SHRIMP AND BELL PEPPER STIR FRY

1/2 cup low-sodium soy sauce
2 tablespoons cornstarch
2 tablespoons sugar
2 tablespoons rice wine vinegar
1 tablespoon minced fresh ginger
1/2 teaspoon crushed red pepper flakes, plus more for garnish
3 tablespoons peanut oil
1 red bell pepper, seeds removed and cut in thin strips
1 yellow bell pepper, seeds removed and cut in thin strips
1 pound jumbo shrimp, peeled and deveined
5 scallions, cut into 1/2-inch pieces
1 cup packed curly kale, stemmed and hand torn
1 tablespoon chopped fresh cilantro
2 teaspoons chopped fresh mint

Steps:

  • In a bowl or measuring cup, mix together the soy sauce, cornstarch, sugar, rice wine vinegar, ginger and crushed red pepper flakes.
  • Heat the oil in a large high-sided skillet or wok over high heat. Add the bell peppers and stir until browned, 1 to 2 minutes. Scoot the peppers to the edge of the pan, creating an opening in the center.
  • Add the shrimp in a single layer to the center of the pan and cook until just beginning to turn pink, 1 to 2 minutes. Add three-quarters of your scallions (hold back the rest for garnishing at the end) and stir everything together.
  • Add the kale and cook until wilted, about 2 minutes. Next, pour in the sauce and allow it to bubble and thicken in the pan while stirring, about 1 minute. The sauce should really cling to the shrimp and vegetables. Remove from the heat.
  • Sprinkle everything with the cilantro and mint and stir to combine. Garnish with more red pepper flakes and the remaining scallions before serving.

2 tablespoons vegetable oil
2 cloves garlic, minced
1 red pepper, trimmed, ribs and seeds removed, cut into 1-inch pieces
3 ribs celery, trimmed and sliced on the bias
1 pound squid, cleaned and cut into rings
1/2 cup fresh cilantro leaves
Coarse salt and freshly ground pepper
Cooked short-grain white rice, for serving

Steps:

  • Heat oil in a large wok or skillet over high heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add bell pepper and celery; cook, stirring, until softened, about 1 minute. Add squid and cook, stirring, until opaque, about 1 minute. Add cilantro leaves and season with salt and pepper; serve immediately with rice.

2 tablespoons kosher salt
1 teaspoon Szechwan peppercorns
1 tablespoon ground black pepper
1 tablespoon ground white pepper
1 pound cleaned squid, tentacles separated, tubes cut lengthwise in half
1 cup self-rising flour
1/2 teaspoon baking powder
1 tablespoon peanut oil plus peanut oil, for frying
1 large onion, sliced
1 red bell pepper, de-seeded and julienned
1 yellow bell pepper, de-seeded and julienned
2 Thai bird chiles or 1 jalepeno, de-stemmed and sliced

Steps:

  • Heat a saute pan very hot and add the salt. Reduce the heat and saute for 3 to 5 minutes. Turn heat off and add the peppercorns. Mix and let stand. For the squid, score the squid on the inside with a criss-cross pattern then cut them into 2-inch triangles and set aside. To make the batter, slowly add cold water to the flour and baking powder to achieve a runny pancake batter. Whisk in the oil. In a fryer or wok, deep fry the squid until golden brown, season with seasoned salt and set aside on paper towels. In the same wok, drain the oil leaving 2 tablespoons and caramelize the shallots, peppers and chiles, about 4 minutes. Season and add back the squid, mix quickly.
  • PLATING: On a large oval, plate the squid.

1 lb (450 g) squid tubes ((or rings) (*Footnote 1))
2 teaspoons Shaoxing wine
1/8 teaspoon salt
1/3 cup water
1 tablespoon oyster sauce
1 tablespoon doubanjiang ((or 1 tablespoon oyster sauce for a less spicy dish))
2 teaspoons light soy sauce
2 teaspoons toasted white sesame seeds
2 teaspoons cornstarch
1 teaspoon cumin
1 teaspoon sugar
1/2 teaspoon chili flakes
2 tablespoons peanut oil ((or vegetable oil))
2 cloves garlic (, minced)
1 thumb ginger (, sliced)
1 small red onion (, sliced into bite-size pieces)
1 bell pepper ((or 2 to 3 hot peppers, sliced into bite-size pieces) (*Footnote 2))

Steps:

  • If using squid tube: Use a knife or a pair of scissors to cut along one side of the tube. Open the tube to lay it flat, inner side up. Score the inner flesh of the tube, first parallel to the edge, then rotate the tube and slice to create an "X" shaped pattern, spaced about 1/4" (4 mm) in between. Cut the tube in half lengthwise, then slice into 1" (2.5 cm) strips.
  • To marinate the squid: add the squid into a big bowl along with the Shaoxing wine and salt. Stir to mix well and set aside while preparing the rest of the ingredients.
  • To make the sauce: Combine the sauce ingredients in a medium-sized bowl and stir to mix well.
  • To cook the stir fry: Heat 1 tablespoon of oil in a skillet over medium-high heat until hot. Add the squid. Let cook for 1 minute, until the bottom turns slightly golden. Stir and cook until the squid just curls up. Transfer the squid to a big plate and set aside.
  • Add the remaining 1 tablespoon oil, garlic, and ginger. Stir a few times to release the fragrance.
  • Add the onion and bell pepper. Cook and stir fry for 1 minute. Add back the squid. Stir the sauce again to dissolve the cornstarch completely, then pour it into the pan. Cook and stir until the sauce is thickened, 1 minute or so. Transfer everything to a big plate. Serve hot as a main dish.

2 tablespoons olive oil
3 green onions, sliced
3 garlic cloves, minced
2 bell peppers, deseeded and diced (the colorful the better)
1 cup champignon mushrooms, sliced
1 tablespoon chinese rice wine
2 -3 tablespoons soy sauce
1 teaspoon sesame oil

Steps:

  • Heat oil til really hot.
  • Stir fry onions (1 minute), then garlic (20 seconds).
  • Then add peppers and mushrooms. Stir-fry until it becomes a bit soft, (about 2 minutes).
  • Add the wine and soy sauce and continue to stir for 2 minutes.
  • When done, remove from heat and add the sesame sauce mixing it all together, and serve.
