SPINACH AND LENTIL SALAD WITH OREGON BLUE CHEESE AND TART CHERRY VINAIGRETTE



Spinach and Lentil Salad with Oregon Blue Cheese and Tart Cherry Vinaigrette image

Number Of Ingredients 10

3/4 cup green lentils
7 tablespoons red-wine vinegar
8 bacon slices (about 6 ounces)
1/4 cup olive oil
1/3 cup finely chopped shallot
1/4 cup water
1/2 cup dried unsweetened tart cherries (about 3 ounces)
2 tablespoons sugar
3 1/2 cups baby or regular spinach leaves
1/3 cup blue cheese (about 2 ounces), preferably Oregon Blue

Steps:

  • In a heavy saucepan cover lentils with water by 2 inches and simmer until just tender but not falling apart, about 15 minutes. Drain lentils well in a sieve. Rinse lentils under cold running water to stop cooking and drain well. In a bowl toss lentils with 2 tablespoons vinegar and salt and pepper to taste. (Lentils may be made 2 days ahead and chilled, covered. Bring lentils to room temperature before proceeding.)
  • In a skillet cook bacon over moderate heat until crisp and with tongs transfer to paper towels to drain. Crumble bacon.
  • In cleaned saucepan heat 2 tablespoons oil over moderate heat until hot but not smoking and cook shallot, stirring, until golden brown. Stir in water, cherries, sugar, and remaining 5 tablespoons vinegar and simmer, stirring occasionally, until liquid is reduced by about half, about 10 minutes. Reduce heat to low and whisk in remaining 2 tablespoons oil in a slow stream until emulsified. Season vinaigrette with salt and pepper.
  • Add half of vinaigrette to lentils and toss well. In another bowl toss spinach with half of lentil mixture, half of bacon, half of cheese, remaining vinaigrette, and salt and pepper to taste.
  • Divide remaining lentil mixture among 6 plates and top with spinach mixture. Sprinkle salads with remaining bacon and cheese.

8 ounces bacon, diced
1/2 cup finely chopped red onion
1 teaspoon minced garlic
1/4 teaspoon fresh ground black pepper
1 pinch salt
1 1/2 tablespoons creole mustard
1/4 cup red wine vinegar
2 tablespoons sugar
1/2 cup dried cherries
1/4 cup vegetable oil
8 cups fresh spinach, tough stems removed, washed and spun dry (about 12 ounces)
1 large orange, segmented
4 ounces goat cheese, crumbled

Steps:

  • n a large skillet, cook the bacon over medium-high heat until crisp, about 5 minutes. Drain on paper towels and pour off all but 1/4 cup of grease from the pan.
  • To the fat in the pan, add the onions and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the garlic, pepper, and salt and cook, stirring, for 30 seconds. Add the mustard and vinegar and cook, stirring to de-glaze the pan. Add the sugar and stir to dissolve. Add the cherries and cook, stirring, until slightly plumped and warmed through, about 1 minute. Remove from the heat and whisk in the oil. Return the bacon to the pan and adjust the seasoning, to taste.
  • In a large bowl, toss the spinach with the warm dressing. Divide the salad among 4 salad plates, arrange the orange segments around the edges, crumble the goat cheese over the top and serve.

4 slices turkey bacon, cooked and cut into 1/2-inch pieces

Steps:

  • Cut peaches in half, remove seed. Cut into 1/4-inch slices. Brush with oil and grill on each side until tender. Cool slightly, cut into chunks.
  • Combine all ingredients in salad kit except White Balsamic Vinaigrette, in large bowl. Add peaches and bacon, toss well. Toss with dressing. Serve with crusty bread, if desired.

Spinach Cherry Almond Salad with Grilled Steak Wraps image

8 oz. sirloin steak or top loin steak
Salt and ground black pepper, to taste
2 plums
Olive oil to brush
1 pkg. DOLEĀ® All Natural Spinach Cherry Almond Bleu Salad Kit
1 DOLE Red Onion, sliced thinly into crescents
6 (10-inch) multi-grain wraps or tortillas

Steps:

  • Season steak with salt and pepper, to taste. Grill steak to desired doneness. Cover; let stand 10 minutes. Thinly slice steak.
  • Cut plums in half, remove seed. Slice horizontally into 3 slices. Brush with oil and grill on each side until tender. Cool slightly, cut into chunks.
  • Combine all ingredients in salad except White Balsamic Vinaigrette, in large bowl. Add plums and onion, toss well. Toss with dressing.
  • Microwave wraps for 35 to 40 seconds, to soften. Divide salad mixture and sliced steak among wraps and roll up.

3 1/2 tablespoons spicy tomato sauce (alternatively, ketchup)

My Family's Favorite Salad

2 ripe pears, peeled and sliced thinly (peeled is how my family likes it; if yours doesn't mind, the peeling is fine)
1 pkg spinach, washed and de-stemmed
1/3 c dried cherries (dried cranberries are a good substitute)
1/2 c pecans, roasted and chopped
1/2 c freshly squeezed citrus juice (1 lemon and 1-2 oranges)
3/4 c good olive oil
2 tsp dijon mustard
2 tsp local honey
1 1/2 Tbsp champagne or white wine vinegar
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
4 oz crumbled goat cheese (optional) i serve this onthe side so those who don't want the cheese don't have to eat it.

Steps:

  • 1. In a small bowl, whisk together the citrus juice, olive oil, honey, vinegar, salt, and pepper. Taste dressing and correct to taste. Pour half of dressing over pears in bottom of salad bowl. Add spinach and cherries, but DO NOT STIR until ready to serve. Refrigerate. When ready to serve, remove from refrigerator, stir thoroughly, add pecans and serve.

FOR THE CHERRY VINAIGRETTE:
3-4 Tbsp cherry preserves (i use bonne maman)
2-3 Tbsp extra virgin olive oil
1-2 Tbsp white wine vinegar
to taste pepper and kosher salt (i usually end up with about 1 tsp of salt)
FOR THE SALAD:
4-5 c baby arugula
3-4 c baby spinach
2 c cooked chicken cut into 1 1/2 inch cubes
1/8 c pine nuts (you can toast in a dry pan if you wish)
3 Tbsp dried cherries
1/3-1/2 c shaved parmesan/fontina cheese (i'm obsessed with sartori tuscan reserve blend)

Steps:

  • 1. Put all ingredients for the cherry vinaigrette into a medium bowl and whisk until well blended. Pour into a decorative bowl and set aside. All components of this vinaigrette are flexible! Add more cherry preserves if you like, or more vinegar if that floats your boat!
  • 2. Tear the spinach and arugula into rough pieces and arrange on a large tray. Sprinkle your pine nuts, dried cherries, and cheese shavings over the top of the greens.
  • 3. Arrange the chicken down the center of the salad. Serve with the vinaigrette on the side, and a small bowl of extra cheese shavings if you're that type of person (I am!! LOL!!).
