SAUTéED YELLOW SQUASH AND ZUCCHINI



Sautéed Yellow Squash and Zucchini image

Number Of Ingredients 9

1 1/2 tablespoons olive oil
1 tablespoon unsalted butter
1 yellow onion, thinly sliced into half moons
2 cloves garlic, minced
2 medium zucchini, sliced into 1/4-inch-thick rounds
2 medium yellow squash, sliced into 1/4-inch-thick rounds
1 teaspoon Italian seasoning
Kosher salt
Freshly ground black pepper

Steps:

  • Heat the oil and butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until just softened, about 5 minutes. Add the garlic and cook, stirring occasionally, for 1 minute. Add the zucchini, squash, Italian seasoning and a generous pinch of salt. Cook, stirring occasionally, until the zucchini and squash are tender and beginning to brown in some spots, about 10 minutes. Season with salt and pepper. Serve warm.

SPIRALIZED ZUCCINI AND YELLOW SQUASH

Number Of Ingredients 15

1 zucchini
1 yellow squash
1/3 onion
4 mushrooms
2 pieces chicken
2 slices bacon
4 campari tomatoes
8 black olives
1 tablespoon capers
4 ounces feta cheese
3 cloves garlic
1 tablespoon cajun spices
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter

Steps:

  • cut boneless thighs into 1 inch pieces, set aside and sprinkle cajun spices over.
  • chop onion and mushroom into pieces, set aside
  • cut tomatoes, black olives and feta in a large dice add capers set aside
  • chop bacon into 1/2 inch squares
  • chop garlic into mince
  • spiralize the zucchini and yellow squash set aside.
  • melt the butter in a pan and saute the onion and mushrooms remove and set aside
  • render the bacon until crisp set aside leave fat in pan add chicken and garlic to the pan cook until done
  • Remove the chicken when done and add the the zucchini, yellow squash, tomatoes, black olives, capers and feta to the pan and heat and serve.
  • serve when heated

If you love gadgets, try a vegetable spiralizer! Straight, even vegetables work best when using spiralizers. If you don't have a spiralizer, use a vegetable peeler. Pull peeler down sides of squash, making long strips. The baking time may be less.

1 zucchini (6 inches)
1 yellow summer squash (6 inches)
2 teaspoons olive oil
1/4 teaspoon salt
Freshly ground pepper, chopped parsley and shredded Parmesan, if desired

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with foil.
  • Cut off ends of squash. Cut squash with spiralizer according to manufacturer's directions. Place in pan. Drizzle with oil; sprinkle with salt. Toss to coat; spread squash in single layer.
  • Bake 8 to 10 minutes or just until tender. Sprinkle with pepper, parsley and Parmesan.
