1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
½ red onion, sliced
olive oil, to taste
salt, to taste

chili powder, to taste

1 teaspoon cumin, to taste
½ lime, juiced
fresh cilantro, chopped, for garnish
8 whole grain tortillas, warmed

Steps:

  • Preheat the oven to 450°F (230°C).
  • Lay the flank steak in the middle of a baking sheet. Arrange the bell peppers and red onion around it. Drizzle everything with olive oil and season with salt, pepper, chili powder, garlic powder, and cumin.
  • Using your hands, rub the seasoning into the vegetables, then into the steak. Flip the steak and season the other side.
  • Squeeze the lime juice over the top of the steak and veggies.
  • Cook for 12 minutes, or until the meat has reached your desired doneness.
  • Transfer the steak to a cutting board and let it rest for 10 minutes, then slice it into pieces, going against the grain.
  • Fill up a warm tortilla with the steak, bell peppers, and onion.

2 lb boneless, skinless chicken thighs
2 lb skirt steak
2 lb boneless pork shoulder, thinly sliced
2 ½ tablespoons salt, divided
1 ½ tablespoons black pepper, divided
2 tablespoons paprika
2 tablespoons chili powder
2 tablespoons cumin
6 cloves garlic, minced
½ cup lime juice, plus more for serving
2 large white onions, halved
1 large white onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 tablespoons olive oil
10 corn tortillas, medium
1 cup guacamole
1 cup sour cream
1 cup pico de gallo
3 wooden skewers

Steps:

  • Slice the skirt steak into roughly 3-inch (7-cm) pieces. Transfer the pieces to a medium bowl.
  • Thinly slice the pork shoulder, then transfer the pieces to a separate medium bowl.
  • Pound the chicken thighs flat, then slice them in quarters. Transfer the pieces to a third medium bowl.
  • In a small bowl, combine 2 tablespoons salt, 1 tablespoon pepper, paprika, chili powder, cumin, garlic, and lime juice. Stir until there are no lumps.
  • Evenly divide the marinade among the 3 bowls of chicken, steak, and pork.
  • Toss the meats until they are evenly coated, then refrigerate for at least 30 minutes.
  • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Place 3 onion halves in the middle of the baking sheet, then insert a skewer in each onion, evenly spaced, near the inner edges.

  • On the other side of the baking sheet, spread out the tortillas. Cover the tortilla side with foil.
  • Bake for 15 minutes, until the edges of the meat and the vegetables are slightly charred.
  • Slice your meat of choice into a tortilla, add vegetables, and top with guacamole, sour cream, pico de gallo, and a squeeze of lime.

Steps:

Skirt steak is the traditional cut used for fajitas. It used to be inexpensive, but now it's not so cheap; oftentimes flank steak costs less. Either will be a good choice.

1 tablespoon cumin seeds, lightly toasted and ground
1 teaspoon chipotle or ancho chile powder
1 teaspoon salt, more to taste
1 1/4 pounds flank or skirt steak
Zest of 1 lime (2 teaspoons)
1/4 cup fresh lime juice
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon Worcestershire sauce
4 large garlic cloves, minced
1 large red or yellow onion, halved and sliced
2 red bell peppers (or 1 red and 1 orange or yellow), seeded and sliced 1/4 inch thick
1 green bell pepper, seeded and sliced 1/4 inch thick
1 jalapeño or 2 serrano chiles, minced
1/4 cup chopped cilantro
4 large flour or 8 corn tortillas
1 teaspoon grapeseed or canola oil
1 romaine heart, cut crosswise into 1-inch wide pieces
Salsa fresca, for serving (see recipe)
Queso fresco, for sprinkling

Steps:

  • Combine 2 teaspoons ground cumin, the chile powder and 1 teaspoon salt. With a sharp knife, cut shallow crosshatched incisions across top and bottom surfaces of steak. Rub spice mix all over surface of steak. (It's best to wear gloves as the chile powder is hot.) Place steak in a resealable freezer bag.
  • In a small bowl, whisk together lime juice and zest, 1/4 cup olive oil, the Worcestershire sauce and half the garlic. Reserve 2 tablespoons of the marinade and pour the rest into the bag with steak. Seal and move steak around in bag to coat thoroughly. Place on a sheet pan and refrigerate for at least 4 hours and up to 24 hours. Massage bag periodically to redistribute marinade. Refrigerate reserved marinade if cooking the next day.
  • Heat 2 tablespoons olive oil in a large, heavy skillet over medium-high heat. Add onions and cook, stirring, until they soften and begin to color, 4 to 5 minutes. Stir in bell peppers and chile. Cook, stirring, until peppers begin to soften, about 3 minutes.
  • Lower heat to medium, add remaining garlic and cumin, and salt to taste. Cook, stirring often, until peppers are nicely seared, softened and beginning to caramelize, 5 to 8 minutes.
  • Pour in reserved 2 tablespoons marinade and scrape bottom of pan with a wooden spoon to deglaze. Stir in half the cilantro. Taste and adjust seasoning. Remove from heat but keep warm.
  • Wrap tortillas in foil and warm in a low oven, or wrap in a towel and warm in a steamer or in the microwave.
  • Heat a large cast iron skillet over medium-high heat, or prepare a medium-hot grill. Remove meat from marinade and discard marinade. Pat meat dry with paper towels. If using a skillet, heat remaining 1 tablespoon oil in skillet. (If your skillet is not large enough for the steak, cut it in half and cook in batches.) Cook for 3 to 4 minutes per side. Meat should be medium rare. Remove to a cutting board, cover with foil and let sit for 10 minutes. Cut across the grain into 1/2- to 3/4-inch wide strips.
  • Arrange lettuce on a platter, then place steak next to lettuce. Tip juices from cutting board over meat and sprinkle with remaining cilantro. Serve vegetables on the same platter or separately, along with warm tortillas, salsa and crumbled queso fresco.

Steps:

  • Preheat oven to 350°F (180°C).
  • Turn the loaf on its end, and cut a square out, leaving a ½-inch (1 cm) thick edge. Remove the center of the bread.
  • Cut the hollowed bread piece into two and roll them down for compression.
  • Slice the bell peppers.
  • Cut the onions.
  • Thinly slice the flank steak.
  • Season the flank steak with salt and pepper to taste.
  • Heat oil in a pan over medium heat. Cook the flank steak until browned on all sides, about 2 minutes. Remove the steak from the pan.
  • Add the green peppers, red peppers, and onions, and cook until softened, about 4 minutes.
  • Season the peppers and onions with salt and pepper to taste.
  • Place the hollowed bread piece into the bread box.
  • Line the bread box with provolone on all five sides.
  • Add the flank steak, green peppers, red peppers, onions, and cheese to the bread box.
  • Seal the top with cheese and cover it with the second half of the hollowed bread.
  • Place cheese on top of the box.
  • Bake the cheesesteak box for 10 minutes.
  • Take the cheesesteak box out and and place nine skewers sticks in the cheesebox.
  • Slice the cheesesteak box into 9 cubes, forming 9 cheesesteak skewers.
