This recipe is a take off of the popular spinach dip, however in a different form. This is a great addition to your holiday open house table.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 (8 ounce) packages cream cheese, softened
1 (4 ounce) can water chestnuts, drained and chopped
1 (.4 ounce) packet dry vegetable soup mix
2 tablespoons mayonnaise
1 cup finely shredded Cheddar cheese
½ cup chopped walnuts

Steps:

  • In a large bowl, mix together the spinach, cream cheese, water chestnuts, vegetable soup mix, mayonnaise and Cheddar cheese until well blended. Form into a ball, and roll in chopped walnuts. If the mixture is too soft to form a ball, refrigerate for about 30 minutes to set. Wrap the cheese ball in plastic wrap, and refrigerate overnight to blend the flavors before serving with your favorite crackers.

1 (10 ounce) package frozen chopped spinach, thawed and drained
6 ounces crumbled Gorgonzola cheese
½ cup slivered almonds

Steps:

  • Stir together cream cheese and spinach in a large bowl; mix well. Gently fold in Gorgonzola crumbles. Shape cheese mixture into a ball. Roll cheese ball in slivered almonds. Wrap well; chill until firm, about 1 hour.

6 slices bacon
6 ounces fresh spinach
1/2 teaspoon kosher salt
1/2 cup onion, finely minced
2 cloves garlic, finely minced
1 (8 ounce) block of cream cheese, softened
1/2 cup shredded cheddar jack cheese
1/4 teaspoon cayenne pepper

Steps:

  • In a large skillet cook the bacon until crisp. Set aside to cool and drain on paper towels. Chop when cool. Drain all but 1 tablespoon bacon grease from the skillet. Add the spinach and cook over medium heat until wilted and cooked through. Sprinkle the spinach with salt and set aside on a cutting board to cool. Chop finely when cooled. Add the onion to the skillet and cook until it's translucent and a tiny bit golden at the edges. Add the garlic to the skillet and cook for 1 minute. Remove from heat. Place the cream cheese in a large bowl. Add cheese, onions, garlic, half of the chopped bacon, chopped spinach, and cayenne pepper and stir well. Roll the cream cheese mixture into a large ball and then roll in the remaining chopped bacon. Wrap tightly and refrigerate until ready to serve.

1 (4 ounce) package crumbled feta cheese
1 (8 ounce) package cream cheese
1 (4 ounce) can artichoke hearts, chopped
1 (1 ounce) envelope dry ranch dressing mix
2 teaspoons garlic, finely diced

Steps:

1/2 cup pine nuts
1 cup frozen chopped spinach
1 cup loosely packed fresh basil leaf, trimmed
1 cup shredded parmesan cheese
1/2 cup shredded cheese (Italian cheese blend)
1 (8 ounce) package cream cheese, softened
1 teaspoon minced garlic
fresh ground black pepper
2 tablespoons shredded parmesan cheese
1/2 cup chopped fresh parsley

Steps:

  • Toast pine nuts until golden brown on a baking dish in a preheated 325-degree oven, 6-8 minutes, or in a dry skillet, stirring constantly. Remove to a plate and let cool.
  • Bring a saucepan of water to a boil. Add spinach and basil; cook 3 minutes, until tender (or place in a microwave-safe dish, lightly cover with plastic wrap and cook on high 2 minutes). Drain in a colander; rinse under cold water. Press to extract excess moisture.

This recipe gives you options for using regular or reduced-fat products. THIS IS TO BE MADE THE DAY BEFORE SERVING! REFRIGERATE OVERNIGHT!

1 can(s) (4 oz.) water chestnuts, drained and chopped
1 - (.4 oz) packet dry vegetable soup mix
2 tablespoon(s) mayonnaise or light mayonnaise
1 cup(s) finely shredded cheddar cheese (regular or 2% reduced-fat)
1/2 cup(s) walnuts, chopped
