3 tablespoons olive oil
1 large red onion, sliced
3 tablespoons brown sugar
1/4 cup red wine vinegar
3 tablespoons water
1/2 pound Taleggio, cut into 8 slices
1/4 pound Gorgonzola, cut into 4 slices
4 tablespoons butter, softened
1 loaf crusty rustic Italian bread, sliced

Steps:

  • Heat the olive oil in a large skillet over medium-low heat. Add the onions and cook until soft and translucent about 10 to 15 minutes. Add the sugar, red wine vinegar and 3 tablespoons water and cook until the liquid is reduced completely and the onions are caramelized, about 10 minutes. Set aside.
  • Butter the outside of each slice of bread and arrange, butter side down, on a sheet pan. Put 1 piece of Taleggio onto a slice of the buttered bread, then a piece of Gorgonzola. Top with a heaping tablespoon of the onion jam, and another slice of the Taleggio. Cover it another slice of bread. Repeat with remaining ingredients.
  • Heat a large skillet over medium-low heat. Put the sandwiches into the skillet and cook until the bread is toasted and golden and cheese is melted, about 4 minutes per side. Slice each sandwich in half and serve.

Tender and juicy steak sandwich with caramelized onions, creamy Brie cheese, and fig jam. An incredible flavor combination that's both easy and elegant!

2 beef strip steaks ((10 ounces each) about 1-inch thick each*)
Kosher salt
Ground black pepper
2 1/2 tablespoons extra virgin olive oil (divided)
2 large red onions (thinly sliced)
1 tablespoon Dijon mustard
2 tablespoons melted unsalted butter
8 mini-sized French rolls, (pretzel buns, or similar soft, but sturdy buns)
1 1/2 cups arugula
8 ounces Brie cheese (cut into thin slices)
1/2 cup fig jam

Steps:

  • Preheat the oven to 350 degrees F. Remove steak from the refrigerator and place on a plate. Season liberally with salt and pepper on both sides. Let come to room temperature while you caramelize the onions.
  • Prepare the Dijon onions: Heat 1 tablespoon olive oil in a large sautee pan over medium high. Add the sliced red onions and 1/4 teaspoon kosher salt. Cook until the onions begin to soften and brown, 5-8 minutes. Reduce heat to low and let cook, stirring occasionally, until the onions are very soft and caramelized, about 15 additional minutes. Remove from heat and stir in the Dijon to evenly coat. Remove the onions to a plate or bowl, then gently wipe the skillet clean with a paper towel.
  • Heat the remaining 1 1/2 tablespoons olive oil in the skillet over medium high. Once the oil is very hot and almost smoking, add the seasoned steaks. Do not crowd them-if your skillet is not large enough to easily accommodate both, cook them in batches. Sear the steaks for 1 minute on each side, then reduce the heat to low and cook the steak for about 6-8 minutes, turning once, until rare and a thermometer inserted in the center reaches 125 degrees F. Transfer to a plate and cover with foil. Let rest for 10 minutes, then slice into strips.
  • Spread the melted butter onto the bottom of a 9x13-inch baking dish, using just enough to coat the pan. Lay the bottom of the buns in a single layer in the baking dish, then top with the arugula, steak slices, Brie, and the caramelized onions. Spread the inside of the top buns with about 2 teaspoons jam, then lay the buns on top to complete the sandwiches. Brush the bun tops with the remaining melted butter, then cover the pan with foil. Bake for 15 minutes, just until the cheese has melted. Transfer to a serving plate and enjoy warm.

1 red onion, sliced into 1/4-inch thick rounds
Cooked flank steak slices, about 12 ounces
4 to 6 slices Swiss cheese
1/2 cup mayonnaise
2 tablespoons honey
1 teaspoon garlic flakes
Salt
Freshly ground black pepper
4 long rolls

Steps:

  • Heat a stove-top griddle with cooking spray and set over medium-high heat to preheat. Place red onion slices on hot pan and sear 2 minutes per side, flipping with a spatula, until golden brown and slightly softened.
  • Arrange steak slices alongside onion. Cook 2 to 3 minutes, until hot. Place cheese on top of steak and cook 1 minute, until cheese melts.
  • In a small bowl, whisk together mayonnaise, honey and garlic flakes. Season, to taste, with salt and freshly ground black pepper. Spread mayonnaise mixture on rolls and top with seared onion slices and cheese-smothered steak.

RED ONION JAM:
1 pound hanger steak
2 cloves garlic, minced
2 tablespoons rosemary, thyme, and sage, minced
8 ounces applewood smoked shoulder bacon, sliced thin
Frisée, washed and patted dry
Red onion jam (see recipe below)
8 thick slices rustic country bread
Sea salt
Fresh crack black pepper
1 pinch controne hot pepper flake
Extra virgin olive oil
2 red onions, sliced thin
1/2 cup red wine vinegar
1/4 cup sherry vinegar
1/2 teaspoon yellow mustard seed
1/4 teaspoon fennel seed
1/4 cup honey
Sea salt
Fresh cracked black pepper
Extra virgin olive oil

Steps:

  • Season hanger steak with salt, pepper, chili flake, herbs, and olive oil. Set aside, uncovered 1 hour up to 12 hours. Heat a grill on high heat. Sear steak on all sides, achieving a good crust. Cook steak to rare/medium rare. Remove from grill and let rest at least 15 minutes. Meanwhile, brush one side of the sliced bread with olive oil and season with salt and pepper. Grill bread, oil side down until nice and toasty. Remove and let rest grilled side up. In a small saucepan, drizzle olive oil. Add red onions and cook until well caramelized. Add the remainder of ingredients and bring to a boil. Turn down heat and allow to slowly simmer until all liquid has reduced. Will keep for several weeks in the fridge. Thinly slice steak, against the grain. To build sandwich: spread red onion jam on grilled side of bread. Arrange thin slices of shoulder bacon topped with frisée, and drizzle with with olive oil and season with salt and pepper. Arrange hanger steak on top and top sandwich with grilled bread. Enjoy with a dark English-style beer like a stout or porter.

3 tablespoons olive oil, divided
Coarse salt and ground pepper
4 minute steaks, (3 ounces each)
2 tablespoons Worcestershire sauce
Toasted country bread

Steps:

  • Slice onions into 1/2-inch thick rings. Heat 2 tablespoons olive oil in a large skillet over medium-high heat; cook onions until browned, tossing occasionally, 10 to 15 minutes. Season with salt and pepper; remove.
  • Heat remaining tablespoon oil in same skillet over high heat. Season steaks with salt and pepper. Cook 30 seconds on each side; remove. Add Worcestershire sauce and 2 tablespoons water to skillet, scraping up browned bits with a wooden spoon. Return onions to skillet; toss.
  • Sandwich steak and onions between toasted bread.

4 minute steaks (Sainsbury's Taste the Difference are good) or 2 x 1cm thick sirloin steaks
1 tbsp olive oil , plus extra for drizzling
1 small ciabatta loaf
4 tbsp caramelised onions
half an 85g bag watercress

Steps:

  • Put the grill on. Heat a little oil in a frying pan. Season both sides of the steaks with salt, then fry for 1-2 minutes on each side. Meanwhile, slice the ciabatta in half lengthways and grill the cut sides until golden.
  • Drizzle the toasted ciabatta with olive oil, spread the bottom half with the onions and sit the steaks on top. Cover with the watercress and close the sandwich with the other half of the ciabatta. Cut into four sandwiches and serve two per person. Serve hot.
