Number Of Ingredients 10

2 cups torn spinach leaves
4 large fresh mushrooms, sliced
2 teaspoons grated onion
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1/2 cup vegetable oil
1/4 teaspoon lemon juice
6 bacon strips, cooked and crumbled

Steps:

  • In a large salad bowl, combine spinach and mushrooms; set aside. For dressing, combine onion, salt, pepper and mustard in a bowl. Whisk in vinegar until well combined. Gradually whisk in oil, beating until thick. Stir in lemon juice., Pour dressing over spinach and toss well to coat. Sprinkle bacon over spinach and toss. Serve immediately.

Citrus Vinaigrette
1/2 cup extra-virgin olive oil
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1 teaspoon fresh thyme leaves, chopped
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Spinach Salad
1 (10-ounce) bag of spinach (about 6 cups)
2 oranges, cut into segments (see Note)
1/2 cup sliced almonds, toasted (see page 168)
1/2 red onion, thinly sliced
Salt and freshly ground black pepper
Parmesan Frico (page 229)

Steps:

  • Combine all the ingredients for the Citrus Vinaigrette in a jar or a tight-sealing plastic container. Shake to blend.
  • Combine the spinach, orange segments, almonds, red onion, salt, and pepper in a large bowl. Toss with the Citrus Vinaigrette. Serve on individual plates, topped with 1 or 2 Parmesan Frico.
  • Note
  • To cut orange segments, first use a small sharp knife to cut off the top and bottom of the orange. Stand the orange on one of the cut ends and make long, straight cuts to slice away all of the peel and white pith. Hold the peeled orange in your palm and cut on each side of the membranes to free the segments.

1/4 cup lime juice
1/4 cup fresh orange juice
1 1/2 teaspoons honey
1/4 cup orange zest
1/8 cup sugar
Salt
Pinch white pepper
1 cup plus 2 tablespoons light extra-virgin olive oil
1 pound mixed greens

Steps:

  • Place lime juice, orange juice, honey, orange zest, and sugar in a large bowl. With a whisk in 1 hand and the oil in another, slowly begin to add the oil until it's all gone. Season with salt and white pepper, to taste. The finished product should look like it has significant body, taste semi-sweet and with a touch of tartness. Toss desired amount with mixed greens, and serve.

  • Soak 1/4 thinly sliced red onion in cold water, about 10 minutes. Whisk 1/4 cup orange juice, the juice of 1 lime, 1 tablespoon honey, 2 teaspoons dijon mustard, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in 3 tablespoons olive oil. Drain the onion; toss with 2 bunches watercress, 2 sliced avocados, 2 segmented oranges and the dressing. Top with chopped toasted hazelnuts.

6 slices prosciutto
2 oranges, zested
2 small oranges, juiced or 1 large orange, juiced
2 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic, peeled
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
10 to 12 ounces pre-washed spinach

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the prosciutto slices on a baking sheet and bake until just crisp, about 10 minutes. Let cool. Crumble the prosciutto slices into a container and store in the refrigerator.
  • In a blender, combine the orange zest, orange juice, balsamic vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, add the olive oil in a steady stream until combined. Transfer to a container and store in the refrigerator.
  • To serve, put the spinach in a large bowl. Toss with enough of the vinaigrette to coat the spinach. Sprinkle with the crisp prosciutto crumbles, toss again, and serve.

¼ pound slab bacon
1 tablespoon curry powder
3 tablespoons red wine vinegar
1 tablespoon prepared Dijon-style mustard
9 tablespoons vegetable oil

12 cups flat leaf spinach - rinsed, dried and stems removed
12 fresh mushrooms, sliced

Steps:

  • Trim the rind from the bacon and cut into 1 inch cubes. Place bacon in a large, deep skillet. Cook over medium high heat until brown and crispy. Cover and reduce heat to lowest setting to keep bacon warm.
  • In a small, dry skillet, toast curry powder over medium heat, stirring often, until fragrant, about 30 seconds. Remove from heat.
  • In a medium bowl, whisk together the vinegar and mustard. Add oil in a thin stream, whisking constantly, until the oil is completely incorporated. Add curry powder and whisk until smooth. Season to taste with salt and pepper.
  • In a large bowl, toss together the bacon, spinach, mushrooms and vinaigrette until evenly coated. Adjust salt and pepper to taste and serve immediately.

7 -8 ounces of fresh Baby Spinach
1 cup loosely packed chiffonade fresh basil
1 medium avocado
6 medium fresh shiitake mushrooms
1 medium plum tomato
1/3 cup feta cheese
2 eggs
fresh ground black pepper
1 lime
1/8 cup red wine vinegar
1/8 cup rice vinegar
1/4 cup extra virgin olive oil
1 teaspoon black pepper
1/4 teaspoon kosher salt
1/2 teaspoon ground coriander
2 garlic cloves, crushed and finely minced

Steps:

  • Hard boil eggs, peel and set aside.
  • Wash spinach, removing tough ends, and tear into bite size pieces and place in large salad bowl.
  • Add chiffonade of basil to spinach.
  • Wash the mushrooms and slice thin, add to salad bowl.
  • Wash tomato, dice; adding to salad bowl.
  • Peel, pit and slice avocado, lengthwise, place in salad bowl along with feta cheese.
  • Remove about 1 teaspoon of lime zest, cut lime in half and juice.
  • In a blender jar, combine the lime zest and juice with remaining ingredients for the vinaigrette, pulse until thoroughly blended, pour over salad ingredients tossing to coat.
  • Divide salad mixture into 4 equal portions and place on chilled salad plates.
  • Thinly slice egg and garnish each salad with egg slices.
  • Add a few grinds of fresh black pepper and serve.

12 ounces fresh spinach
2 ounces fresh watercress
2 medium oranges
1 teaspoon orange zest (or more)
3 tablespoons extra virgin olive oil
2 tablespoons raspberry vinegar
1 teaspoon Dijon mustard
1 teaspoon granulated sugar
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Wash spinach and watercress and remove tough stems and discard.
  • Add spinach and watercress to a bowl and add 2 trays of ice cubes.
  • Place in refrigerator to chill for about 1/2 hour.
  • When chilled, discard ice cubes, drain.
  • Tear spinach into smaller bite size pieces.
  • Add spinach and watercress to a large bowl.
  • Finely grate zest from one orange.
  • Remove skins from both oranges and discard.
  • Slice oranges thinly across the grain and cut in half.
  • Remove and discard any seeds.
  • In a mixing bowl, whisk together olive oil, raspberry vinegar, Dijon mustard, sugar, salt and black pepper until incorporated.
  • Pour dressing mixture over spinach and watercress; toss well to coat.
