Delicious chicken sweet and spicy chicken bites wrapped in bacon are sure to be a hit!

Number Of Ingredients 8

3 chicken breasts (cut into 1 inch pieces)
6-8 slices of bacon
3/4 cup brown sugar
1 tablespoon chili powder
1 teaspoon paprika
1/2 teaspoon garlic powder
salt and pepper
optional garnish: sliced green onions.

Steps:

  • Preheat oven to 350 degrees. Prepare a baking sheet by lining it with aluminum foil and spraying with cooking spray. Cut bacon in halves to thirds depending on how thick your chicken is. Wrap each piece of chicken in the bacon.
  • In a small bowl add the chili powder, paprika, and garlic powder. In another small bowl add the brown sugar. Roll the bacon wrapped chicken first in the spices and then in the brown sugar. Place on prepared baking sheet.
  • Sprinkle with salt and pepper and remaining brown sugar (if any) and bake for 35-40 minutes until the bacon is crisp.

1 pound slab bacon, cut into 1-by-1/2-inch pieces
1/4 cup pure maple syrup
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
  • Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
  • Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

4 chicken breasts, boneless and skinless, cut in thirds (12 pieces)
bacon slices, partially cooked but not crisp
salt and pepper, to taste
garlic powder, to taste
chili powder, to taste
brown sugar

Steps:

  • 1. Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine.
  • 2. Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Do not turn them over half way through if baking in the oven, on the grill, yes. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.
  • 3. **Also great on the grill! No juices to drizzle on anything, but still delicious! (Picture shows grilled version)
  • 4. Some comments from others that might be helpfull: ** I have made these before and found that the bacon created too much grease in the bottom of the pan so I placed a cooling rack in my foil lined pan. I placed the wrapped chicken on the cooling rack which allowed the grease to drip to the bottom of the pan. It made for easy clean up. This is definitely a family favorite in our house!
  • 5. ** So good! I used chicken tenders, made it in the oven with garlic Parmesan rosemary potatoes. ** Made this finally and loved it! The only thing I'll be doing next time is adding cayenne because my husband and I love spicy stuff. ** This is the most delicious thing I have ever eaten! You cannot go out any buy at a restaurant anything even comparable to this! I made it for the first time last week and had it again Friday. The whole family just loves this! ** Just made this and it's a winner! I didn't put enough seasoning on though, but next time I'll know to add a little more. Thanks for sharing a great recipe ** I used applewood smoke rub for mine and is was wonderful!

12 bacon strips, halved
10 ounces boneless skinless chicken breasts, cut into 24 cubes
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup orange marmalade
1/4 cup soy sauce
2 garlic cloves, minced
1 teaspoon grated fresh gingerroot
Sweet-and-sour sauce, optional

Steps:

  • Place bacon on a broiler rack. Broil 4 in. from the heat for 1-2 minutes on each side or until partially cooked; cool. , Wrap a piece of bacon around a chicken cube and water chestnut slice; secure with a toothpick. In a large resealable plastic bag, combine the marmalade, soy sauce, garlic and ginger. Add wrapped chicken; seal and carefully turn to coat. Refrigerate for 2 hours., Drain and discard marinade. Broil chicken for 3-4 minutes on each side or chicken is no longer pink and bacon is crisp. Serve warm with sweet-and-sour sauce if desired.
