SPICY MACARONI AND CHEESE



Spicy Macaroni and Cheese image

2 cups elbow pasta, cooked until almost al dente
8 ounces Cheddar, 1/2 cubed, 1/2 shredded
8 ounces Colby cheese, cubed
8 ounces Monterey pepper jack cheese, cubed
2 teaspoons all-purpose flour
1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/8 teaspoon freshly ground nutmeg
4 tablespoons sour cream
1 large egg, beaten
1 cup heavy cream
1 cup half-and-half
1/4 cup finely grated onions
4 slices bread
1 tablespoon butter
Special equipment: 2-quart baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.
  • In a large bowl, mix together the flour, salt, black pepper, cayenne pepper, dry mustard, nutmeg. Add the sour cream, egg, heavy cream, half-and-half and onions. Pour over the pasta and cover with the shredded Cheddar. Bake uncovered until the top is just beginning to brown, about 35 minutes.
  • Meanwhile, cut the bread into crouton-size squares. In a skillet over medium heat, melt the butter, add the bread cubes and toast until golden. Sprinkle the bread cubes on top of the macaroni and cheese and bake until golden brown, about 10 minutes more.

1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Spicy Jalapeño Cream Cheese Spread
3 Tbsp. milk
1 tomato, seeded, chopped
6 slices OSCAR MAYER Bacon, cooked, crumbled
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook macaroni in large saucepan as directed on package, omitting salt. Return to pan.
  • Add cheese spread and milk; cook and stir until cheese is completely melted and mixture is well blended. Stir in tomatoes and bacon; cook and stir until heated through.
  • Top with Parmesan.

8 ounces uncooked spaghetti
1/2 pound thick-sliced bacon strips, chopped
2 cups cherry tomatoes, halved
3 cups fresh baby spinach
1/4 cup balsamic vinaigrette
1/2 teaspoon salt
1/4 teaspoon pepper
Grated Parmesan cheese

Steps:

  • Cook spaghetti according to package directions., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute tomatoes in drippings until tender. Drain spaghetti; stir into skillet. Add the spinach, bacon, vinaigrette, salt and pepper; heat through. Sprinkle with cheese.

This is great. This pasta recipe has a nice spicy cheese sauce and is easy to throw together. The spiciness of the dish can be easy altered to suit ones preferences. I did use the "mild" can of Rotel tomatoes with the regular Mexican cheese and it was just right for me.

1/4 cup butter or 1/4 cup margarine
1/2 medium sweet onion, chopped
1 (8 ounce) package Velveeta Mexican cheese, cubed
1 (8 ounce) container sour cream
1 (10 ounce) can Rotel Tomatoes, drained

Steps:

  • Cook pasta according to package directions, draining well.
  • Melt butter in a large skillet over medium heat; add onion and sauté 3 to 5 minutes or until tender.
  • Add cheese and cook, stirring constantly, 5 minutes or until cheese melts.
  • Stir in sour cream, blending well.
  • Stir in Rotel tomatoes and pasta; cook and stir constantly, 5 minutes or until heated through.

300g macaroni , or other small pasta shapes
25g sundried tomato in oil, drained and roughly chopped
2 tbsp crème fraîche
1 tbsp tomato purée
1 tbsp parmesan , grated

Steps:

  • Boil the pasta. Meanwhile, in a small food processor, blitz together the tomatoes, crème fraîche and tomato purée into a sauce. (If you don't have a small processor, finely chop the tomatoes, then mix everything together.)
  • Drain the pasta, saving a little of the cooking water, then return to the pan with the tomato sauce and half the cheese. Mix together until all the pasta is coated, then serve as a side dish, sprinkled with the remaining cheese.
