PAT'S FAMOUS BEEF AND PORK CHILI



Pat's Famous Beef and Pork Chili image

Number Of Ingredients 22

6 slices thick-cut applewood smoked bacon, cut into 1/2-inch pieces
4 cloves garlic, finely chopped
2 medium onions, finely chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon chipotle chili powder
2 teaspoons dried oregano
1 tablespoon smoked paprika
Salt and freshly ground black pepper
1 pound 85 percent lean ground beef
1 pound ground pork
1 cup beer (recommended: Budweiser)
One 15-ounce can black beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 24-ounce can crushed tomatoes
One 24-ounce can diced tomatoes, with juice
Lime wedges, for garnish
Sour cream, for garnish
Shredded Cheddar, for garnish
Sliced scallions, for garnish

Steps:

  • In large heavy-bottomed Dutch oven, cook the bacon over medium heat until lightly crisp, stirring occasionally. Once the bacon is browned, add the garlic, onions, bell peppers, chili powder, cumin, chipotle chili powder, oregano, and smoked paprika and season with salt and pepper, to taste. Cook until the vegetables are tender and seasonings are aromatic. Add the beef and break it up with a wooden spoon. Once beef is broken up and beginning to brown, add the pork. Break up with wooden spoon like the beef, and brown, until no longer pink, roughly 4 minutes. Stir in the beer and beans. Toss together, then add the crushed and diced tomatoes. Turn the heat down to low and simmer for 1 1/2 hours. Taste for seasoning and add salt and pepper, if necessary. Transfer the chili to serving bowls and garnish with lime wedges, sour cream, shredded cheese, and sliced scallions.

2 tablespoons canola oil
4 pounds lean ground beef (90% lean)
2 medium onions, chopped
1 medium green pepper, chopped
4 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (28 ounces each) stewed tomatoes, cut up
1 can (14-1/2 ounces) beef broth
3 tablespoons chili powder
2 tablespoons ground coriander
2 tablespoons ground cumin
4 garlic cloves, minced
1 teaspoon dried oregano

Steps:

  • In a Dutch oven, heat canola oil over medium heat. Brown beef in batches, crumbling meat, until no longer pink; drain and set aside. Add onions and green pepper; cook until tender. Return meat to Dutch oven. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 1-1/2 hours.

GREEN CHICKEN OR PORK CHILI

Starting my menu for St. Patricks day. This was the highlight of last years party. In fact my nephew and my children have been asking me if Im going to make this again. Of course I am! Nothing makes me happier than seeing my family enjoy my recipes. Although It may sound like your typical chicken chili, I have turned into a green irish like stew, with a few added tweeks.

1 - already cooked rotiserie chicken shredded. updated and used shredded pork i made in crockpot.
10 cup(s) chicken stock or veggie stock
2 can(s) tomatillos or 1 1/2 freshed poached
2 - chopped seeded green pepper
1 large chopped onion
2 clove(s) garlic,chopped
2 medium seeded chopped jalepeno peppers
2 can(s) white beans
1 can(s) white corn
1 large chopped zucchini or cam of french green beans
2 small cans chopped green chilis
1 bunch(es) fresh cilantro
1 bag(s) shredded cabbage (coleslaw mix no carrots)
1 teaspoon(s) cumin
1 teaspoon(s) adobo

Steps:

  • In frying pan of olive oil (2tbls) saute onion, zucchini, garlic, & peppers till softened. Add to crockpot.
  • In food processor puree tomatillos, green chilis & cilantro. Add to crockpot.
  • To crockpot add drained cans of beans and corn, cabbbage, shredded chicken. Pour chicken stock over and spices. Set on med for 4 hours stirring occationally. Enjoy with nachos or over rice.

ROASTED SWEET POTATOES AND PARSNIPS WITH CHILI POWDER



Roasted Sweet Potatoes and Parsnips with Chili Powder image

After the duck has cooked for about an hour, you'll have enough fat to prepare these vegetables. If using previously reserved duck fat, melt and cool it first.

1 pound sweet potatoes, cut into wedges
1 pound parsnips, cut into 2-inch lengths (do not peel)
1/4 cup strained reserved duck fat, from Roast Duck, cooled
1 1/2 teaspoons coarse salt
1 1/2 teaspoons ancho chili powder
1 teaspoon ground cinnamon
1 navel orange, preferably organic, cut into 1 1/2-inch wedges (do not peel)
3 sprigs thyme
1 tablespoon unsulfured molasses

Steps:

  • Preheat oven to 425 degrees. Toss sweet potatoes and parsnips with reserved duck fat. Mix together salt, chili powder, and cinnamon. Sprinkle vegetables with seasoning mixture, and toss to coat well. Spread in a single layer on a rimmed baking sheet.
  • Roast vegetables for 15 minutes. Remove from oven, and toss in orange wedges and thyme. Roast, stirring halfway through, until vegetables are golden brown and tender, about 30 minutes. Drizzle with molasses.

1 pound ground beef
1/2 cup chopped onion
2 garlic cloves, minced
3 cups tomato juice
1 can (16 ounces) kidney beans, rinsed and drained
6 ounces spaghetti, broken into 3-inch pieces
1 tablespoon Worcestershire sauce
2 to 3 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Transfer to a greased 2-1/2-qt. baking dish; stir in the remaining ingredients. , Cover and bake for 65-70 minutes or until spaghetti is just tender. Let stand, covered, for 10 minutes.

2 1/2 lbs ground chuck
15 ounces diced tomatoes with juice
24 ounces spicy vegetable juice, V-8 hot and spicy-type
2 tablespoons granulated tomato bouillon with chicken flavor
2 large white onions, chopped
2 tablespoons chili powder
2 teaspoons dried chipotle powder (or, 1 canned chipotle pepper with sauce)
2 teaspoons ground cumin
20 ounces water
30 ounces hot chili beans, with sauce
15 ounces canned kidney beans, drained and rinsed
1 teaspoon garlic sauce, cajun-type (or, taco sauce)
6 ounces canned mushrooms, drained
6 ounces tomato paste
2 teaspoons dried oregano
1 teaspoon onion powder
2 tablespoons instant minced onion
2 teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • In a large cooking pot, brown and drain the fat from the ground chuck.
  • Return the burger to the pot and add all other ingredients except for the beans. Cook at a low boil, uncovered, for one hour. Stir frequently.
  • Add the beans and continue to cook uncovered at a low boil for 20 more minutes. Serve with oyster crackers.
  • NOTE: If you want your chili a little thinner, add canned chicken broth. Also, I love this chili over cooked spaghetti with additional hot sauce at the table. Finally, you'll find the tomato bouillon in the Mexican isle at the grocery store.
