GARLIC WINE SAUCE

3 tablespoons minced shallots
3 tablespoons minced garlic
1/2 teaspoon salt
4 turns freshly ground black pepper
1 1/2 cups veal stock or brown chicken stock
1/2 cup dry red wine
2 tablespoons unsalted butter, at room temperature

Steps:

  • Combine the shallots, garlic, salt and pepper in a small nonreactive saucepan over high heat. Stir in the stock and the wine and bring to a boil. Cook over high heat for 15 minutes. Swirl in the butter, remove from the heat, and continue to whisk in the butter until thoroughly incorporated. Mound the potatoes in the center of the plate. Slice a couple of slices off the roast and position them at an angle against the potatoes. Spoon the sauce over top. Garnish with fresh black pepper and long chives.

1⁄2 Tbsp olive oil
2 (12 oz each) sirloin
skirt
or flank steaks
Salt and black pepper to taste
1 medium shallot
minced
1 cup red wine
1 cup beef broth
2 Tbsp cold butter
cut into small pieces
1 Tbsp fresh thyme leaves or 2 Tbsp chopped parsley

Steps:

  • Heat the olive oil in a large cast-iron skillet or stainless-steel pan over medium-high heat. Season the steaks on both sides with salt and plenty of black pepper. When the oil is lightly smoking, add the steaks to the pan. Cook, turning every minute or so, for about 8 minutes total, until the steaks are deeply browned and firm but yielding to the touch. Remove to a cutting board to rest. Add the shallot to the same pan and sauté for 1 minute, until softened. Pour in the red wine and the broth, scraping the bottom of the pan to release any brown bits. Cook over high heat for 5 minutes, until the liquid is reduced by three-quarters. Remove from the heat and whisk in the butter one piece at a time. Stir in the parsley. Slice the steaks into thick pieces, arrange on 4 warm plates, and pour the red wine sauce over the pieces.

2 T-bone steaks, 1 1/2 inches thick
onion powder to taste
coarse kosher salt to taste
coarse ground black pepper to taste
12 sprigs fresh thyme
1 tablespoon avocado oil, or more as needed
¼ cup butter
4 cloves garlic
¾ cup red wine
½ cup Worcestershire sauce
½ cup beef broth

Steps:

  • Season steaks on both sides generously with onion powder, salt, and pepper. Add 3 sprigs of fresh thyme on each side of the steaks and place inside vacuum-seal bags and seal.
  • Place vacuum-sealed bags into a sous vide water bath with the temperature set to 129 degrees F (54 degrees C). Leave in water bath for 1 1/2 hours.
  • Take steaks out, pat dry with paper towels, and remove, reserving sprigs of thyme.
  • Heat a cast iron pan over high heat. Drizzle in avocado oil. Sear steaks for about 45 seconds per side. Drop 2 tablespoons butter and garlic into the pan while searing the second side, tilt the pan, and spoon butter on top of steak. Add remaining butter and sear the edges of the steak using tongs, about 45 seconds each.
  • Remove steaks from the pan and add red wine, Worcestershire sauce, reserved sprigs of thyme, and broth. Let simmer until liquid has reduced by half, 4 to 5 minutes. Strain liquid through a fine-mesh sieve into a bowl. Top steaks with red wine sauce and serve.

2 (6 ounce) flat iron steaks
2 tablespoons olive oil
⅛ teaspoon cayenne pepper, or to taste
1 teaspoon ground black pepper
1 tablespoon ground paprika
1 teaspoon salt
1 ½ teaspoons dry mustard powder
1 ½ teaspoons garlic powder
3 tablespoons olive oil
½ cup dry red wine
1 cup sliced portobello mushrooms

Steps:

  • Allow the steaks to come to room temperature.
  • Stir together 2 tablespoons of olive oil, cayenne pepper, black pepper, ground paprika, salt, mustard powder, and garlic powder in a small bowl to make a paste.
  • Prick steaks all over with a fork and rub them well with the spice rub paste, working the rub into the meat.
  • Heat a large, heavy skillet over high heat and add the remaining 3 tablespoons of olive oil. Heat oil until it just begins to smoke and quickly sear the steaks until the outside has browned but the center is still blood red and just warmed, 2-3 minutes per side. An instant-read thermometer inserted into the center should read 115 degrees F (46 degrees C).
  • Remove steaks from skillet with tongs. Pour the dry red wine into the skillet, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir in the sliced portobello mushrooms, and cook and stir until mushrooms are cooked and have released their liquid, about 5 minutes.
  • Return steaks to the skillet on top of the mushroom-wine sauce. Reduce heat to LOW and cook until sauce reduces and thickens, about 5 minutes. Remove steaks to serving platter and pour mushroom sauce over steaks to serve.
