SPRING GREEN FRIED RICE & EGGS

- Heat a splash of the oil in a large non-stick frying pan over a high heat. When hot, crack the eggs in and turn the heat down. This should make the eggs nice and crispy - without burning - while the yolks cook. Use a fish slice to remove, set aside on kitchen paper and cover with foil to keep warm.
- Add the remaining oil to the pan, then scatter in the chopped spring onions, chilli, ginger and garlic and gently fry until softened, about 2-3 mins. Tip in the beaten egg and leave for 30 seconds until just set, then mash up with a spoon. Tip in the spring greens with a splash of water and cook until wilted. Add the rice and soy sauce and mix everything together, then season and tip into two bowls. Top with the eggs, sliced spring onion and sesame seeds to serve.

SPRING GREEN FRIED RICE
Fried rice is so yummy. I could make a meal out of it--forget about the main dish. This one is vegetarian and full of beautiful spring greens. Recipe & photo: Better Homes & Gardens

- In a small bowl beat eggs and 1 tsp. soy sauce; set aside. In a wok or large skillet heat toasted sesame oil over medium heat. Add egg mixture; stir gently until set. Remove egg; cool slightly. Using your hands, roll the cooked egg into a log. Using a sharp knife, slice the egg into strips; set aside.
- In the same skillet heat vegetable oil over medium-high heat. Add garlic and ginger; cook for 30 seconds. Add cabbage; cook and stir for 2 minutes. Add edamame and peas; cook for 2 minutes. Add rice and 2 Tbsp. soy sauce; cook and stir 2-4 minutes or until heated through. Add egg mixture and green onion; cook and stir about 1 minute or until heated through. Top with crushed red pepper, if desired.
- Note: I like to sprinkle more soy sauce on my own serving, which is optional.
