STUFFED ACORN SQUASH SUPREME

Acorn squash is partially cooked in the microwave, then filled with turkey sausage, broccoli, cheese, rice, and apples.

1 (6 ounce) package broccoli and cheese flavored rice mix
1 pound turkey breakfast sausage
1 medium acorn squash, halved and seeded
½ cup chopped apple
2 teaspoons crushed coriander seed
½ cup shredded Monterey Jack cheese

Steps:

  • Prepare rice mix according to package directions; cover, and set aside.
  • Place squash halves cut side down onto a plate. Cook the squash in a microwave oven for 5 minutes on High, until tender but firm.
  • In a medium skillet over medium heat, cook sausage until evenly browned; drain, and set aside.
  • In a large bowl, mix together the prepared rice, sausage, apple, and coriander. Stuff each squash half with the mixture.
  • Cover stuffed squash halves with plastic wrap, and heat in the microwave until squash is cooked through and soft, about 5 minutes. Remove plastic, and top stuffed squash with cheese. Continue to cook until cheese is melted, about 1 minute.

2 pounds yellow summer squash, peeled and cubed
3 eggs, lightly beaten
1 cup (4 ounces) finely shredded sharp cheddar cheese
1 cup mayonnaise
3/4 cup crushed butter-flavored crackers (about 19)
1 medium onion, finely chopped
1 envelope buttermilk ranch salad dressing mix
1/3 cup dry bread crumbs
1/8 teaspoon paprika
3 tablespoons butter, melted

Steps:

  • Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. Drain well in a fine mesh strainer, pressing water out with the back of a large spoon. , Transfer to a large bowl; mash. Stir in the eggs, cheese, mayonnaise, cracker crumbs, onion and dressing mix. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs and paprika. Drizzle with butter. Bake, uncovered, at 325° for 45-50 minutes or until a thermometer reads 160°.

1 (6 ounce) package broccoli and cheese flavored rice mix
1 medium acorn squash, seeds scooped out of center
1 lb turkey sausage, browned
1/2 cup chopped peeled apple
2 teaspoons crushed coriander seeds
1/2 cup shredded monterey jack cheese

Steps:

  • Prepare rice according to package directions; cover and set aside.
  • Microwave squash for 5 minutes; cut in half.
  • In a large bowl combine the sausage, apple, coriander and reserved rice and mix well.
  • Stuff each squash half with mixture (there will be some mixture left over).
  • Cover stuffed squash halves with plastic wrap and microwave until squash is cooked through and soft, about 5 minutes.
  • Top with cheese and reheat for 1 minute, then serve.

This recipe has been a family favorite as long as I can remember. No holiday meal for us is complete without this on the table! (I've also seen many guests try this and go from "I don't like squash, but I'll try it" to "Is there any more of that squash casserole?" in just a few bites.)

2 c cooked yellow squash, drained
1 c sour cream
1 can(s) cream of chicken soup, undiluted
1 large carrot, grated
1 small white onion, chopped
salt and pepper, to taste
herb seasoned bread crumbs
butter, cold

Steps:

  • 1. Mash cooked squash; add sour cream, soup, carrot, onion, and desired amount of salt and pepper.
  • 2. Sprinkle a layer of bread crumbs in a shallow casserole dish(I use a 12 inch square); spoon squash mixture over crumbs.
  • 3. Cover with additional crumbs and dot with fresh butter pats. Bake at 350F for 30-45 minutes. Allow to cool 10 minutes before serving.

  • Mash cooked squash. Add sour cream, chicken soup, grated carrot, chopped onion, salt and pepper. Sprinkle a layer of herb-seasoned bread crumbs on bottom of shallow casserole dish.
  • Spoon squash mixture over crumbs, cover with additional herb-seasoned bread crumbs. Dot generously with butter. Bake in 350 degree oven for 30-45 minutes.

I was looking for a veggie-based side that was not based on potatoes, rice or noodles. This is a mild, tasty side dish that would pair well with chicken or fish. I got it from my Taste of Home 2006 cookbook.

1 large spaghetti squash (3-4 pounds)
1/4 lb bacon, diced (about 5 strips)
1/2 cup white onion, diced
3 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup mozzarella cheese, shredded

Steps:

  • Cut squash in half length-wise; discard seeds.
  • Place one squash half, cut-side-down, on a microwaveable plate.
  • Cover and microwave on high 8 minutes or until easily pierced with a fork, turning once.
  • Repeat with second squash half.
  • When cool enough to handle, scoop out squash , separating strands with a fork; set aside.
  • In a skillet, cook bacon and onion until bacon is crisp.
  • Using a slotted spoon, remove to paper towels and drain, reserving drippings.
  • Add butter, brown sugar, salt and pepper to drippings.
  • Stir in squash and bacon; heat through.
  • Remove from heat and stir in cheese until just blended.
  • Serve immediately.

3 pounds butternut squash, peeled, cubed
2 large eggs, beaten
1 cup shredded cheddar cheese
1 medium onion, chopped
3/4 cup whole milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup crushed butter-flavored crackers (about 12 crackers)
2 tablespoons butter

Steps:

  • Place squash in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until very tender. drain well and place in a large bowl; mash. In another bowl, combine the eggs, cheese, onion, milk, salt and pepper; add to the mashed squash and mix well., Transfer to a greased 2-qt. baking dish. Sprinkle with cracker crumbs. Dot with butter. Bake, uncovered, at 350° for 40-45 minutes or until a knife comes out clean.

Another old recipe found and brought out to try. I've been hunting squash recipes. We are already getting baskets of them.

4 - eggs, slightly beaten
1 cup(s) biscuit mix
1/2 cup(s) oil
1/2 teaspoon(s) salt
- - dash of pepper
1/2 pound(s) grated american cheese
2 pound(s) zucchini squash, peeled and grated

Steps:

  • In a large bowl slightly beat eggs. Add biscuit mix, oil, salt and pepper. Mix and beat by hand fairly well; batter may be lumpy.
  • Add grated cheese and grated zucchini and mix well.
  • Pour into a greased 9 x 12-inch pan.
  • Bake at 350 degrees for 30-45 minutes.
