¾ cup chicken broth
½ cup tricolor orzo
1 tablespoon butter
2 cloves garlic, minced
½ cup julienned fresh spinach
2 ounces sliced portobello mushrooms
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Combine chicken broth and orzo in a multi-functional pressure cooker (such as Instant Pot®); stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Switch to Saute function. Stir in butter, minced garlic, spinach, and mushrooms. Season with salt and pepper.

3 Tablespoons butter (divided)
12 ounces baby portobello mushrooms (sliced)
1 teaspoon minced garlic
2 cups dried orzo pasta
3 cups chicken broth
1/2 cup shredded parmesan cheese
2 cups baby spinach
salt and pepper, to taste
garlic powder, to taste

Steps:

  • In a large skillet over medium-high heat, melt 1 Tablespoon butter. Add mushrooms and garlic and cook, stirring often until mushrooms are softened and brown.
  • Lower heat to medium, add remaining butter and orzo. Stir until the pasta starts to turn a light golden brown (it will only take a few minutes).
  • Add chicken broth and bring the mixture to a boil, stirring occasionally. Turn down to a simmer and continue stirring until the pasta is tender and most of the liquid has been absorbed (it will take about 10 minutes).
  • Remove from heat, then add parmesan cheese and spinach, stirring until the cheese is melted and spinach is wilted. Sprinkle with salt, pepper, and garlic powder. Serve warm.

1/2 cup chopped toasted walnuts (can use 3/4 cup)
3 tablespoons olive oil
1 medium onion, chopped
3 large garlic cloves, chopped (do not finely mince the garlic)
1 pinch cayenne pepper (optional and adjust to taste)
1/2 lb fresh sliced mushrooms (can use more)
1 (10 ounce) package frozen chopped spinach, thawed and drained (hand-squeeze dry to remove any excess moisture)
3 cups chicken broth
1 1/2 cups uncooked orzo pasta
1/3 cup freshly grated parmesan cheese (or to taste)
salt & freshly ground black pepper (to taste)

Steps:

  • Heat oil in a saucepan over medium-high heat.
  • Add in onions and sliced mushrooms; cook until tender golden brown (the onions must be browned, this may take about 5-6 minutes or a little more) adding in the chopped garlic and a pinch of cayenne pepper the last 2 minutes of cooking.
  • Add in the spinach and cook stirring for 2 minutes.
  • Add in chicken broth; bring to a boil stirring constantly.
  • Add in uncooked orzo, stir then reduce heat to low, cover and simmer until the orzo is tender (about 20 minutes).
  • Remove from heat and stir in the walnuts and Parmesan cheese.
  • Season with salt and fresh ground black pepper to taste.
