This Ethiopian spris is a layered fruit smoothie drink that's absolutely delicious. Made with fresh papaya, mango, and avocado. Without a doubt, one of the most refreshing and delicious drinks I've ever had!

Number Of Ingredients 7

1/4 of papaya (ripe )
1 mango (ripe )
2 avocados (Hass)
1 cup sugar (split into 1/3 cups )
1 cup cold water (split into 1/3 cups )
1 cup ice
3 tbsp lime juice (split into 3)

Steps:

  • Cut the papaya in half and then into 1/4. Chop the 1/4 section and set it aside.
  • Cut and chop the mangoes and avocadoes and set them aside.
  • Place each of the fruits into three large different cups to blend with an immersion blender.
  • Add 1/3 cup of sugar to each cup, 1/3 cup of cold water, 1/3 cup of ice, and 1 tablespoon of lime juice. Blend it until smooth. All three juices should be smooth and creamy.
  • To layer, start by spooning the papaya mixture into a glass. Next, spoon the avocado mixture, and finally, spoon the mango mixture on top. You do not want to simply pour the mixtures on top on top of each other as they can sometimes sink into each other.
  • Garnish with lime zest and mint if desired. Enjoy!

When it comes to fruit drinks, most cuisines lean toward either sweet or salty. But in Ethiopia, they have the best of both flavor sensations in a layered fruit drink called Spris (Pronounced "spreece"). It consists of a creamy avocado base layer followed by a layer (or more) of finely pureed fruit. Spris are primarily deli fare in larger cities, but you can find them in some rural area delis. You can replace the papaya/mango blend with any fruit of your choice. Papaya, mango, papaya/mango blend, and pineapple are the most popular flavors. Grab a straw and spoon, and enjoy your Spris!

2 to 3 medium avocados, peeled and sliced
1/2 cup - water (amount is approximate)
1 medium lime, halved
1 medium papaya
1 large mango
1 tablespoon(s) honey (optional - for sweetening)
1 medium lime, cut into 4 slices (for garnish - optional)

Steps:

  • In a blender, add avocados, 1/4 cup of water and juice from 1/2 of a lime. Puree for about 10 to 15 seconds, adding more water, about 1/8 cup at a time, until it reaches the consistency of thick cake batter. Pour into 3 or 4 glasses.
  • Rinse blender. Add papaya and mango, and puree until smooth and no chunks remain. Add honey, if desired, for a sweeter fruit layer. Carefully layer pureed fruit over the creamy avocado layer. If you have multiple fruit layers, make sure the more dense fruit is poured in first (directly over the avocado layer). Then follow with the less dense pureed fruits. Otherwise, it won't layer properly.
  • Using the remaing lime half, squeeze a bit of lime juice over the top of each serving. Add a long parfait spoon and straw, garnish each serving with a slice of lime, and serve immediately.
