4 slices Bacon
14 oz pizza dough
1 cup prepared mashed potatoes
1 cup shredded Cheddar Cheese
¼ cup for topping sour cream

Steps:

  • Preheat the oven to 350 degrees F. Cook bacon in a large deep skillet over medium heat until crisp. Drain, crumble and set aside.
  • Spread the pizza dough out on a lightly greased baking sheet. Spread mashed potatoes over the dough, leaving a small crust around the outside if desired.
  • Sprinkle the cheese and bacon evenly over the potatoes.
  • Bake the pizza in the preheated oven for about 20 minutes until the cheese is melted and bubbly.
  • Let cool for 2 minutes, then slice into wedges and top each one with a small dollop of sour cream.

LEFTOVER MASHED POTATO PIZZA

There's no need for tomato sauce on this pizza. It uses leftover mashed potatoes instead and is topped with Mozzarella, bacon, leek, garlic and basil.

5 ounces slab bacon, finely diced (about 1 cup)
1 1/2 pounds prepared pizza dough, at room temperature
All-purpose flour
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
3 cups leftover mashed potatoes, slightly warm
1 1/2 cups shredded mozzarella (about 5 ounces)
1/2 leek (white and light green parts only), very thinly sliced
1 clove garlic, minced
1/2 cup freshly grated Parmesan or Pecorino Romano cheese (about 1 ounce)
12 fresh basil leaves
Crushed red pepper flakes, optional

Steps:

  • Put a pizza stone on the bottom rack in the oven and preheat to 500 degrees F for at least 30 minutes.
  • Heat a small skillet over medium heat, add the bacon, cook until the fat renders but is short of being crisp, about 5 minutes. Transfer with a slotted spoon to a paper towel-lined plate to drain.
  • Divide the dough into 2 equal portions; form each into a ball. Roll a portion into a 12-inch round on a floured surface (cover the other piece with a kitchen towel). Lightly dust a pizza peel with flour and put the dough on the peel, drizzle lightly with oil and sprinkle with salt and pepper. Slip the dough onto the preheated stone and cook until just set, about 4 minutes.
  • Using the peel, remove the dough from the oven and spread half of the mashed potatoes over the top, leaving about a 1-inch border around the side. Season with salt and pepper. Then sprinkle half of the cheese on top and top with half of the bacon, leek and garlic. Drizzle with a little olive oil. Return the pizza to the stone and cook until the crust is golden and the cheese melts, about 5 to 7 minutes more. Remove the pizza, top with half the grated Parmesan and scatter with some basil leaves and pepper flakes, if desired. Serve. Repeat with the remaining dough and toppings.

Potato pizza like the ones served at one of my favorite restaurants a few years ago. Mashed potatoes and cheese are flecked with green onion and bacon bits, then spread over a pre-made crust to make 2 delightful pizzas.

2 cups instant mashed potato flakes
1 (8 ounce) package shredded Cheddar cheese, divided
1 (3 ounce) jar real bacon bits
1 bunch green onions, chopped
1 (10 ounce) can pizza crust dough
½ cup sour cream

Steps:

  • Preheat the oven to 425 degrees F (200 degrees C). Prepare instant mashed potatoes according to package directions. Stir in half of the Cheddar cheese, bacon bits, and green onions.
  • Cut the pizza crust dough in half, and spread into the bottom of two 8-inch round pans. Bake for 4 minutes in the preheated oven, until about halfway done. Spoon the potato mixture over each crust. Sprinkle remaining Cheddar cheese over the top.
  • Bake for an additional 5 minutes in the preheated oven, until crust is golden, and cheese is melted. Let cool for 5 minutes before slicing and serving. Top with sour cream to taste.

1 ¼ cups Parmesan and mozzarella cheese sauce (such as Ragu®)
1 ½ cups mashed potatoes
½ cup crumbled cooked bacon
1 cup chopped cooked broccoli
1 cup finely shredded Cheddar cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Roll pizza dough out onto a nonstick or lightly greased baking sheet. Press and pinch sides up to make an 11x15-inch rectangle.
  • Ladle 1 cup of cheese sauce onto the crust. Mix remaining 1/4 cup of sauce into mashed potatoes. Spoon mixture onto the crust.

3 potatoes
6 slices bacon
1 (6.5 ounce) package pizza crust mix
½ cup water
¼ cup olive oil
1 tablespoon butter, melted
¼ teaspoon garlic powder
¼ teaspoon dried Italian seasoning
½ cup sour cream
½ cup Ranch dressing
3 green onions, chopped
1 ½ cups shredded mozzarella cheese
½ cup shredded Cheddar cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Scrub and dry potatoes, then prick several times with a fork and place onto a baking sheet.
  • Bake in preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove, cool, and peel.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Preheat oven to 400 degrees F (205 degrees C). Lightly grease a pizza pan.
  • Mix pizza crust mix, water, and oil in a large bowl with a fork until ingredients combine. When dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Let stand for 5 minutes. Shape dough into a flat circle and place on pizza pan. Build up edges slightly.
  • Bake pizza dough in preheated oven until crust is firm and begins to brown, 5 to 6 minutes.
  • Toss butter with garlic powder, Italian seasoning, and potatoes in a large bowl. Combine sour cream and ranch dressing in a small bowl; spread over crust. Top with potato mixture, bacon, onions, mozzarella cheese, and Cheddar cheese.
