SPINACH, SAUSAGE AND CHEESE BAKE

Steps:
- Brown sausage in skillet over medium high heat. Drain fat from skillet and stir in tomato sauce. Set mixture aside.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the spinach, cottage cheese, Parmesan cheese and egg. Mix well and spread mixture in the bottom of a 9x13 inch baking dish. Spoon sausage mixture over spinach mixture and top with mozzarella cheese.
- Bake in preheated oven for 40 minutes.

- 1. Brown sausage in skillet over medium heat. Remove to drain fat, cook onion in drippings, then stir in tomato sauce. Set mixture aside. 2. Preheat Oven to 350 degrees F 3. Parboil greens in boiling water, let cool, drain water and chop 4. In large bowl, combine egg, ricotta, Parmesan and chopped greens. Spread over bottom of 9x13 in baking dish. Spoon sausage mixture over spinach mixture, then top with mozzarella cheese. 5. Bank in oven for 40 minutes, or until cheese is bubbly and brown.
