SPRING ASPARAGUS, HAM AND POTATO SALAD - HONEY MUSTARD DRESSING

Spring Asparagus, Ham and Potato Salad - Honey Mustard Dressing image

A light, fresh and very tasty potato salad, which is more of a meal than a side dish! I made this up when I had a few spears of fresh asparagus left, some boiled potatoes and some honey roast ham in the fridge! This recipe/idea is for two people - but it can be increased with ease, hence my listing of the ingredients in numbers, rather than in ounces or grammes! The dressing can be made ahead......and, hopefully it will be warm enough to sit outside and soak up the spring or early summer sun......c'est Parfait!

Categories     Salad Dressings

Time 5m

Yield 2 serving(s)

Number Of Ingredients 18

1 tablespoon honey
2 tablespoons olive oil
1 tablespoon sherry wine vinegar or 1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard or 1 teaspoon mustard, of your choice
salt
black pepper
3 large boiled potatoes, peeled and cut into 1-inch cubes
8 -10 asparagus cooked asparagus spears, cut into 3-inch lengths
4 slices of cooked honey roast ham, cut into strips
1/2 red onion, peeled and very finely chopped
8 cornichons, sliced (optional)
salt
black pepper
chopped fresh chives or chopped fresh chervil
cooked fresh broad bean (optional)
grilled and crumbled crispy bacon (optional)
fresh peas, in their pods (optional)
stuffed green olive (optional)

Steps:

  • Make up the dressing by putting all the dressing ingredients into a jar and shaking it well. The dressing can be made up well in advance.
  • Choose two attractive plates or bowls and start to assemble the salad.
  • Place the potatoes on the plate/bowl first and then arrange the strips of ham & asparagus spears over the top - gently mix through to "just" mingle the ingredients together.
  • Next, scatter the minced/finely diced red onion over and then the sliced cornichons - if you are using them.
  • Pour over the honey & mustard dressing - giving the salad a liberal dousing!
  • Season and scatter the chopped chives and/or the chopped chervil over the top.
  • Serve with crusty bread & a glass of crisp, chilled white Chablis or Chardonnay!
  • Optional ideas:.
  • You could also add peas, broad beans, olives or crispy bacon!

NEW POTATO SALAD WITH FENNEL AND SPRING PEAS

New Potato Salad with Fennel and Spring Peas image

I used to have a little coffee shop a long time ago called the Gotham Coffee Shop, and this potato salad was one of our most popular items. With the warm vinaigrette, it's almost like a German-style potato salad, plus a surprising crunch from the fennel. Recipe adapted from Taste and Technique: Recipes to Elevate Your Home Cooking, available on September 13, 2016 wherever books are sold.

Provided by Naomi Pomeroy

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 13

1 1/2 pounds new potatoes
12 cups cold water, divided
7 tablespoons Kosher salt, divided
1 1/2 cups fresh peas, preferably freshly shelled
Ice water
1/2 bulb fennel, fronds reserved
2 green onions, sliced
Mint and/or basil, a small handful of leaves
1/3 cup red wine vinegar
1/3 cup extra-virgin olive oil
1 teaspoon sugar
1 teaspoon kosher salt
1/4 teaspoon Freshly ground black pepper, 8 turns of a pepper mill

Steps:

  • For the potatoes and peas: Add 6 cups water, 3 tablespoons of salt, and potatoes to a heavy-bottomed pot. Turn heat to high, partially cover, and bring to a boil. Meanwhile, blanch peas: Bring 6 cups of water with 3 tablespoons of salt to a boil. Prepare an ice bath with 1 tablespoon of salt. Add peas to the boiling water and cook until the water comes up to a boil again, 2-3 minutes. Taste to verify that the peas are fully cooked; then strain, place peas into the salted ice bath to halt cooking, and set aside. Check potatoes periodically by piercing the largest one with a fork. They are done when the fork goes all the way through with no resistance. Turn off the heat and let the potatoes sit in their water, 4-5 minutes longer. While potatoes are cooking, prep the rest of the ingredients (Step 2).
  • Vinaigrette: In a small saucepan over medium-low heat, add vinegar, olive oil, sugar, salt, and pepper. Bring to a simmer to dissolve and incorporate all of the ingredients. Remove from heat and set aside. Meanwhile, prepare the fennel by removing the fronds (reserving them for later use) and use a mandoline to slice into thin strips. Add the sliced fennel to a bowl, along with the green onions and warm vinaigrette. Toss to coat and set aside.
  • Assembly: Drain the peas and fully cooked potatoes. Cut the potatoes in half and add directly to the fennel while they are still warm; toss so the vinaigrette is absorbed into the potatoes. Roughly chop the fennel fronds (about ¼ cup), and cut the mint and basil into a rough chiffonade (about ¼ cup total); add to the salad. At the last minute, to avoid discoloration, add the peas. Toss again and serve.

MINTED PEA SPRING POTATO SALAD

Minted Pea Spring Potato Salad image

While this is called potato salad, it's not the traditional creamy potato salad you think of from a BBQ. It's really a side dish filled with fresh mint, parsley, potatoes, peas, and hard-boiled eggs. It's a fresh salad perfect for spring. Everything is dressed in a light lemony dressing that adds a little zing to the salad. A fresh Easter side dish option.

Provided by Sandra McGrath @SandyJJ

Categories     Vegetables

Number Of Ingredients 9

1 1/2 pound(s) red or new potatoes, small
1 bag(s) frozen peas (12 oz)
1 bunch(es) fresh mint leaves (need about 2 tablespoons, chopped)
1 bunch(es) fresh parsley (need about 2 tablespoons chopped)
4 - eggs, hard boiled
1/4 cup(s) olive oil, extra virgin
1/4 cup(s) lemon juice, fresh
1/4 cup(s) Parmesan cheese
- salt and pepper, to taste

Steps:

  • Wash and scrub potatoes or if in my house, peel potatoes as no one likes the skins. Cut in half and place in boiling salted water. Add 4 eggs to this pan or you can boil them separately. They are usually done after about 10 minutes but test with a fork for doneness.
  • Add the bag of frozen peas to the water.
  • Turn off the heat and cover. You don't want the peas to get mushy and you want them to stay green but still cooked.
  • After about 10 minutes, drain in a colander. Peel eggs under cold running water and quarter them.
  • Mix your salad dressing of lemon, olive oil, chopped mint, chopped parsley, salt, and pepper.
  • Pour all into a bowl or casserole dish and toss everything together.
  • Top with Parmesan cheese and serve or chill and serve later.
