1-1/2 pounds ground round
3/4 cup soft bread crumbs
1/4 cup egg substitute
1 teaspoon salt
1/8 teaspoon pepper
FILLING:
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1/2 cup shredded part-skim mozzarella cheese
3 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
1/8 teaspoon garlic powder
TOPPING:
3 tablespoons ketchup
1/4 cup shredded low-fat mozzarella cheese

Steps:

  • In a large bowl, lightly combine meat loaf ingredients. On a waxed paper, pat into a 14x10-in. rectangle. , In a small bowl, combine filling ingredients. Spread over rectangle, leaving 3/4 in. around edges. Starting with a short end, roll up jelly-roll fashion. Press meat mixture over filling at both ends to seal. Place loaf, seam side down, on a rack in a roasting pan. , Bake, uncovered, at 350° for 1 hour. Spread with ketchup; bake for 15 minutes longer. Sprinkle with cheese; let stand a few minutes. Cut into 1-in. thick slices.

1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix)
Salt and pepper
1/2 cup Italian bread crumbs
1 egg
2 cloves garlic, minced
1/4 small white onion, grated
2 tablespoons golden or dark raisins, chopped
3 tablespoons pine nuts, chopped
3 tablespoons grated cheese, Parmigiano or Romano
2 tablespoons chopped flat-leaf parsley
1 cup arugula leaves or baby spinach
6 slices prosciutto di Parma
6 slices deli sliced provolone
Extra-virgin olive oil, for drizzling
1/2 pound cavatappi (corkscrew shaped hollow pasta) or rigatoni
1 pound broccolini, trimmed into florets
2 tablespoons butter
1 cup ricotta cheese
2 teaspoons lemon zest
2 tablespoons chopped fresh thyme leaves
12 grape or small vine tomatoes, halved

Steps:

  • Preheat oven to 450 degrees F.
  • Put water on to boil for your pasta.
  • Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.
  • Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven.
  • Salt water and cook off pasta, about 7 to 8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot.
  • While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve.
  • To hot, cooked pasta add a drizzle of extra-virgin olive oil, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.

SPINACH RICOTTA GRILLED CHEESE

1 tablespoon extra-virgin olive oil
5 ounces baby spinach
Kosher salt and freshly ground black pepper
1/2 cup ricotta
1 cup grated mozzarella
1/2 cup freshly grated Parmigiano-Reggiano
8 slices Easy Milk Bread, or any sturdy bread, sliced 1/3- inch-thick
4 tablespoons unsalted butter, at room temperature

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil, spinach and scant 1/2 teaspoon salt. Saute until the spinach has completely wilted. Transfer the spinach to a strainer set over a bowl. Cool to room temperature. When the spinach is cool enough to handle, squeeze out as much liquid as possible.
  • Roughly chop the spinach and add it to a medium bowl. Add the ricotta, mozzarella, Parmigiano-Reggiano, 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir to combine and set aside.
  • Lay the sliced bread on a clean work surface. Coat the top of each slice with butter. Heat a large skillet over medium heat. Lay 4 of the slices in the skillet, butter-side down. Scoop about 1/3 cup of the ricotta mixture onto each slice. Spread the mixture evenly to cover the whole slice, then top with the other slices of bread, butter-side up. Cook until the first side is golden and toasted, 2 to 3 minutes. Carefully flip the sandwiches and cook until the bread is toasted and the cheese is melty, an additional 2 to 3 minutes.
  • Transfer the sandwiches to a clean work surface and let them cool for 1 minute before slicing.

ROLLED BROCCOLI MEATLOAF

This is the best meatloaf ever! It's cheesy and warm and very tasty. My mom used to make this and we loved it!

Number Of Ingredients 6

1 1/2 lbs lean ground beef
1 egg
1 (1 1/4 ounce) package Lipton Onion Soup Mix
1/4 cup A.1. Original Sauce
1 -2 broccoli florets (depends how much you like) or 1 -2 frozen broccoli, but you must defrost first
8 ounces grated cheddar cheese

Steps:

  • Preheat oven to 350°F.
  • Cook, steam broccoli, crumble up and set aside to cool.
  • In a large mixing bowl combine ground beef, egg, soup mix and A1 sauce.
  • On a large flat surface (bread board etc.) place the foil.
  • Spread meatloaf mixture into a rectangle, about 1/2 inch thick.
  • You want it as thin as possible because you are going to roll it like a jelly roll sprinkle broccoli then cheese over surface of meat.
  • Roll up, starting at the small end of the loaf roll.
  • It helps to roll with the foil under, it kinda holds it together as you roll.
  • Pinch/close the small ends of the loaf.
  • Bake about 1 hour.
  • I like to pour more A1 over the top and right before pulling it out of the oven sprinkle a little more cheese on top.

This is a nice light pasta - the sauce isn't heavy (or, really, very saucy at all) and the ricotta makes it just a touch creamy. It's also quite healthy. This is one of those recipes that can be made quickly with what you have in the kitchen! 1/2 lb whole wheat farfalle pasta or 1/2 lb other pastas
1 tablespoon olive oil
1 lb chicken breast, cut into bite sized pieces
1 1/2 onions, diced
4 garlic cloves, minced
1/2 lb cremini mushrooms or 1/2 lb button mushroom, sliced
1/4 cup white wine or 1/4 cup chicken broth
28 ounces diced tomatoes (partially drained but some liquid reserved)
2 teaspoons dried parsley
1 teaspoon dried oregano
1 1/2 teaspoons dried basil
2 pinches red pepper flakes
1 (3 ounce) package Baby Spinach or 1 (3 ounce) package frozen spinach, thawed & drained
1/2 cup low-fat ricotta cheese

Steps:

  • Bring a large pot of water to a boil.
  • Add salt, and then add the farfalle.
  • Cook until al dente.
  • Meanwhile, heat a large, heavy-bottomed pan over medium heat and add the oil.
  • Sprinkle the chicken with salt and pepper and, once the oil is hot, add the chicken to the pan; brown on all sides, and then add the onions and cook for a minute or two.
  • Stir in the mushrooms, garlic, and some salt and pepper.
  • Sauté until all vegetables are tender.
  • Increase the heat to medium high and add the vermouth.
  • Cook until almost all the liquid has evaporated, and then stir in the diced tomatoes (and a few tablespoons of juice), red pepper flakes, parsley, oregano, basil, and salt & pepper to taste.
  • Bring to a simmer and then reduce heat to medium-low, simmering until the flavors have developed (and chicken has cooked through).
  • Add the spinach and cook until wilted down, about 2-3 minutes.
  • Season to taste.
  • Add the pasta to the sauce and stir to coat.
  • Off the heat, stir in the ricotta cheese.

Not much harder to make than plain meatloaf, this dressed-up version is nice enough for company.

1 1/4 lb extra-lean (at least 90%) ground beef
3/4 lb bulk Italian sausage
1 egg
1 can (8 oz) pizza sauce
1/4 cup Progresso™ Italian style bread crumbs
1/4 teaspoon pepper
2 cups shredded 6 cheese Italian cheese blend (8 oz)
2 cups loosely packed fresh spinach leaves

Steps:

  • Heat oven to 350°F. In large bowl, mix ground beef, sausage, egg, 1/2 cup of the pizza sauce, the bread crumbs and pepper.
  • On foil, pat mixture to12x8-inch rectangle. Sprinkle evenly with cheese; gently press into meat. Top with spinach. Starting at short end, roll up tightly, using foil to start roll and tucking in spinach leaves; seal ends. Place seam side down in ungreased 12x8-inch (2 quart) glass baking dish.
  • Bake 1 hour. Spread remaining pizza sauce over top. Bake 15 minutes longer or until thermometer inserted in meatloaf reads 160°F. Let stand 5 to 10 minutes before serving.
