2 cups cubed cooked turkey breast
1 medium sweet onion, chopped
3/4 cup chopped celery
1/2 cup fat-free plain yogurt
1/4 cup reduced-fat mayonnaise
1/2 teaspoon garlic salt
1/2 teaspoon curry powder
2 medium tomatoes, thinly sliced
1 cup torn leaf lettuce
4 spinach flour tortillas (8 inches), room temperature

Steps:

  • In a large bowl, combine the turkey, onion and celery. In another bowl, whisk together the yogurt, mayonnaise, garlic salt and curry. Pour over turkey mixture: toss to coat. Layer tomatoes and lettuce on tortillas. Top with turkey mixture; roll up and secure with toothpicks.

1/2 pound lean ground turkey
1/2 cup chopped peeled jicama or celery
1/4 cup chopped onion
2 tablespoons reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot
1 garlic clove, minced
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
1/4 cup julienned carrot
6 Bibb lettuce leaves
Hot mustard, optional

These lettuce cups filled with spicy ground pork take inspiration from Larb. Found in several Southeast Asian countries, Larb usually features seasoned ground meat served with sticky rice or lettuce cups, topped with fresh vegetables and herbs. Toasted rice powder is typically mixed into the seasoning for some crunch and to help thicken the dressing. Katie opts for ground peanuts instead to achieve a similar texture and nutty flavor. These can also be made with ground chicken, duck, turkey, or crumbled tofu in place of the ground pork. Fresh and flavorful, these lettuce cups are super easy to make at home any night of the week.

2 tablespoons soy sauce
1 teaspoon grated fresh ginger (from about 1/2-inch piece)
1 teaspoon sesame oil
1 medium carrot, grated or julienned
1 bunch scallions, thinly sliced
Juice of 1 lime
1 tablespoon vegetable oil
1 pound ground pork
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
4 cloves garlic, minced
One 1 1/2-inch piece ginger, peeled and finely grated (about 1 tablespoon)
1 shallot, minced
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 head Bibb, butter or iceberg lettuce, separated into leaves
Fresh cilantro leaves, for serving
Fresh mint leaves, for serving
1/2 cup roasted salted peanuts, chopped
Sriracha, for serving

Steps:

  • For the scallion and carrot relish: Toss the soy sauce, ginger, sesame oil, carrots, scallions and lime juice in a medium bowl. Set aside in the refrigerator until ready to serve.
  • For the pork: Heat a medium skillet over medium-high heat. Add the vegetable oil, and once hot, the pork. Cook the pork, breaking it up with the back of your spoon until it browns and is no longer pink, 5 to 6 minutes. Stir in the red pepper flakes, salt, garlic, ginger and shallots. Cook until they are aromatic and incorporated, another minute. Add the hoisin and stir to combine, then add the soy sauce. Cook until the pork is sticky and glazed, about 3 minutes. Transfer the pork to a serving bowl.
  • Serve the pork with the lettuce leaves, some scallion and carrot relish, cilantro leaves, mint leaves, peanuts and sriracha, letting everyone build their own wraps with all the fixings.

1 cooked piece (4 ounces) turkey breast
2 tablespoons light mayonnaise
1 tablespoon honey mustard
1/2 teaspoon white-wine vinegar
Ground black pepper
1 cup (1 ounce) arugula, or baby spinach
1 carrot, (4 ounces) finely grated (2/3 cup)
1 (12 inch) flavored flour tortilla, such as red pepper

Steps:

  • Coarsely chop the turkey and place in a medium bowl. Stir in the mayonnaise, mustard, and vinegar until combined. Season to taste with pepper.
  • Arrange arugula and carrot in the center of the tortilla. Spoon turkey salad down the center. Fold one end of tortilla up over a little of the filling. Fold the sides over to enclose the filling, and then roll up to close. Cut sandwich in half crosswise, wrap each half separately in waxed paper, and refrigerate overnight.

1 soft flour tortilla
1 (8 ounce) container cream cheese
3 slices of deli thin-sliced monterey jack pepper cheese
2 slices of deli thin-sliced smoked turkey
salsa, for dipping

Steps:

  • Lie flour tortilla flat and apply a thin layer of cream cheese.
  • Place 2 slices of turkey in a layer on top of the cream cheese.
  • Apply another thin layer of cream cheese on top of the turkey.
  • Place 3 slices of pepperjack cheese in a layer on top of the cream cheese.
  • Apply a final thin layer of cream cheese on top of the cheese slices.
  • Roll tortilla up tightly into a long wrap.
  • Cover tortilla wrap in saran wrap and refrigerate for at least 30 minutes in order to allow contents to stick together.
  • After refrigeration, slice long wrap into small slices width-wise.
  • Dip sliced wraps in salsa as desired.
  • For multiple servings, I recommend a package of tortillas and 1/2 a pound each of the turkey and cheese. This would make about 4 wraps for slicing and placing on a party tray. More may be required for larger parties.
