Pretzel Crusted Key Lime Bars are the perfect balance of salty and sweet. The key lime filling is tart, creamy, and smooth and combined with the crunch of the pretzel crust they are delicious!

1 2/3 cups pretzel finely crushed pretzels (2 1/2 - 3 cups of whole pretzels)
1/2 cup butter, melted
1 teaspoon kosher salt
1/4 cup granulated sugar

Steps:

  • Preheat oven to 350°F. Line a 9×9 pan with foil and coat lightly with nonstick spray. Set aside.
  • In a food processor or blender pulverize the pretzels until they are a fine crumb. (You don't want dust, but you don't want chunks or it won't stay together)
  • In a large bowl stir together your pretzel crumbs, butter, salt, and sugar.
  • Press the mixture firmly into your prepared pan and slightly up the sides. Bake for 10 minutes, or until golden. Let the crust cool while you prepare the filling.
  • In a large bowl, whisk together the yolks, sweetened condensed milk and lime juice.
  • Pour the mixture into the warm crust.
  • Bake for 12-15minutes, or until just set.
  • Allow the bars to cool until room temperature, and then cover and chill in the refrigerator for 2 hours, or overnight.

2 cups finely crushed pretzels (about 6 ounces)
3/4 cup sugar, divided
3/4 cup butter, melted
2 cups boiling water
1 package (6 ounces) strawberry gelatin
1 pound fresh strawberries, chopped
2 packages (8 ounces each) cream cheese, softened
1 tablespoon grated lime zest
1/4 cup lime juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. Place crushed pretzels and 1/4 cup sugar in a small bowl; stir in melted butter. Spread out in an ungreased 15x10x1-in. baking pan. To toast, bake until golden brown, 9-11 minutes. Cool completely., Meanwhile, in a bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve. Gently stir in strawberries. Cool slightly. Refrigerate 30 minutes., In a large bowl, beat cream cheese, lime zest, lime juice, vanilla and remaining sugar until blended. Stir in cooled pretzel mixture. Spread into an ungreased 13x9-in. baking pan. Top with strawberry mixture. Refrigerate, covered, 2 hours or until firm.

3/4 cup butter, melted
3 tablespoons sugar
2 cups crushed pretzels
1 cup boiling water
1 package (3 ounces) lime gelatin
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
3 to 5 drops green food coloring, optional
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 cups boiling water
2 packages (3 ounces each) strawberry gelatin
4 cups sliced fresh strawberries
Optional: Additional whipped topping and miniature pretzels

Steps:

  • Preheat oven to 350°. Mix melted butter and sugar; stir in pretzels. Press onto bottom of an ungreased 13x9-in. baking dish. Bake 10 minutes. Cool completely on a wire rack. , Meanwhile, for lime layer, in a large bowl, add boiling water to lime gelatin; stir 2 minutes to completely dissolve. Refrigerate until partially set, about 1 hour. In a bowl, beat cream cheese until smooth. Add cooled lime gelatin mixture; beat until smooth. Fold in whipped topping; if desired, add green food coloring. Spread over crust. Refrigerate until set but not firm, 25-30 minutes. , For cream cheese layer, in a bowl, beat cream cheese and sugar until smooth. Fold in whipped topping. Spread over lime layer. Refrigerate until set., For strawberry layer, in a large bowl, add boiling water to strawberry gelatin; stir 2 minutes to completely dissolve. Refrigerate until partially set, about 1 hour. Stir in strawberries. Gently spoon over cream cheese layer. Refrigerate, covered, until firm, 2-4 hours. To serve, cut into squares. If desired, top with additional whipped topping and miniature pretzels.

1/2 cup butter, melted
1/4 cup sugar
2 cups water, divided
2 pkg. (0.3 oz. each) JELL-O Lime Flavor Sugar Free Gelatin
1 can (14 oz.) low-fat sweetened condensed milk
1 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 cup thawed COOL WHIP LITE Whipped Topping

Steps:

  • Heat oven to 350ºF.
  • Mix first 3 ingredients until blended; press onto bottom of 13x9-inch baking dish. Bake 10 min.; cool.
  • Bring 1 cup water to boil. Add to gelatin mixes; stir 2 min. until completely dissolved. Stir in remaining water; set aside. Blend sweetened condensed milk and sour cream in blender until smooth. Add gelatin mixture; blend well. Pour over crust.
  • Refrigerate 2 hours or until firm. Serve topped with COOL WHIP.
