SPINACH, ASPARAGUS, AND STRAWBERRY SALAD



Spinach, Asparagus, and Strawberry Salad image

This unusual combination came about as Trisha Kruse was searching for a way to use two of spring's freshest ingredients. To toast walnuts, place in a baking pan and bake in a 350° oven until golden, about 10 minutes.

Yield Makes 6 to 8 servings

Number Of Ingredients 8

3 tablespoons olive oil
1 pound asparagus, rinsed, ends trimmed, and cut into 1-inch pieces
About 1/4 teaspoon salt
2 tablespoons raspberry or balsamic vinegar
8 ounces spinach leaves, rinsed
8 ounces strawberries, rinsed, hulled, and sliced
1/2 cup chopped toasted walnuts (see note above)
Pepper

Steps:

  • Pour 1 tablespoon olive oil into a 12- by 15-inch baking pan; add asparagus, sprinkle with 1/4 teaspoon salt, and mix to coat. Spread in a single layer and bake in a 400° oven, stirring often, until tender when pierced, 15 to 20 minutes. Let cool, about 15 minutes.
  • Meanwhile, in a large bowl, mix vinegar and remaining 2 tablespoons oil. Add spinach, strawberries, toasted walnuts, and cooled asparagus; mix to coat. Add more salt and pepper to taste.

2 cups fresh asparagus, trimmed and cut into 1-inch pieces
2 cups fresh spinach
2 cups fresh strawberries, sliced
1/2 small red onion, thinly sliced
1/2 cup pecans, chopped & toasted (can be candied if preferred)
2 tablespoons balsamic vinegar
1/2 tablespoon lemon juice (lime juice can be substituted if preferred)
1 tablespoon honey

Steps:

  • Blanch asparagus & cool.
  • Toss the spinach, asparagus, onion, pecans and strawberries together in a bowl.
  • In a small bowl, combine the dressing ingredients and mix well.
  • Pour dressing over salad and toss.
  • Chill before serving.

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar
¼ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Steps:

  • In a large bowl, toss together the spinach and strawberries.
  • In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

1-1/2 pounds fresh asparagus, trimmed and cut into 1-inch pieces
2 tablespoons plus 1/2 cup olive oil, divided
1/4 teaspoon salt
1-1/2 pounds uncooked penne pasta
3/4 cup chopped green onions
6 tablespoons white wine vinegar
2 tablespoons reduced-sodium soy sauce
1 package (6 ounces) fresh baby spinach
1 cup coarsely chopped cashews
1/2 cup shredded Parmesan cheese

1/4 cup crumbled goat cheese
1/4 cup slivered almonds
