ITALIAN BAGEL CAPRESE



Italian Bagel Caprese image

4 bagels, assorted flavors
1 package Stracchino or Crescenza cheese (or substitute another very soft cow's milk cheese)
2 ripe tomatoes, sliced
1/2 red onion, sliced, optional
12 fresh basil leaves
Sea salt, for topping

Steps:

  • Slice the bagels in half horizontally and slather the bottom cut sides with the Stracchino cheese. Top with the sliced tomatoes, onions if using, basil leaves and sea salt. Top with the bagel lids and serve.

2 teaspoons olive oil
1 cup finely chopped onion
1 tablespoon garlic, minced
1 cup canned crushed tomatoes with added puree
1 teaspoon fresh lemon juice
1/4 cup coarsely chopped drained oil-packed sun-dried tomatoes
1/4 cup pitted green olives
1/4 cup fresh basil leaves
4 large drained canned artichoke hearts
2 tablespoons chopped fresh parsley
2 tablespoons toasted pine nuts

Steps:

  • Heat oil in medium nonstick skillet over medium heat. Add onion and saute until just beginning to soften. Add garlic and cook for 1 minute. Stir in tomatoes and lemon juice. Bring to simmer, remove from heat. Combine sun-dried tomatoes and next 5 ingredients in processor. Process until vegetables are finely chopped. Transfer to medium bowl, stir in tomato mixture. Season with salt and pepper. Serve with vegetables.

2 tablespoons olive oil
3 Fresno chilies, stemmed, seeded and diced small
3 cloves garlic, minced
2 jalapeno peppers, stemmed, seeded and diced small
2 orange bell peppers, stemmed, seeded and diced small
1 small yellow onion, diced small
3/4 cup apple cider vinegar
1/2 cup honey
1 tablespoon mustard seeds
3 tablespoons salted butter
One 14-ounce smoked sausage, cut into fourths and split open
8 slices provolone
1/2 cup mayonnaise
4 hoagie buns, toasted
Green leaf lettuce, for topping

Steps:

  • For the pepper relish: Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the Fresno chiles, garlic, jalapenos, bell peppers and onion and sauté for to 4 minutes to soften. Add the vinegar, honey and mustard seeds. Bring to a boil and cook, stirring occasionally, until thickened, about 10 minutes.
  • For the sandwiches: While the relish cooks, grease a griddle with the butter and place it over medium-high heat. When the griddle is hot, add the sausage pieces cut-side down and cook until well browned and crisp, about 3 minutes. Flip and place 2 pieces of provolone onto each sausage piece. Cook until the cheese has melted completely, another 2 to 3 minutes. Remove to a plate.
  • Build the sandwiches by spreading the mayonnaise on the bottoms of each bun and laying on a piece of lettuce. Top each with a cheese-covered sausage piece and a generous portion of the pepper relish. Replace the top half of the buns and serve.

1 pound Italian sausages, in casings
1 baguette, sliced into 1-inch pieces
10 to 12 woody rosemary branches (about 10 inches long)
Olive oil, as needed

Steps:

  • Preheat an outdoor grill to medium heat.
  • Bring a pot of water to a simmer. Gently poach the sausages for 8 minutes. Remove the sausages from the water and allow to cool.
  • Alternately skewer the bread and the sausage onto the rosemary branches.
  • Grill skewers until bread is toasted and sausage is browned, about 7 to 10 minutes, brushing with olive oil if necessary. Serve immediately while warm or at room temperature.
