Squid Saute with Tomatoes and Garlic image

1 1/2 pounds squid, cleaned
15 garlic cloves, peeled
1/2 cup olive oil
1 teaspoon salt
1 teaspoon freshly-ground black pepper
2 large tomatoes, peeled, seeded and diced
1 large bunch oregano, leaves only, chopped

Steps:

  • Cut the squid bodies into 1/4-inch rings. Wash, dry and place in a mixing bowl. Puree the garlic with 1/4 cup of the olive oil in a blender until smooth. Pour over the squid. Add the salt and pepper, tossing well to combine.
  • Heat a dry, medium skillet over high heat. Then add a generous tablespoon of the remaining olive oil and heat until almost smoking. Pour in one-third of the marinated squid and saute about 30 seconds. Stir in one-third each of the tomatoes and oregano and cook about 2 minutes longer, just until the tomatoes dissolve and the garlic colors slightly. Transfer to a platter, wipe out the skillet and repeat two times. Serve hot. This dish works best when the squid is sauteed in batches. If the pan gets too crowded, it steams rather than sautes, which toughens the meat. This can be served over rice and beans as an entree, or with flour tortillas as an appetizer.

1 small onion, minced
1 clove garlic, minced (green part removed)
3 tablespoons olive oil
1 cup canned Italian plum tomatoes chopped, with their juice
1 cup dry white wine
2 pounds squid, cleaned and sliced (see above)
1 teaspoon fresh thyme leaves
Coarse salt and freshly ground pepper to taste

Steps:

  • Gently saute the onion and the garlic in the olive oil. Add the tomatoes and white wine and simmer for five minutes.
  • Add the squid, thyme, salt and pepper. Cover and simmer gently for 30 to 40 minutes or until the squid is tender. Correct seasoning and serve.

4 cups water
2 pounds squid, thoroughly cleaned
3 tablespoons olive oil
1 1/2 tablespoons unsalted butter
About 15 scallions, tips and damaged leaves removed, remainder cut into 1-inch pieces (about 2 1/4 cups)
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
3 to 4 cloves garlic, peeled, crushed and chopped (1 1/2 teaspoons)
3 tablespoons chopped parsley

Steps:

  • Bring water to a boil in a saucepan. Meanwhile, cut the body of the squid lengthwise into 1/2-inch strips and the tentacles into pieces. When the water is boiling, drop the squid into the water and cook it for 30 seconds (the water will not return to the boil). Drain and set aside.
  • At serving time, divide the oil and butter between two skillets and place the skillets over high heat. When very hot, add the scallions and saute for about 10 seconds. Then add the squid, salt and pepper, and saute over high heat for 2 to 3 minutes. Mix in the garlic and parsley and divide among six plates. Serve immediately.

Our family always has this on Christmas Eve as one of the seven fish dishes typically served.

3 tablespoons olive oil
3 cloves garlic, sliced
1 (28 ounce) can tomato puree
28 fluid ounces water
½ cup red wine
1 teaspoon salt
1 teaspoon white sugar
crushed red pepper to taste
1 (16 ounce) package uncooked linguine pasta
3 pounds squid, cleaned and sliced into rings

Steps:

  • Heat olive oil in a large saucepan over medium heat. Stir in the garlic and cook until lightly brown. Stir in tomato puree, water, red wine, salt, sugar and crushed red pepper. Bring to a boil. Reduce heat and simmer 30 minutes, stirring occasionally
  • Bring a large pot of lightly salted water to a boil. Add linguine and cook for 8 to 10 minutes or until al dente; drain.
  • Stir calamari into the tomato puree mixture. Continue to simmer approximately 15 minutes, until squid is opaque. Check frequently to avoid overcooking squid. Serve squid and sauce over cooked linguine.
