GRILLED FLANK STEAK WITH GORGONZOLA CREAM SAUCE

1 1/2-pound flank steak
Salt and freshly ground black pepper
Gorgonzola Cream Sauce, recipe follows
1 tablespoon butter
1 shallot, minced
1 cup heavy cream
1/4 pound Gorgonzola
Salt and freshly ground black pepper

Steps:

  • Heat a grill pan to medium heat.
  • Season the steak liberally with salt and pepper. Cook for 6 minutes on each side for medium rare.
  • Remove from heat, cover with foil to make a tent. Rest for 5 minutes before slicing steak. Cut into 1/8-inch thick slices. Transfer to a platter and ladle on Gorgonzola Cream Sauce.
  • Heat a medium size saucepan over medium heat. Add butter to melt. Saute shallots until tender. Add the heavy cream and let reduce by half. Turn heat to low, add the Gorgonzola and stir until it melts. Season, to taste, with salt and pepper.

4 boneless sirloin steaks (about 6 oz. ea.)
3 Tbsp. Bertolli® Extra Virgin Olive Oil Rich Taste , divided
2 cloves garlic
2 bags (10 oz. ea.) spinach leaves,
1 small shallot [or onion], chopped
1 jar Bertolli® Vodka Sauce
1/2 cup crumbled Gorgonzola cheese

Steps:

  • 1 Season steaks, if desired, with salt and ground black pepper. Grill or broil until desired doneness
  • 2 nonstick skillet over medium heat and cook 1/2 of the garlic 30 seconds. Stir in spinach. Cover and cook, stirring occasionally, 2 minutes or until spinach is wilted. Season with salt and pepper; remove to serving platter and keep warm.
  • 3 Heat remaining 1 tablespoon Olive Oil in same skillet over medium heat and cook shallot, stirring frequently, 2 minutes. Add remaining 1/2 of the garlic and cook 30 seconds. Stir in Sauce and cook, stirring occasionally, 2 minutes. Add 1/4 cup cheese and simmer 1 minute or until cheese is melted.
  • 4 To serve, arrange steaks on spinach, then top with sauce. Garnish with remaining 1/4 cup cheese.

SPINACH FETTUCCINI WITH GORGONZOLA CREAM SAUCE



Spinach Fettuccini with Gorgonzola Cream Sauce image

1 1/2 (12-ounce) packages spinach fettuccini, 18 ounces total
2 tablespoons butter
2 cloves garlic, finely chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup cream
8 ounces Gorgonzola, cut into small pieces
A few leaves fresh sage, finely chopped
Freshly ground black pepper
4 handfuls baby spinach leaves

Steps:

  • Heat water to a boil for pasta, salt water and cook pasta to al dente.
  • Heat butter in a large sauce pot with butter, add garlic, cook 2 minutes then whisk in flour, cook 1 minute. Whisk in stock then cream, bring to a bubble and stir in Gorgonzola, about 2 minutes until melted. Stir in sage and a little pepper and cook 3 minutes more.
  • In a serving bowl toss hot pasta with sauce and fresh spinach to wilt in.

1 garlic clove, chopped
2 to 3 cans chopped tomatoes
Oregano

1 pound spinach fettuccini
1 cup vodka
1 cup sour cream

Steps:

  • In a saucepan, saute onions and garlic. Add tomato and seasonings. Bring contents to a simmer. Cook fettuccini. In a separate saucepan, heat vodka and flame, Add tomato sauce and sour cream. Fold in cooked fettuccini.

GORGONZOLA SAUCE

4 cups heavy cream
3 to 4 ounces crumbly Gorgonzola (not creamy or "dolce")
3 tablespoons freshly grated Parmesan
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3 tablespoons minced fresh parsley

Steps:

  • Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45 to 50 minutes, until thickened like a white sauce, stirring occasionally.
  • Off the heat, add the Gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt and serve warm. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.
