange juice and garlic cloves.
  • Cover and cook low for 8 hours or high for 4 hours.
  • For the buns: Dissolve instant yeast, sugar and warm water in a small bowl. Let it proof/activate for 5 minutes or until bubbly or foamy.
  • Sift together the dry ingredients (flour, salt and baking powder).
  • Add the yeast mix to the dry ingredients, knead to form ball of dough.
  • Place ball of dough into greased bowl, cover and proof dough for 1 hour or until double in size.
  • Punch down dough, roll out and cut into golf ball sized pieces. Cover and rest the golf ball sized dough balls for 15 minutes.
  • When slow cooker carnitas are done, pull apart with a fork and transfer to a separate bowl. Keep the juices in the slow cooker and use it for a dipping sauce later.
  • When ready, prepare your steamer over high heat.
  • Flatten each dough ball, add about a tablespoon of pulled carnitas to the center and pull the sides of the dough around the filling.
  • Place seam side down on a piece of parchment paper. Steam for 15 minutes.
  • Serve with the slow cooker juices as a dipping sauce. If the dipping sauce has too much fat, skim the fat.
  • Enjoy!
