SPINACH PHYLLO BUNDLES



Spinach Phyllo Bundles image

Spanakopita is a Greek spinach pie made with phyllo dough. This appetizer version is always a hit at parties.

Number Of Ingredients 11

1 medium onion, chopped
2 tablespoons plus 1/2 cup butter, divided
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup (4 ounces) crumbled feta cheese
3/4 cup 4% cottage cheese
3 eggs, lightly beaten
1/4 cup dry bread crumbs
3/4 teaspoon salt
1/2 teaspoon dill weed
Pepper to taste
20 sheets phyllo dough (14-inch x 9-inch sheet size)

Steps:

  • In a large skillet, saute onion in 2 tablespoons butter until tender. Remove from the heat. Stir in the spinach, feta cheese, cottage cheese, eggs, bread crumbs, salt, dill and pepper., Melt remaining butter. Layer and brush five phyllo sheets with melted butter. (Keep remaining phyllo dough covered with a damp towel to prevent it from drying out.) Cut buttered sheets lengthwise into 2-in. strips. Place 1 heaping tablespoon of filling at one end of each strip; fold into a triangle, as you would fold a flag.Place on an ungreased baking sheet. Brush with butter. Repeat three times, using five sheets of phyllo each time. , Bake at 400° for 15-20 minutes or until golden brown. Serve warm.

2 tubes (8 ounces each) refrigerated crescent rolls
4 salmon fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup garlic-herb spreadable cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

Steps:

  • Unroll crescent dough and separate into 4 rectangles; seal perforations. Place a salmon fillet in the center of each rectangle; sprinkle with salt and pepper. Spoon spreadable cheese over each; top with spinach. Fold dough over filling and pinch edges to seal., Place on an ungreased baking sheet. Bake at 400° for 20-25 minutes or until golden brown.

2 large eggs
1 package (10 ounces) frozen chopped spinach, thawed and drained well
1 tablespoon bread crumbs
2 ounces feta cheese, lightly crumbled
2 scallions, thinly sliced (about 2 tablespoons)
1/2 teaspoon dried dill
Coarse salt and ground pepper
4 phyllo sheets, thawed
2 to 3 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees. In a mixing bowl, whisk eggs until frothy. Squeeze out excess water from spinach, and add spinach to eggs. Fold in breadcrumbs, feta, scallions, dill, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Set aside.
  • Lay 1 phyllo sheet on a clean work surface. Brush phyllo lightly with oil, and lay another sheet on top. Repeat layering phyllo sheets until all are used. Cut the stacked sheets into four squares.
  • Gently press phyllo squares into the four outer cups of a nonstick cupcake pan, being careful not to tear bottom. Spoon 1/4 of the spinach mixture into each lined cup. Gather excess dough at top of each filled cup, and twist to seal.
  • Bake bundles in oven until golden brown, about 20 minutes. Serve warm or at room temperature.

6 1/2 oz allouez garlic & herb cheese spread
1/2 c fresh spinach - finely chopped
1/4 tsp fresh ground pepper
1 pkg 17.5 oz frozen puff pastry - thawed
1 can(s) tiny shrimp - cleaned, rinsed, crumbled

Steps:

  • 1. Preheat oven to 400 degrees (very important or puff pastry will be doughy.)
  • 2. Combine cheese, spinach, pepper, shrimp in small bowl, mix well.
  • 3. Roll out one sheet of thawed puff pastry on floured surface into 12" square. Cut square into sixteen 3-inch squares.
  • 4. Place about 1 tsp cheese-shrimp mix in center of each square.
  • 5. Brush edges w/water. Bring edges up over filling and seal edges together.
  • 6. Place bundles 2" apart on a baking sheet. Bake 13 minutes or until golden brown.
  • 7. Repeat w/remaining pastry and cheese/shrimp mixture.

4 (6 ounce) salmon fillets
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup cheese spread (garlic herb, such as boursin)
10 ounces frozen chopped spinach, thawed and squeezed dry

Steps:

  • Unroll crescent dough and separate into four rectangles; seal perforations.
  • Place a salmon fillet in the center of each rectangle; sprinkle with salt and pepper.
  • Spoon cheese spread over each; top with spinach. Fold dough over filling and pinch edges to seal.

1 (6 1/2 ounce) container garlic & herb spreadable cheese
1/2 cup chopped fresh spinach
1/4 teaspoon pepper
1 (17 1/4 ounce) package frozen puff pastry, thawed
2 cups honey mustard sauce or 2 cups sweet and sour sauce (dipping sauce of your choice)

Steps:

  • Preheat oven to 400 degrees.
  • Mix spreadable cheese, spinach and pepper in a small bowl.
  • Roll out one sheet of pastry dough onto a floured surface, rolling into a 12 inch square.
  • Cut pastry into 16 (3 inch) squares.
  • Place about 1 teaspoons of cheese mixture in the center of each square.
  • Brush edges each square with water.
  • Bring edges together up over filling and twist tightly to seal.
  • Fan out corners of pastry for a nice look.
  • Place bundles about 2 inches apart on a baking sheet.
  • Bake approximately 13 minutes or until golden brown.
  • Repeat procedure with the remaining sheet of pastry dough and cheese mixture.
  • Serve warm with dipping sauces.

1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breasts (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 round buttery crackers, crushed (about 1/2 cup)

Steps:

  • Heat oven to 375ºF.
  • Mix cream cheese, spinach, mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
  • Beat egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • Bake 30 min. or until chicken is done (165ºF). Remove and discard toothpicks.
