You can use leftover corned beef. We love this fried rice so much that I actually cook corned beef (by slow-cooking pre-marinated meat) just for this! Adjust the amount of each ingredient to your taste. I like the combination of the colors as well as the nutrition balance.

1 tablespoon vegetable oil
2 cups shredded and chopped cooked corned beef
4 ounces spinach, chopped
3 eggs, lightly whisked
5 cups cooked rice
1 teaspoon garlic powder, or to taste
salt to taste

Steps:

  • Heat vegetable oil in a wok or large skillet over medium heat. Add corned beef; cook and stir until heated through, about 3 minutes. Add spinach; cook and stir until wilted, about 2 minutes.
  • Push beef and spinach to the sides of the work; pour eggs into the center; cook, stirring frequently, until eggs are scrambled, about 3 minutes. Stir in rice; cook until heated through, about 5 minutes. Season with garlic powder and salt.

FRIED BLACK RICE WITH GINGER TOFU AND SPINACH



Fried Black Rice With Ginger Tofu and Spinach image

Ginger, garlic, and scallion make a flavorful marinade for this tofu dish.

3/4 cup black rice
1 1/2 cups water
1 bunch spinach, large stems removed and rinsed
3 tablespoons vegetable oil
2 cloves garlic, minced
3 tablespoons finely chopped fresh ginger
3 scallions, thinly sliced, white and green parts separated
1 pound extra-firm tofu, cut into six 1/2-inch-thick rectangles
1 tablespoon Sriracha sauce
Lime wedges, for serving

Steps:

  • Bring rice and water to a boil in a small saucepan. Reduce to a simmer, cover, and cook until rice is tender and liquid is absorbed, about 45 minutes. Let stand 5 minutes. Fluff with a fork and set aside.
  • Steam spinach, covered, in 1 tablespoon oil over medium-high heat for 2 minutes; set aside. Saute garlic, ginger, and scallion whites in remaining oil until fragrant, about 1 minute. Add tofu and Sriracha and cook until tofu is golden, about 6 minutes per side. Remove and set aside.
  • Add rice to skillet and cook over medium-high heat until crisp, about 2 minutes. Serve with spinach and tofu. Garnish with scallion greens and serve with lime.

This is an easy to throw together not so "fat" fried rice that give you a way to satisy the craving for "fried"

1 1/2 cups spinach, chopped
2 cloves garlic, minced
1 teaspoon dark sesame oil
1/3 cup white wine
1 cup diagonally sliced celery or 1 cup bok choy
1 cup mushroom, thinly sliced
3 cups cooked long grain brown rice
1/4 cup scallion, sliced
2 tablespoons low sodium soy sauce or 2 tablespoons tamari

Steps:

  • In a wok or large frying pan over medium high heat, saute the spinach and garlic in the oil for 2 minutes, stirring constantly.
  • Transfer to a platter In the same pan, heat the wine and saute the celery or bok choy and mushrooms, stirring constantly, for 3 minutes.
  • Add the rice, scallions and spinach.
  • Heat through.
  • Season with soy sauce or tamari.

Spinach Fried Rice image

I like to cook fried rice and am always on the lookout for recipes that I could use. This one I made up along the way and by just adding what I had in the refrigerator at the time. I normally don't use lard, but this time, for whatever reason, I did, and the flavor is wonderful because of it.

1 lb rice, brown
1 tsp sea salt or kosher
1 Tbsp black salt
1/2 lb lean ground beef
1 chopped onion
1 tsp basil
1 tsp crushed red pepper flakes
1 c whole kernal corn
1 c cooked spinach, canned or frozen
1/2 c red wine
water to cover the rice

Steps:

  • 1. In cast iron skillet or another kind of pan, fry the lean ground beef, add the chopped onions and the spices. Chop the meat up as you cook so it will look like taco meat.
  • 2. Add the whole package of rice and mix it all up throughly. Cook the rice with meat until the rice begins to look brown. Add the corn and stir it up with all the rest. Add the spinach, stir it together with the rest. Now add the wine and stir it again. Let it simmer five minutes.
  • 3. Turn down the temperature of the burned to medium high, and add the water. It should cover the rice completely. Place a lid on the pan and just watch it. It is is too bubbly, turn heat down more where it just bubbles very little...more like a simmer.
  • 4. It should take at least thirty minutes to cook, but might be longer if the rice isn't all the way cooked. You want all the water to be cooked out of it. Add more if more is needed.
  • 5. When done, stir it all up to mix it together. Serve.
