PASTA WITH TOMATOES AND SPINACH.

This lovely pasta with tomatoes and spinach is ready in less than 20 minutes and it's packed with fresh spinach and cherry tomatoes. It's delicious, juicy, garlicky and makes a great meatless meal.

Number Of Ingredients 12

8oz (220 grams) pasta
1 Tbsp olive oil or extra virging olive oil
3 garlic cloves, minced
9oz (250 grams) cherry tomatoes, cut into halves
½ tsp dried basil
¼ tsp fine salt, plus more to taste
⅛ tsp freshly cracked black pepper
5oz (150 grams) baby spinach
¼ heaped cup (30 grams) grated parmesan cheese
grated parmesan cheese
freshly cracked pepper
extra virgin olive oil

Steps:

  • Fill a large pot with water and place over high heat to bring it to a boil. Once boiling, add the pasta and cook until al dente according to the package directions. Reserve about ½ cup of cooking water, and drain the pasta.
  • While you're waiting for the water to boil, heat the olive oil in a large skillet over medium-low heat. Add the garlic and sauté until fragrant (about 45-60 seconds).
  • Add the tomatoes, basil, salt and a freshly cracked pepper. Sauté the tomatoes until the skins burst and the tomatoes begin to release their juices. Keep the heat to medium-low, stir and make sure the garlic doesn't burn.
  • Once the tomatoes begin to break down add the spinach, a large handful at a time, and stir it into the tomatoes until the spinach is wilted but still bright green (it should take max a couple of minutes).
  • At this point the tomatoes have created a sauce-like mixture on the bottom of the pan. Taste and adjust the seasoning if needed.
  • Add the cooked and drained pasta to the pan, the parmesan cheese and a touch of pasta cooking water. Toss until the pasta is coated in the sticky sauce and everything is combined (you don't need all the reserved cooking water, but use just as much as needed to make everything nice and moist).
  • Serve with some grated parmesan cheese, seme freshly cracked black pepper, and a drizzle of extra virgin olive oil if you wish.

1 lb penne (or your preferred pasta variety)
1/2 cup olive oil
1/4 teaspoon crushed red pepper flakes (optional)
2 pints grape tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
6 cloves garlic, thinly sliced
1 cup white wine or chicken broth
2 cups fresh spinach
Parmesan cheese, for serving (optional)

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat.
  • Add oil to a large, wide pot and bring to a simmer over medium heat. Add in the crushed red pepper flakes, tomatoes, salt, and pepper, and cook until the tomatoes begin to burst and give off their juices, about 9 to 10 minutes. Use a wooden spoon to gently press the tomatoes if they're not bursting on their own.
  • Add in the garlic and cook for 1 minute, or until fragrant. Stir in the wine and bring to a boil, then reduce the heat to a simmer and cook for 5 minutes. Finally, stir in the spinach and cook until slightly wilted.
  • In the meantime, add the penne into the boiling water and cook for 9 to 10 minutes, or until al dente.
  • Drain the pasta, reserving a 1/2 cup of the pasta water.
  • Toss the pasta immediately into the pot with the sauce and stir well to combine. Add in some of the reserved cooking water, if needed. Taste and add additional salt and pepper, if needed.
  • Remove from heat and divide among serving bowls. Top with cheese and serve at once!

SPINACH FETTUCCINE WITH CARAMELIZED ONIONS AND LEMON THYME



Spinach Fettuccine with Caramelized Onions and Lemon Thyme image

1 pound fresh spinach fettuccine, cooked
6 large Spanish onions, thinly sliced
1 teaspoon butter
3 teaspoons olive oil
1/4 cup fresh lemon thyme, chopped
Additional water or vegetable stock

Steps:

  • Melt butter and oil in a large saute pan and add onions. Cook covered over gentle heat for 40 minutes to one hour, until the onions are a deep golden brown. You may need to add water or stock to prevent the onions from burning. Stir in the fresh thyme, and toss with the pasta. Serve.

This is a heavily modified recipe from "The New Italian Cooking" book by Margaret and G. Franco Romagnoli. Theirs does not have spinach, and I needed to add vegetables to the family's meals. I've changed it enough that when asked for the recipe I cannot copy it from the book.

3 tablespoons butter
2 tablespoons olive oil
2 (7 ounce) cans baby clams, minced
2 tablespoons clam juice, reserved
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 -2 garlic clove, crushed
6 tablespoons unseasoned breadcrumbs, toasted (optional)
1/2 cup parmesan cheese, grated (optional)

Steps:

  • Thaw, drain and squeeze chopped spinach. If you don't get the spinach mostly dry, the sauce is wet, runny and rather icky. !Raw spinach does not work in this recipe!
  • Melt butter in sauce pan.
  • Add olive oil and garlic.
  • Add spinach, cook until warmed through (approximately 5 minutes).
  • Add clams and juice, simmer for 5 minutes.
  • remove from heat, serve over 3/4 pound pasta noodles with bread crumbs and cheese as toppings.

Steps:

  • Cook bacon in a 5- to 6-quart heavy pot over moderate heat, stirring occasionally, until beginning to brown, about 5 minutes. Add onion, garlic, and red pepper flakes and cook, stirring occasionally, until onion is golden, about 6 minutes. Add tomatoes and cook, stirring occasionally, until they begin to break down and sauce thickens slightly, about 8 minutes.
  • Increase heat to moderately high, then add clams and bring to a boil, covered. Cook, covered, stirring occasionally, until clams just open wide, about 6 minutes (discard clams that do not open after 10 minutes). Stir in spinach and cook until wilted, about 1 minute. Season with salt and pepper.
