2 tablespoons butter
1/4 cup all-purpose flour
1/2 cup milk
3 cups heavy cream
6 tablespoons freshly grated parmesan cheese
2 tablespoons cajun seasoning
4 (6 ounce) boneless chicken breasts
2 tablespoons cajun seasoning
1 lb linguine, cooked
1 cup diced tomato
1/4 cup sliced green onion
1/2 cup shredded parmesan cheese
8 pieces garlic toast

Steps:

  • To prepare the sauce, melt butter over medium heat. Add all-purpose flour, stirring until blended. Continue stirring for 3 minutes. Remove pan from the heat.
  • Add milk and cream and whisk until well-blended. Return pan to medium heat. Heat mixture, stirring frequently until temperature reaches 200°F The mixture will just begin to bubble up the sides of the pot. When the mixture reaches 200° F, remove from the heat and add the 6 tablespoons of Parmesan and 3 tablespoons of Cajun seasoning.
  • Sprinkle chicken breasts with the Cajun seasoning. Grill for 6 to 8 minutes, or until an internal temperature of 165° F is reached.
  • Pour 4 cups of Cajun Cream Sauce into a large saute pan. Add linguini and toss with tongs until pasta is evenly coated with the sauce. Cook over medium heat for about 30 seconds.
  • Divide pasta among 4 large serving plates or bowls, mounding up pasta. Slice cooked chicken on the bias into 1/4-inch strips and place on top of pasta. Sprinkle tomatoes, green onions and Parmesan over each portion. Add garlic toast and serve.

1/2 pound medium shell pasta
1 cup chopped cooked steak
1 cup diced green bell pepper
1 cup chopped blanched green beans
1/2 cup crumbled cooked bacon
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1/4 teaspoon finely grated garlic
3/4 cup grated parmesan cheese
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; drain and rinse under cold water. Transfer to a large bowl.
  • Add the steak, bell pepper, green beans and bacon to the bowl with the pasta.
  • Make the dressing: Mix the mayonnaise, sour cream, lemon juice, garlic, parmesan, and salt and pepper to taste in a bowl. Pour over the pasta salad and toss to coat. Season with salt and pepper. Chill for up to 3 hours.

1/2 cup blue cheese dressing
1/2 cup finely chopped red onion
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 lb boneless top round steak
1 tablespoon garlic pepper
1/4 cup blue cheese crumbles
French-fried onions, as desired

Steps:

  • Pour pasta (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally. Drain pasta. Rinse with cold water; drain well.
  • In medium bowl, stir together seasoning (from Suddenly Salad box) and blue cheese dressing. Add cooked pasta, onion and black beans until well blended. Cover; refrigerate 1 hour.
  • Meanwhile, heat gas or charcoal grill. Rub steak on both sides with garlic pepper. Place steak on grill over medium-high heat. Cover grill; cook steak about 6 minutes on each side or until meat thermometer inserted in center of steak reads 140°F.
  • To serve, place pasta salad on large serving platter. Cut steak into thin slices; arrange over pasta salad. Sprinkle with blue cheese crumbles. Garnish with French-fried onions.

Such flavorful steak - every bite sings as you chew. Two things about the ingredients: 1) I use ground herbs and spices because I can't afford to keep the fresh stuff around. I posted "fresh stuff equivalents" just in case. 2) I like my noodles completely cooked, all the way through...ie I don't like al dente. So if YOU like al dente, be sure to adjust the cooking time of your noodles. I got the marinade from Food Network's "Healthy Appetite with Ellie Krieger"

4 tablespoons lime juice, plus
2 tablespoons lime juice
6 tablespoons soy sauce
6 tablespoons oil
4 tablespoons brown sugar
1/4 teaspoon garlic powder or 1 garlic clove
1/4 teaspoon ginger or 1 1/2 teaspoons fresh ginger
1 dash curry powder
2 cups uncooked penne
1/4 lb green beans (optional)
2 beef eye round steaks
1/2 cup thinly slice onion
1/2 red pepper, thinly sliced
sesame seeds
1/2 cup feta cheese

Steps:

  • Mix all ingredients of marinade, except for 2 Tbls of lime juice.
  • Pour 1/2 marinade over steak, then add reserved lime juice. Refrigerate other half of marinade for later. Steaks should sit for at least 4 hours, or overnight.
  • Once steaks are ready, you can either grill them until they are slightly pink in the middle, or broil them. To broil: place on a broiler pan, broil 3 inches from heat 10 minutes or until desired degree of doneness, turning after 5 minutes.
  • While steak is broiling/grilling, bring 3 quarts water to a boil in a large pot. Add pasta, cook until halfway done, then add green beans (optional). Let pasta alone until it finishes cooking.
  • Let steak stand for a few minutes, then cut diagonally across grain into thin slices.
  • Combine onions, red pepper, and steak into a pan. Add the remaining marinade and sesame seeds and saute until steaks are sizzling and onions and peppers are done to your liking.
  • Serve steak and veggies over pasta, sprinkle with feta cheese.
  • We use whatever steak we have left for steak and eggs the next morning!

1/3 cup plus 1/2 tablespoon olive oil
3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1 tablespoon fresh lemon juice
Kosher salt and freshly ground black pepper
1/2 pound skirt steak (about 1/2 inch thick)
8 ounces dried penne
1 cup thinly sliced red onion
1/4 cup thinly sliced celery
1/4 cup chopped fresh flat-leaf parsley
2 vine-ripe tomatoes, chopped

Steps:

  • Heat 1/3 cup of the oil in a medium skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 3 minutes. Transfer to a large bowl and cool to room temperature. Stir in the lemon juice and season with 1/2 teaspoon salt and a few grinds of pepper.
  • Meanwhile, bring a large pot of salted water to a boil.
  • Heat a grill or grill pan over medium-high heat until hot; brush with the remaining 1/2 tablespoon oil. Season the steak with salt and pepper. Grill the steak, turning once, 3 to 4 minutes per side for medium rare. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the steak, onion, celery, parsley and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

SOLO HONEY MUSTARD STEAK AND PASTA

The flavor of the sauce is subtle enough to allow the taste of the steak to come through. If Beef Chuck Eye Steak is not available, I would suggest Sirloin. Green Peas might be a nice alternative to the Mushrooms. Cooking is a Creative Sport.

3 -4 ounces beef chuck eye steak (OR Sirloin)
1 cup dry pasta (I like wide flat noodles)
1 tablespoon dijon-style mustard
1 teaspoon honey
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 ounces cans sliced mushrooms, and half of the can liquid

Steps:

  • Cook the pasta in 2 quarts of salted boiling water for about 8 minutes or until done.
  • Cover both sides of the steak with the salt and pepper, and just enough of the olive oil to give it a slight shine.
  • Pour the rest of the olive oil, mustard and honey into a shallow pasta dish.
  • Place the steak in a hot frying pan (I like cast iron) and cook for 3 1/2 minutes per side.
  • When the steak is done, set aside to rest and add the mushrooms and liquid to the hot pan and scrape the cooked bits off the bottom.
  • Add the drained pasta, stir once, and pour into the dish.
  • Slice the steak into thin strips, add to the pasta and toss until everything is coated with the honey mustard mixture.
  • Serve with a Green Salad.

Kosher salt and freshly ground black pepper
1 pound fettuccine
2 tablespoons salted butter
2 tablespoons olive oil
2 3/4-inch-thick strip steaks
1 large onion, sliced thin
3 cloves garlic, sliced
2 tablespoons tomato paste
Pinch crushed red pepper flakes
1/3 cup white wine
1/3 cup heavy cream
2 cups shredded collards
2 cups shredded kale
2 cups baby spinach
1 1/2 cups shredded fontina cheese
Steak sauce, to finish
2 tablespoons chopped fresh curly parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente. Reserve 1/2 cup of the pasta water. Drain the pasta and set aside.
  • Heat a cast-iron skillet over a medium-high heat. Add the butter, along with the olive oil. Sprinkle the steaks all over with salt and pepper. When the butter has melted and the oil is hot, place the steaks in the skillet and cook for 3 to 4 minutes per side for medium-rare. Remove the steaks to a cutting board to rest.
  • Add the onion, garlic, tomato paste and red pepper flakes to the skillet, then quickly stir and cook for 1 to 2 minutes. Add the wine and allow to reduce for 30 to 60 seconds, then add the cream. Stir, then add the collards, kale and spinach. Stir and allow the greens to wilt, 2 to 3 minutes. Add the pasta, reserved pasta water and cheese. Toss until everything is coated and the sauce has thickened, about 2 minutes. Remove from the heat.
  • Slice the steak and shingle the slices over the pasta. Drizzle over the steak sauce and sprinkle over the curly parsley. Serve straight from the skillet.

1/4 pound green beans, trimmed
1 (3/4-pound) boneless sirloin steak, trimmed
1 tablespoon salt-free garlic-pepper blend (such as Spice Hunter)
1 1/2 cups thinly sliced red onion
1 1/2 cups thinly sliced red bell pepper
1/4 cup chopped fresh basil
3 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
1 teaspoon extravirgin olive oil
1 teaspoon bottled minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup (1 ounce) crumbled blue cheese or feta cheese
Note: I also added cherry heirloom tomatoes ( a whole container) and half a bag of frozen corn at the end then mixed! And I doubled the ingredients.

  • Preheat broiler. While the broiler preheats, bring 3 quarts water to a boil in a large Dutch oven. Add pasta; cook 5 1/2 minutes. Add beans, and cook 3 minutes or until pasta is done. Drain and rinse with cold water. Drain well. Sprinkle steak with the garlic-pepper blend. 1/4 cup sherry vinegar
2 Tbs. capers, drained and rinsed (roughly chopped if large)
2 tsp. fresh lemon juice
2 cloves garlic, crushed and peeled
1/2 tsp. chopped fresh rosemary
1/3 cup extra-virgin olive oil
1/2 cup oil-packed sun-dried tomatoes, drained
3/4 tsp. kosher salt
Pinch cayenne; more to taste
FOR THE SALAD:
kosher salt
1/2 lb. rotini
1.5 cups baby arugula
1.5 cups fresh or frozen peas, boiled until just crisp-tender and drained
1.5 cups diced zucchini (1/4-inch dice)
1.5 cups canned chickpeas (rinse well)
1 Tbs. extra-virgin olive oil
8 oz. fresh mozzarella, diced (about 1 cup)
2 Tbs. capers; more to taste
1/4 cup diced or thinly sliced red onion; more to taste
freshly ground pepper
1 small flank steak, grilled and sliced

Steps:

  • For the Vinaigrette: In a medium bowl, combine the vinegar, capers, lemon juice, garlic, and rosemary. Add the olive oil and whisk to combine. Slice the tomatoes into thin strips and stir them into the dressing. Season with salt and cayenne and set aside for at least 30 minutes. Discard the garlic before using. The vinaigrette can be made up to a day ahead and stored, covered, in the refrigerator. For the Salad: Put 4 to 6 quarts of salted water in a large pot and set it over high heat. Once the salt has dissolved, taste the water-it should taste like sea water. If it doesn't, add more salt. Bring the water to a boil and add the pasta. Cook the pasta according to the package instructions until just al dente. Drain the pasta thoroughly by shaking it in a colander, then immediately pour it out onto a rimmed baking sheet to cool. Toss the pasta with the olive oil to prevent sticking. Transfer the cooled pasta to a large serving bowl. Add the arugula, peas, zucchini, and chickpeas to the pasta and toss. Add the mozzarella, capers and red onion, plus just enough of the vinaigrette to moisten the pasta. Toss again. Let the salad rest for 10 to 15 minutes to allow the flavors to meld and then taste the salad again. If necessary, add a little more capers and red onion, vinaigrette or salt and pepper. Serve as soon as possible.

8 oz. (2 3/4 cups) rotini (spiral-shape pasta), cooked until firm-ended, drained and cooled under running cold water
1 cup. fresh or thawed frozen corn kernels
1/2 cup sliced red onion
1/4 cup chopped parsley
1/2 cup bottled olive-oil vinaigrette dressing

  • Cut the steak into smaller pieces about and inch to two inches.
  • Once the water is boiled put pasta in and stir occasionally. Cook for 8-10 minutes.
  • Heat up a pan to medium-high, put butter and steak together.
  • Add the lemon juice, and pepper to the steak and mix them together. Cook until steak it is cook to your desire, about 6-10 minutes. The butter that is left over will be the sauce used.
  • Put the pasta into the bowl then add the steak and butter sauce together and mix then served.
