Great to serve with spring rolls, or any other Asian style finger food. This can be kept in the fridge overnight, but be aware that the chili will increase in heat, so if you want to make it in advance and don't want it too hot, could be better to add the chili before serving.

¼ cup soy sauce
2 tablespoons hoisin sauce, or more as needed
1 tablespoon water
1 clove garlic, minced
1 teaspoon green onions, chopped
½ teaspoon toasted sesame oil
½ teaspoon white sugar
¼ teaspoon minced fresh ginger

Steps:

  • Combine soy sauce, hoisin sauce, water, garlic, green onions, sesame oil, sugar, and ginger in a small mixing bowl. Mix well, adding additional hoisin sauce to thicken mixture to your desired consistency if needed. Cover the sauce and refrigerate for 1 to 2 hours to allow flavors to blend.
  • Before serving, pour mixture into a small saucepan and heat. Serve warm.

This condiment, called nam pla prik, is found on virtually every home and restaurant table in Thailand.

1/4 cup (60 ml) fresh lime juice
2 tablespoons fish sauce
1 large garlic clove, minced
1/4 red or green jalapeño, unseeded and thinly sliced crosswise, or more to taste
1 packed tablespoon light brown sugar

Steps:

  • In a small bowl, whisk together the lime juice, fish sauce, garlic, jalapeños, and brown sugar. (Or, in a 12-ounce/180-ml or larger jar with a lid, combine the ingredients, cover, then shake vigorously.) Dip a piece of lettuce in the dressing and check the seasonings; add more jalapeños, if you like. The sauce should have a balance of hot, sweet, sour, and salty, which is typical of Thai foods. Keep, covered, in the refrigerator for up to 2 weeks.

3 tablespoons lime juice
1 tablespoon hoisin sauce
1 teaspoon sugar
1 teaspoon salt
3 ounces uncooked thin rice noodles
1 large carrot, grated
1 medium cucumber, peeled, seeded and julienned
1 medium jalapeno pepper, seeded and chopped
1/3 cup chopped dry roasted peanuts
8 spring roll wrappers or rice papers (8 inches)
1/2 cup loosely packed fresh cilantro
PEANUT SAUCE:
2 garlic cloves, minced
1/2 to 1 teaspoon crushed red pepper flakes
2 teaspoons canola oil
1/4 cup hoisin sauce
1/4 cup creamy peanut butter
2 tablespoons tomato paste
1/2 cup hot water

Steps:

  • In a small bowl, combine the lime juice, hoisin sauce and sugar; set aside. In a large saucepan, bring 2 qts. water and salt to a boil. Add noodles; cook for 2-3 minutes or until tender. Drain and rinse with cold water. , Transfer to a large bowl and toss with 2 tablespoons reserved lime juice mixture; set aside. In another bowl, combine the carrot, cucumber, jalapeno and peanuts. Toss with the remaining lime juice mixture; set aside., Soak spring roll wrappers in cool water for 5 minutes. Carefully separate and place on a flat surface. Top each with several cilantro leaves. Place 1/4 cup carrot mixture and 1/4 cup noodles down the center of each wrapper to within 1-1/2 in. of ends. , Fold both ends over filling; fold one long side over the filling, then carefully roll up tightly. Place seam side down on serving plate. Cover with damp paper towels until serving., In a small saucepan, cook garlic and pepper flakes in oil for 2 minutes. Add the remaining sauce ingredients; cook and stir until combined and thickened. Serve with spring rolls.

Just the sauce alone from this recipe is so good! These are so easy to make no pre-cooking just mix, fill the wrapppers then roll and fry and no cooking the sauce either! This recipe should make about 14-15 spring rolls, I strongly suggest to double the recipe, these are very good! To save time prepare the filling up to a day in advance and refrigerate.

1 (7 ounce) bottle hot chile sauce with garlic
1/2 cup water
1/2 cup rice wine vinegar
1/4 cup sugar
1/4 cup lemon juice
2 1/2 tablespoons chili paste
3/4 lb fresh shrimp (peeled, deveined and finely chopped)
1 large egg, lighty beaten
1/2 lb ground pork
1/4-1/2 teaspoon cayenne (optional add in only if you like spicy)
1 (8 ounce) can water chestnuts, well drained and minced
1 (8 ounce) can bamboo shoots, well drained and minced
1 tablespoon fresh minced garlic (can use a little more)
2 large green onions, finely chopped
2 tablespoons minced fresh ginger
1 1/2 tablespoons soy sauce
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1 (12 ounce) package spring roll wrappers
1 egg, lightly beaten for brushing
vegetable oil (for frying)

Steps:

  • For the sweet chili sauce; in a glass bowl mix all ingredients until well blended and chill until ready to use.
  • For the spring rolls;In a bowl stir together the chopped shrimp, 1 egg, ground pork, chestnuts, bamboo shoots, garlic, onions, ginger and soy sauce; mix well and season with salt and pepper.
  • Place about 1 semi-heaping tablespoon down the center of each spring roll wrappper.
  • Fold the top corner of the wrapper over the filling (tucking the tip of the corner under the filling).
  • Fold the left and right corners over filling.
  • Lightly brush the remaining corner with the remaining egg.
  • Tightly roll the filled end toward remaining corner then press gently to seal.
  • Repeat using all the mixture and spring roll wrappers.
  • In a medium heavy saucepan, pour about 2-inches of oil inches.
  • Heat the oil to 350 degrees.
  • Carefully drop a few spring rolls in at a time and fry until golden (about 6 minutes) turning to brown and cook on all sides (don't fry more than 5-6 spring rolls at a time).
  • Place on paper towels to drain.
  • Serve with prepared chilled sweet chili sauce.
