1 pkg. (10 oz.) spinach leaves
2 cups sugar snap peas
2 cups sliced fresh strawberries
1/2 cup thin red onion wedges
1/2 cup sliced almonds, toasted
2/3 cup KRAFT Classic CATALINA Dressing

Steps:

  • Combine all ingredients except dressing in large bowl.
  • Toss with dressing just before serving.

1 cup hulled and sliced strawberries
2 tablespoons white wine vinegar
2 tablespoons finely chopped fresh basil leaves
1 tablespoon olive oil
1 teaspoon sugar
Kosher salt and freshly ground black pepper
5 ounces baby Spinach, washed and dried
1/4 cup crumbled goat cheese
1/4 cup slivered almonds

Steps:

  • For the dressing:
  • Add 3/4 cup strawberries, white wine vinegar, basil, olive oil, sugar, salt, and pepper to a food processor or blender and puree until smooth.
  • For the salad:
  • Toss the spinach, cheese, almonds, and remaining 1/4 cup strawberries in a large bowl and lightly drizzle with dressing.

My mom gave me this recipe. I make it often when strawberries are in season. The combination of greens and fruit surprises people. The clincher is the dressing - a hit every time I prepare it.

1/2 cup vegetable oil
2 to 3 tablespoons cider or white wine vinegar
2 to 3 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon poppy seeds
1/2 teaspoon salt
1/2 teaspoon ground mustard
10 cups torn spinach
2 cups sliced fresh strawberries
1 cup chopped pecans, toasted
1/2 cup chopped Vidalia or sweet onion

  • In a jar with a tight-fitting lid, combine the first seven ingredients; shake well. Just before serving, combine spinach, strawberries, pecans and onion in a large salad bowl. Add dressing and toss to coat.

1 cup pecans
1 egg white
3/4 teaspoon vanilla
1 cup sugar
1 tablespoon water
1 cup salad oil
1/3 cup cider vinegar
1/4 cup sugar
1 tablespoon poppy seeds
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon celery seed
2 tablespoons corn syrup
6 cups fresh spinach, washed and dried
2 cups strawberries, sliced (or any fruit desired for color)
3/4 cup red onion, thinly sliced
1 cup fresh mushrooms, sliced

Steps:

  • Make spiced pecans. Beat egg white until very frothy, but not stiff. Add remaining ingredients, excluding pecans. Now add pecans and mix to coat. Spread pecans on baking sheet in single layer and bake in a preheated 200 degree oven for 45 minutes, turning every 15 minutes.
  • For dressing, shake together all ingredients. Toss together salad ingredients. Toss dressing with salad just before serving, sprinkle dressed salad with pecans.

It takes a little while to make the spiced pecans, but is well worth it or you can also toast the pecans instead of using spiced version.

2 cups strawberries, sliced
