SPRING WHEAT BERRY SALAD



Spring Wheat Berry Salad image

This fresh spring salad is loaded with healthy fava beans (a good source of dietary fiber and protein), baby turnips (for vitamin C), and pea shoots (for vitamins A, C, and folic acid). Top with Grilled Arctic Char, if desired.

2 cups wheat berries
2 cups fresh peas, shelled
1 cup fava beans, shelled
8 baby turnips, thinly sliced
1 1/2 cups pea shoots
2 cups assorted micro greens or salad greens
3/4 cup fresh chervil
3/4 cup fresh mint leaves
Juice and zest of 1 lemon
1/3 to 1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Place wheat berries in a large bowl; add 7 to 8 cups water. Let wheat berries soak overnight; drain.
  • In a large pot, bring 7 cups water to a boil over high heat. Add soaked wheat berries and reduce heat to a simmer. Cook until wheat berries are plump, about 55 minutes. Drain and cool.
  • Bring a medium pot of water to a boil. Prepare an ice-water bath; set aside. Add peas to boiling water and cook until crisp-tender, about 3 minutes. Transfer to ice-water bath to cool. Remove from water bath and set aside.
  • Add fava beans to boiling water and cook until crisp-tender, about 1 minute. Transfer to ice-water bath to cool; drain. Peel fava beans and set aside.
  • In a large bowl, toss together wheat berries, peas, fava beans, turnips, pea shoots, greens, chervil, mint, and lemon zest. Drizzle with lemon juice and olive oil; season with salt and pepper. Toss to combine.

Number Of Ingredients 11

1 small red onion, finely chopped, place in small bowl
3 tablespoon white balsamic vinegar
1 cup prepared wheat berries
1 bunch asparagus, washed and cut on the bias into 1 inches pieces
1 cup walnut halves
9 radishes, cut ends off, slice thinly, thin stack them and cut into slivers
4 dried dates
2 teaspoons kosher salt, divided
1/3 cup olive oil
1 dash ground black pepper
1 dash red pepper flakes

Steps:

  • Place onion in small bowl and add vinegar, set aside.
  • Bring a large pot of water to a boil and add 1 tsp. salt. Add prepared wheat berries and asparagus and cook for (1) one minute - (do not cook any longer than one minute so asparagus remains tender crisp).
  • Immediately drain wheat berries and asparagus in a colander. Transfer to a serving bowl and add the kosher salt, olive oil, fresh ground black pepper, and Red Pepper Flakes, the finely chopped red onions and vinegar, chopped walnuts, radishes and dates.
  • Mix together, taste and serve. Depending on you preferences you may want to add more vinegar or red pepper flakes.
  • How to Prepare Wheat Berries
  • Yields 2 ¼ Cup Cook Wheat Berries.
  • 3 cups water
  • 1 cup hard red wheat berries
  • 1 tsp. salt
  • Combine all ingredients in a saucepan, bring to a boil.
  • Reduce temperature, and allow the berries to simmer for about ½ hour.
  • Drain completely.
