2 tablespoons dried ancho chile powder
1 tablespoon paprika
1 tablespoon ground coriander
1 tablespoon dry mustard
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 1/2 teaspoons arbol chiles
1 tablespoon kosher salt (plus extra to season)
1 tablespoon black pepper, freshly ground (plus extra to season)
4 (12 ounce) New York strip steaks
2 tablespoons canola oil
mesa grill steak sauce (Mesa Grill Steak Sauce)

Steps:

  • To make the spice rub, combine the ancho powder, paprika, coriander, dry mustard, oregano, cumin, chile de arbol, 1 tablespoon salt, and 1 tablespoon pepper in a small bowl.
  • Preheat a grill to medium-high or preheat a grill pan over medium-high heat. Brush both sides of the steaks with the oil and season with salt and pepper. Rub one side of each steak with about 2 tablespoons of the spice mixture.
  • Grill the steaks, rub side down, until lightly charred and a crust has formed, 3 to 4 minutes. Flip over the steaks and continue grilling for 5 to 6 minutes more for medium-rare; the steaks will be bright pink in the middle.
  • Spoon some of the Mesa Grill steak sauce into the center of each of 4 plates and top with the steaks. Or serve the sauce on the side for dipping.

This is a wonderful blend of flavors for steak, potatoes or pork. You can also mix 3 tablespoons steak spice with 1/2 cup soy sauce and 1/2 cup of olive oil. Marinate steaks overnight in frig.

2 grilled red bell peppers, peeled, seeded and chopped or 4 piquillo peppers, drained and chopped
3/4 cup aged sherry vinegar
3 tablespoons Dijon mustard
1 tablespoon prepared horseradish, drained
2 tablespoons honey
1 tablespoon molasses
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons Spanish paprika
1 tablespoon ancho chili powder
1 tablespoon mustard seeds, ground
1 tablespoon fennel seeds, ground
2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper
4 (12-ounce) boneless rib-eye or NY Strip or filet mignon
Olive oil
Salt and freshly ground black pepper

Steps:

  • Place the peppers, vinegar, mustard, horseradish, honey, molasses, Worcestershire, salt and pepper in a food processor or blender and blend until smooth, watching for steak sauce consistency. Can be made 1 day in advance and refrigerated.
  • Whisk together the paprika, ancho chili powder, mustard, fennel, salt and pepper in a small bowl until combined.
  • Twenty minutes before grilling, remove the steaks from the refrigerator and let sit, covered at room temperature.
  • Preheat grill to high.
  • Brush the steaks on both sides with oil and season liberally with salt and black pepper. Rub 1 side of each steak with 1 tablespoon of the rub. Place the steaks on the grill, rub-side down and let cook until golden brown and slightly charred, 3 to 4 minutes. Turn the steak over and continue grilling 4 to 5 minutes for medium-rare doneness (internal temperature 135 degrees F), medium doneness (140 degrees F), medium-well doneness (150 degrees F). Remove the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing. Serve with the Sherry Vinegar Steak Sauce on the side.

1 1/2 teaspoons kosher salt
1 1/2 teaspoons paprika

2 1/4 pounds skirt steak (2 steaks), each halved crosswise

a charcoal grill and a bag of hardwood charcoal, or a gas grill

Steps:

  • Mince garlic and mash to a paste with kosher salt. Stir together spices in a bowl, then stir in garlic and oil until a paste forms. Pat steak dry, then rub all over with paste. Marinate steak in a sealed large plastic bag, chilled, at least 6 hours.
  • Bring steak to room temperature, about 30 minutes.
  • While steak comes to room temperature, prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is hot when you can hold your hand 5 inches above rack for 1 to 2 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderately high.
  • Grill steak on lightly oiled grill rack, uncovered, turning over once, 4 to 6 minutes total for medium-rare.
  • Cut steak diagonally across grain into 1/4-inch-thick slices. Divide sweet-potato salad among 6 plates, then top with steak and arugula.

1 -2 teaspoon olive oil
2 teaspoons kosher salt

4 teaspoons sugar
2 teaspoons freshly ground black pepper

1/2 Vidalia or sweet onion, cut crosswise into 1/2-inch rings
3 tablespoons red wine vinegar
2 tablespoons mayonnaise
1 tablespoon honey

1/4 teaspoon kosher salt, plus more if needed

Steps:

  • For the steak: Place the steak on a large plate. Mix together the salt, sugar, pepper and cayenne in a small bowl. Rub the spice mix all over the steak.

1 tsp. light brown sugar
2 1/4 tsp. kosher salt, divided
1 hanger steak (about 1 1/4 lb.), cut in half lengthwise, center gristle removed
2 Tbsp. vegetable oil
3 bunches broccolini (about 1 1/2 lb.), trimmed, halved lengthwise if large
2 Tbsp. toasted sesame oil
1/2 tsp. crushed red pepper flakes
1 tsp. toasted sesame seeds, plus more for serving
3 scallions, thinly sliced
Flaky sea salt

Steps:

  • Finely grate 2 tsp. orange zest from 1 orange into a small bowl. Cut all oranges in half; set aside.
  • Add five-spice powder, brown sugar, and 2 tsp. kosher salt to bowl with zest and stir to combine. Rub steak all over with spice mixture.
  • Heat vegetable oil in a large heavy skillet (preferably cast iron) over high. Cook steak, turning often, until browned on all sides and an instant-read thermometer inserted into the center registers 130˚F for medium-rare, 15-20 minutes total. After steak has cooked for about 5 minutes, nestle orange halves cut side down around steak and cook until well browned, about 5 minutes. Transfer oranges to a plate. Transfer steak to a cutting board and let rest 10 minutes before slicing.
  • Arrange broccolini in an even layer in same skillet and heat over high. Cook, undisturbed, until well charred, about 3 minutes. Toss and continue to cook until tender and slightly charred all over, about 3 minutes more. Transfer to a large bowl. Squeeze in juice from 2 orange halves over. Add sesame oil, red pepper flakes, 1 tsp. sesame seeds, and remaining 1/4 tsp. kosher salt and toss to coat.
  • Transfer steak to a platter. Arrange broccolini mixture alongside. Top with scallions, sea salt, and remaining sesame seeds. Serve with charred orange halves to squeeze over, rice, and hot sauce alongside, if desired.

2 tablespoons fennel seeds
1 large shallot, finely chopped
2 tablespoons minced jalapeno
2 tablespoons finely chopped fresh cilantro leaves
5 garlic cloves, minced
3 pounds hanger steak
Coarse salt and ground pepper
Steak sauce, horseradish sauce, or chimichurri, for serving

Steps:

  • Sprinkle sugar over coriander and fennel seeds; roughly chop (or process spices in a spice grinder and add sugar in next step). Transfer to a small bowl with shallot, jalapeno, cilantro, and garlic. Pat steak dry and rub all over with spice mixture.
  • Heat a grill to high. Clean and lightly oil hot grill. Season steaks all over with salt and pepper. Grill steaks, 8 minutes per side for medium-rare, flipping once. Transfer steaks to a plate and let rest 10 minutes. Thinly slice against the grain and serve with steak sauce, horseradish sauce, or chimichurri.

This is a combination of several kopycat recipes I found for "Montreal Steak Spice". I messed with them till I came up with this. Hubby has a Cottonseed Oil alergy which seems to be in many store bought spice mixes which was the driving force for this.

6 tablespoons coriander
1 tablespoon green peppercorn
1 tablespoon red peppercorn
2 tablespoons white peppercorns
2 tablespoons black peppercorns
2 tablespoons cumin seeds
1 1/2 tablespoons yellow mustard seeds
2 tablespoons fenugreek seeds (I use when i can) (optional)
2 -4 dried New Mexico chiles, with seeds (mild)
2 -4 thai dried hot red chili peppers, with seeds #
2 tablespoons dried thyme
2 tablespoons rosemary (rough ground)
2 tablespoons hot paprika
6 tablespoons minced dried garlic (not garlic salt) or 6 tablespoons garlic powder, works in a pinch
2 tablespoons minced dried onion
dried onion flakes, slightly ground
3 tablespoons coarse sea salt, to taste Do not grind (optional)

Steps:

  • ** Note: Substitute 6 Tbls Black peppercorn, depending on what is you have handy or preference.
  • # Note: chilie peppers optional to taste, if you like it hot add more and with seeds
  • Lightly toast each whole spice separately in a dry cast pan until it releases the aroma or starts to brown
  • Then grind each spice separately to a fairly course texture due to the different hardness's of the spices. Some are harder than others and require more time in the grinder. As always, a cheap coffee grinder works great!
  • Combine the newly ground spices and the "Just Add" spices in bowl till cool then put in a jar for storage.
  • Rub on steak half an hour before cooking. The longer it marinades the better. I have added sage and used this on chicken and pork as well.
  • This makes a large mason jar full (1 quart) I make enough to share lol.

SKIRT STEAK WITH CHIPOTLE SPICE RUB

1/4 cup canned chipotle peppers and sauce
Juice of 1 lime
1 1/2 teaspoons toasted and ground cumin seeds
1 1/2 teaspoons toasted and ground coriander seeds
1 teaspoon coarsely ground black pepper
2 pounds skirt steak
Sea salt

Steps:

  • In a small bowl, mash the peppers with their sauce. Mix in the lime juice, cumin, coriander and pepper. Rub all over the steaks and marinate in the refrigerator for 2 hours. Allow steaks to rest out of the refrigerator for 30 minutes before cooking.
  • Preheat the broiler. Season the steaks all over with salt. Broil the steaks to desired doneness, about 3 minutes on each side for rare. (Time will depend on strength of broiler.)

3 tablespoons light soy sauce
2 tablespoons brandy or 2 tablespoons vinegar (I use vinegar because of my kids)
1 -3 teaspoon Chinese five spice powder (I use 2 tsp)
2 teaspoons honey
2 cloves garlic, minced
white pepper

Steps:

  • whisk ingredients together.
  • use one pound of thinly sliced meat if doing stir fry or one pound of steak tips, pour marinade over meat and place in ziplock bag and marinade for a couple of hours.
  • Drain marinade and stir fry meat with assorted chopped vegetables or cook steak tips under broiler or on grill.

2 grilled red bell peppers, peeled, seeded and chopped (or 4 piquillo peppers, drained and chopped)
3/4 cup aged sherry wine vinegar
3 tablespoons Dijon mustard
1 tablespoon prepared horseradish, drained
2 tablespoons honey
1 tablespoon molasses
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
3 tablespoons spanish paprika
1 tablespoon dried ancho chile powder
1 tablespoon mustard seeds, ground
1 tablespoon fennel seed, ground
2 teaspoons kosher salt
1 teaspoon fresh coarse ground black pepper
4 (12 ounce) New York strip steaks or 4 (12 ounce) filet mignon
olive oil
salt & freshly ground black pepper

Steps:

  • For the sherry vinegar steak sauce:.
  • Place the peppers, vinegar, mustard, horseradish, honey, molasses, Worcestershire, salt and pepper in a food processor or blender and blend until smooth, watching for steak sauce consistency. Can be made 1 day in advance and refrigerated.
  • For the Spanish spice rub:.
  • Whisk together the paprika, anco chili powder, mustard, fellen, salt and pepper in a small bowl until combined.
  • Twenty minutes before grilling, remove the steakds from the refrigerator and let sit, covered at room temperature.
  • Preheat grill to high.
  • Brush the steaks on both sides with oil and season liberally with salt and black pepper. Rub 1 side of each steak with 1 tablespoon of the rub. Place the steaks on the grill, rub-side down and let cook until golden brown and slightly charred, 3 to 4 minutes. Turn steaks over and continue grilling 4 to 5 minutes for medium-rare doneness (internal temperature 135 degrees F), medium doneness (140 degrees F), medium-well doneness (150 degrees F). Remove the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing. Serve with Sherry Vinegar Steak Sauce on the side.

During a research trip to Hong Kong, food editor Ian Knauer discovered that every family has its own recipe for five-spice powder, a pivotal ingredient in so many Chinese dishes. He took things a step further by adding black peppercorns to the aromatic mix, which holds its own against the robust flavor of hanger steak. As for side dishes, this would be delicious with steamed rice and stir-fried bok choy, but your menu doesn't have to be Asian-try it with a brightly dressed green salad and roasted potatoes.

For steak:
2 teaspoons Sichuan peppercorns
10 black peppercorns
1 teaspoon fennel seeds
1 teaspoon anise seeds
1 (2-inch) piece cinnamon stick
4 cloves
2 teaspoons packed dark brown sugar
1 hanger steak (about 2 pounds and 1 1/2 inches thick), center gristle removed
For Sauce:
1/4 cup soy sauce
1 tablespoon rice vinegar (not seasoned)
1 tablespoon water
1 tablespoon minced peeled ginger
2 teaspoons packed dark brown sugar
1 teaspoons minced shallot
1 small garlic clove, minced
1 tablespoon chopped cilantro
Equipment: an electric coffee/spice grinder

Steps:

  • Makes steaks:
  • Preheat broiler and lightly oil rack of broiler pan.
  • Finely grind spices with brown sugar and 11/2 tsp salt in grinder.
  • Pat steak dry, then sprinkle evenly with spice mixture and rub into meat. Broil steak 2 to 3 inches from heat, turning once, 7 to 12 minutes for medium-rare. Let steak rest on a plate at least 10 minutes.
  • Make sauce while steak rests:
  • Heat sauce ingredients, except cilantro, with meat juices from plate in a small saucepan over low heat, stirring, until warm. Stir in cilantro before serving.
