MUSHROOM CHEESESTEAK SANDWICHES

Number Of Ingredients 18

8 tablespoons (1 stick) salted butter
1 pound white mushrooms, sliced
1 pound portobello mushrooms, sliced
8 ounces cremini mushrooms, sliced
8 ounces oyster, shiitake or other wild mushrooms, roughly chopped
Kosher salt
1 teaspoon Montreal steak seasoning
Few dashes Worcestershire sauce
2 sprigs fresh thyme
1 yellow onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
One 15-ounce jar processed cheese sauce or spread, such as Cheez Whiz
4 deli rolls, halved
4 tablespoons spicy mustard
4 tablespoons mayonnaise

Steps:

  • Heat 2 tablespoons of the butter in a large skillet over medium-high heat. Add the white, portobello, cremini and oyster mushrooms, season with salt and cook, stirring, until the mushrooms are browned thoroughly, about 5 minutes. Season the mushrooms with the Montreal steak seasoning and Worcestershire sauce. Add the thyme sprigs and cook for 1 minute more. Transfer the mushrooms to a plate and set aside.
  • Add 2 more tablespoons of butter to the same skillet and throw in the onions and green and red peppers. Reduce the heat to medium low and cook the veggies until dark golden and soft, about 8 minutes.
  • Preheat the broiler.
  • Add the black pepper and cayenne to the processed cheese sauce and stir. Microwave according to the package instructions until hot.
  • To toast the rolls, spread 1 tablespoon of butter on the inside of both the top and bottom of each roll with a butter knife. Place the rolls on a baking sheet butter-side up and broil until golden brown, 3 to 4 minutes.
  • To build the sandwiches, spread 1 tablespoon of mustard and 1 tablespoon of mayonnaise on the bottom half of each roll. Place a pile of mushrooms onto the bottom of each roll. Top with the peppers and onions and spoon a generous amount of cheese sauce over the veggies. Place the top on the sandwich and serve immediately.

2 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 cups sliced cremini mushrooms
Kosher salt and freshly ground black pepper
10 ounces baby spinach
1 to 2 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
  • Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

1 teaspoon vegetable oil
2 New York strip (shell) steaks (8 ounces each)
Coarse salt and ground pepper
1 medium yellow onion, thinly sliced
8 ounces white button mushrooms, thinly sliced
1 tablespoon red-wine vinegar
1 bag (10 ounces) baby spinach
4 teaspoons grainy or Dijon mustard
8 slices crusty bread, toasted

Steps:

  • In a large skillet, heat oil over medium-high. Season both sides of steaks with salt and pepper. Cook steaks until medium-rare, about 5 minutes per side, flipping once. Transfer to a plate; tent loosely with foil to keep warm.
  • Add onion to pan; season with salt and pepper. Cook until onion begins to soften, about 4 minutes. Add mushrooms; season with salt and pepper. Cook until mushrooms brown, about 6 minutes. Add vinegar and any accumulated juices from steaks; cook until evaporated, about 30 seconds. Transfer mushroom mixture to a medium bowl. Add spinach to pan; season with salt and pepper. Cook, stirring, until wilted, about 3 minutes.
  • Thinly slice steaks against the grain. Spread mustard on 4 slices bread. Dividing evenly, top with sliced steak, mushroom mixture, and spinach. Top with remaining bread. Serve immediately.

2 (12-ounce) strip steaks (about 1 1/2 inches thick each)
Kosher salt and freshly ground black pepper
3 tbsp. olive oil, divided
4 cloves skin-on garlic, plus 2 cloves finely chopped, divided
1 sprig rosemary, plus 1 teaspoon chopped rosemary, divided
12 oz. ounces assorted mushrooms (such as oyster, shiitake, and cremini), quartered
1 tbsp. Dijon mustard
1/2 c. dry white wine
1 bunch spinach, thick stems discarded and leaves roughly chopped (about 6 cups)
1/2 c. crème fraîche or sour cream

Steps:

  • Preheat oven to 425°F. Season steak with salt and pepper. Heat a medium-size cast-iron skillet over medium-high heat. Add 1 tablespoon oil. Add steak, skin-on garlic, and rosemary sprig. Cook, turning once, until browned, 4 to 8 minutes.
  • Transfer skillet to oven, and roast to desired doneness, 3 to 6 minutes for medium. Transfer steaks to a cutting board, loosely tent with foil, and let rest at least 10 minutes before slicing.
  • Return skillet to medium-high heat (make sure to keep an oven mitt on the handle). Add mushrooms and remaining 2 tablespoons oil. Season with salt. Cook, stirring occasionally, until softened and starting to brown, 6 to 8 minutes. Add chopped garlic and chopped rosemary and cook, stirring, until fragrant, 1 minute.
  • Add mustard and wine. Cook, stirring, until thickened, 30 seconds. Transfer mushrooms to a plate. Add spinach to skillet and cook, tossing, until beginning to wilt, 1 to 2 minutes. Remove from heat, and stir in crème fraîche and mushrooms. Season with salt and pepper. Serve with sliced steak.

2 tablespoons butter, softened
2 French or submarine rolls, split
1/2 medium green pepper, julienned
1/2 medium sweet red pepper, julienned
1 small onion, sliced and separated into rings

1-1/2 teaspoons vegetable oil
1/2 pound beef flank steak, cut into strips
1/2 cup shredded Swiss cheese

Steps:

  • Butter rolls and place buttered side up on a baking sheet. Bake at 375° for 3-4 minutes or until lightly toasted., Meanwhile, in a skillet, combine the green pepper, red pepper and onion. Sprinkle with salt and pepper. Saute in oil until vegetables are crisp-tender. Remove and keep warm., To the skillet, add the steak. Cook and stir until steak reaches desired doneness. Return peppers to pan; heat through. Spoon beef mixture onto rolls. Sprinkle with cheese. Replace roll tops.

2 medium onions
3 tablespoons olive oil
Coarse salt and freshly ground pepper
4 (3-ounce) minute steaks
2 tablespoons Worcestershire sauce
Baguette bread, cut into four 6-inch pieces and split

Steps:

  • Peel, and cut onions into 1/2-inch-thick rings. Heat 2 tablespoons of oil in a large skillet over medium-high heat; add onions, cook until brown and tender, 10 to 15 minutes. Season with salt and pepper; remove onions to a plate.
  • Heat another tablespoon oil in same skillet over high heat. Season steaks with salt and pepper; cook 30 seconds on each side; remove steaks to plate. Add Worcestershire sauce and 2 tablespoons water to skillet, scraping up browned bits; return onions to skillet and toss to coat.

½ cup mayonnaise
3 cloves garlic, minced
1 tablespoon Parmesan cheese

2 pounds round steak, thinly sliced

½ teaspoon Worcestershire sauce
⅛ teaspoon liquid smoke
8 (1 ounce) slices provolone cheese
½ teaspoon Italian seasoning

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
  • Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.
