Nice way to serve spinach and so good for you! The secret is not to overcook the spinach. I like to add a few roasted pine nuts or pumkin seeds with a nice jolt of Marsala wine. I love to serve this recipe with recipe#399309. Just spoon the sauce over the spinach when it is on the plate MMMmm

3 tablespoons lite olive oil
1 large red onion, thinly sliced
1 lb fresh spinach leaves, cleaned and stems removed
1 tablespoon fresh lemon juice
salt and pepper

Steps:

  • Heat oil in a skillet.
  • When it is hot but not smoking add onions.
  • Saute, stirring constantly, until the onion is carmelized, about 15 min let some of the onion get quite dark and crisp.
  • Add spinach, but only for a minute or two, stir until just wilted.
  • Add lemon juice and salt& pepper.
  • Serve.

SAUTEED SPINACH WITH BACON AND ONIONS



Sauteed Spinach with Bacon and Onions image

1 tablespoon bacon grease
1/2 yellow onion, finely diced
3 cloves garlic, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper flakes (for a little spice because Trisha likes it)
Salt and ground black pepper

12 ounces baby spinach

Steps:

  • In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

A mash potato with spinach. A colourful side dish or serve as a bed to meats, casseroles or a stew. Serves 4

1 kg potato (just over 2 lbs)
25 g butter
1 garlic clove, crushed
150 g baby spinach leaves
300 ml cream, warmed

Steps:

  • Chop and boil the potatoes until tender. Drain. Mash the potato until smooth.
  • Melt the butter in a frying pan. Add the garlic and baby spinach leaves and stir until the spinach has wilted. Use a gentle heat.
  • Blend or process the spinach mix with half of the cream. Use a stick blender or food processor. Blend until pureed.
  • Mix the mashed potato, spinach mix and the remaining cream.

This recipe came together from some leftover ingredients. I've made omelettes with various veggie ingredients, but the addition of leftover mashed potatoes as a base turned this breakfast dish into a main course meal.

1 teaspoon coconut oil
1 medium Spanish sweet onion, chopped
2 cups fresh spinach
2 large eggs, beaten
1 ounce shredded mozzarella cheese
1 cup leftover mashed potatoes
1 tablespoon salsa
salt and ground black pepper to taste

Steps:

  • Heat oil in a pan over medium-high heat. Saute onion in the hot oil until softened, about 5 minutes. Add spinach and beaten eggs and mix together to coat. Add cheese and cover the pan with a lid.
  • Lower heat and steam until eggs are set, about 5 minutes.
  • Meanwhile, microwave leftover mashed potatoes until heated through, about 1 to 2 minutes.
  • Lay out cooked omelette over potatoes and top with salsa. Add salt and pepper to taste.

7 large potatoes, peeled and cubed
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup sour cream
¼ cup butter
2 tablespoons chopped green onions
2 teaspoons salt
¼ teaspoon black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
  • In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.
  • Bake for 15 minutes. Top with cheese and bake 5 minutes longer.
