15-Minute Shrimp Tacos with Spicy Chipotle Slaw image

This make-your-own-taco bar comes together in 15 minutes or less thanks to some help from the grocery store. Prepared chipotle mayonnaise, pre-cut coleslaw mix and canned beans are time-savers that make it easy to have tacos any day of the week.

1 pound medium (26/30) peeled and deveined shrimp, tails removed
2 teaspoons chili powder
Kosher salt
2 tablespoons canola oil
4 scallions, thinly sliced
One 15-ounce can black beans, drained and rinsed well
1/3 cup prepared chipotle mayonnaise
2 limes, 1 zested and juiced and 1 cut into wedges
One 14-ounce bag store-bought coleslaw mix (about 6 cups)
1 bunch fresh cilantro, leaves and soft stems roughly chopped
Sour cream or Mexican crema, for serving
8 corn tortillas, warmed

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Combine the shrimp, chili powder and a large pinch of salt in a medium bowl and stir to combine. Add the canola oil to the hot skillet and swirl to coat. Add the shrimp and cook until the shrimp is no longer opaque and just cooked through, turning only once, about 2 minutes. Transfer the shrimp to a serving bowl and cover loosely with foil to keep warm.
  • Stir 2 tablespoons of water into the skillet with the dripping, using a wooden spoon or heat-proof spatula to scrape up any browned bits at the bottom of the skillet. Reserve 1 tablespoon scallions for garnish and add the rest to the skillet. Cook until the scallions are slightly softened, stirring frequently, about 1 minute. Add the beans and a large pinch of salt and cook until warmed through, about 1 minute. Turn off the heat and reserve.
  • In a large bowl, stir together the chipotle mayonnaise, lime zest and juice and a large pinch of salt. Add the coleslaw mix and half of the cilantro and stir to combine.
  • Serve the shrimp alongside the beans, coleslaw, remaining cilantro, scallions, sour cream or Mexican crema, lime wedges and warm tortillas.

1 garlic clove, chopped

1 large ripe mango, chopped

1 tablespoon freshly squeezed lime juice

Steps:

  • 1. To make the shrimp tacos: In a large skillet over medium heat, add the olive oil. Add the chopped garlic and cook for about 1 minute. Add the cumin and red pepper flakes, and let the flavors blend together. Add the shrimp and toss. Carefully add the tequila and flambé. Season with salt and add the dried chipotle powder. Once shrimp are cooked, add the chopped cilantro and toss. 2. In a separate nonstick skillet over low heat, heat a whole-wheat tortilla until pliable, about 2 minutes on each side. 3. Plate one tortilla per person and serve three shrimp in each taco. 4. To make the spicy black beans: In a saucepan over medium heat, add the chopped onion and chopped garlic clove. Sweat the onions for about 2 minutes. Add the cumin and the black beans. Stir and add the red pepper flakes. Simmer for about 5 minutes. 5. To make the mango-pineapple salsa: Peel the mango and chop into small dice and place in a bowl. Chop the yellow and red bell peppers and add them to the bowl with the mango. Add the drained pineapple tidbits and chopped red onion and toss together. Squeeze some lime juice over and toss. Add the chopped cilantro, salt to taste, and toss. Refrigerate until ready to serve.

1/4 cup oil
1/4 cup water
1/2 cup chopped green onion
1/2 cup cilantro leaf
2 -3 garlic cloves (less if you're sensitive to garlicky things)
1/2 teaspoon salt
2 limes, juice of
1/2 cup sour cream
1 lb shrimp, peeled and deveined, tails removed
1 teaspoon chili powder, cumin, and southwestern seasoning
1/4 teaspoon cayenne pepper (more or less to taste)
2 -3 cups shredded green cabbage
8 small corn tortillas
1 -2 avocado
1 cup Cotija cheese, and additional cilantro for topping
8 lime wedges, for serving

Steps:

  • Pulse all the sauce ingredients except the sour cream in a food processor. When mostly smooth, add the sour cream and pulse until combined. Taste and adjust as needed. Set aside.
  • Heat a drizzle of oil a large skillet over medium high heat. Pat the shrimp dry with paper towels and sprinkle with the spices. Add the shrimp to the hot pan and saute for 5-8 minutes, flipping occasionally, until the shrimp are cooked through.
  • Toss some of the sauce (not all) with the cabbage until it the cabbage is coated to your liking. It should resemble a coleslaw - you want it to be enough sauce so the cabbage is weighed down a little bit. Use leftover sauce on top of the tacos or in other recipes.
  • To serve tacos, smash a spoonful of avocado on the tortillas, top with a few pieces of shrimp, top with coleslaw, and finish with Cotjia cheese, cilantro, and lime wedges.

1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
Finely grated zest from 2 limes
1 1/2 pounds medium shrimp peeled, deveined and tails removed
1/4 cup extra-virgin olive oil
1/4 cups sour cream or Mexican crema
1/4 head cabbage, cored and shredded ( about 4 cups)
Kosher salt and freshly ground black pepper
12 corn tortillas

Steps:

  • 1. Blend the light brown sugar, chili, cumin, paprika, and lime zest together in a medium bowl. Add all but 2 teaspoons of the spice mixture to a resealable plastic bag. Add the shrimp and the olive oil to the bag. Seal the bag and then turn over a couple times to coat the shrimp evenly. Set aside to marinate for 15 minutes.
  • 2. Meanwhile, combine the sour cream with the reserved spice blend. Stir in the cabbage and season with salt and pepper.
  • 3. Preheat a grill or grill pan to high. Toast the tortillas about 1 minute per side. Transfer to a plate and wrap with foil to keep warm.
  • 4. Remove the shrimp from the marinade and season with salt. Grill the shrimp turning once, until nicely browned and just cooked through, about 2 to 3 minutes per side. Tuck the shrimp into the warm tortillas with the cabbage, cilantro leaves, and squeeze lime juice over top. Serve.

  • Separate the lettuce into cups and reserve.
  • Heat 1 tablespoon of the canola oil in a skillet and saute the corn over medium-high heat until light golden at edges. Season with salt and pepper. 2 teaspoons chili powder, divided
1 teaspoon cumin, ground (divided)

1 lb shrimp, medium (unpeeled)
3 tablespoons orange juice
2 garlic cloves, minced
2 teaspoons olive oil

Steps:

  • Whisk together sour cream, 1 teaspoons chili powder, 1/2 teaspoons cumin, 1/2 teaspoons red pepper flakes, 1/4 teaspoons salt and cinnamon. Add 3/4 cup water, stirring until smooth. Cover and chill until ready to serve.
  • Peel shrimp, and devein. If desired, chop.   • **For the three spices, I used chili powder, cumin, and a store bought southwestern seasoning mix / rub. I would say the chili powder and the cumin are must-haves for the color and flavor, but then just add whatever else you like or have in your spice cabinet from there. If you don't have a seasoning mix that's salted, be sure to add salt and pepper.

JEFF'S RANDOM SPICY CHICKEN AND SHRIMP TACOS

So I was scrounging around my kitchen yesterday trying to see what I could put together for a quick dinner - a little bit of this, little of that and boom - Jeff's spicy chicken tacos were born! This dish turned out great - perfect amount of spice from the cayenne pepper and serranos and a unique flavor from the sauteed limes!

1/2 lb boneless skinless chicken breast (about 2 small breasts)
1/2 lb cooked shrimp (no shells, veins, or tails)
2 tablespoons olive oil
6 -8 flour tortillas
1 medium onion (chopped)
2 serrano peppers (chopped)
2 limes (halved)
1 cup roma tomato (store-bought jar)
1/2 cup rice wine vinegar
2 teaspoons ground cayenne pepper
1 pinch salt
1 pinch pepper

Steps:

  • Remove the stems and seeds from the serrano peppers and finely chop both the onion and the peppers.
  • In a medium-sized skillet, sautee the onion and peppers in the olive oil over medium heat until the onion is almost translucent. Place the lime halves face down in the pan in between the bits of onion and pepper - make sure each half is flat against the bottom of the pan with some oil around it.
  • After 10 minutes, add the roma tomatoes, and salt and pepper to taste. Cover the pan and simmer for 15 minutes.
  • While the mixture is simmering, dice the chicken into 1" cubes. Sprinkle the cayenne pepper powder all over the raw chicken and the shrimp until lightly dusted and set aside.
  • After the onion-pepper-tomato mixture is done simmering, remove the lid and pour the mixture into a temporary container or bowl. Get most of the bits out of the pan, but leave any juices that remain.
  • Add the rice wine vinegar and the raw chicken to the pan and increase heat to medium-high. Cook until the chicken is mostly cooked through (5-7 minutes) and then add the shrimp and the sauce mixture from the temporary bowl. Mix ingredients around until well combined and let them cook for 5 additional minutes.
  • Heat up the tortillas in the microwave for 30 seconds (or on a fresh pan on the range - about 1 minute on high heat per tortilla) and scoop the delicious mixture into each taco.
  • Serve and enjoy!

15-Minute Shrimp Tacos with Spicy Chipotle Slaw image

This make-your-own-taco bar comes together in 15 minutes or less thanks to some help from the grocery store. Prepared chipotle mayonnaise, pre-cut coleslaw mix and canned beans are time-savers that make it easy to have tacos any day of the week.

1 pound medium (26/30) peeled and deveined shrimp, tails removed
2 teaspoons chili powder
Kosher salt
2 tablespoons canola oil
4 scallions, thinly sliced
One 15-ounce can black beans, drained and rinsed well
1/3 cup prepared chipotle mayonnaise
2 limes, 1 zested and juiced and 1 cut into wedges
One 14-ounce bag store-bought coleslaw mix (about 6 cups)
1 bunch fresh cilantro, leaves and soft stems roughly chopped
Sour cream or Mexican crema, for serving
8 corn tortillas, warmed

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Combine the shrimp, chili powder and a large pinch of salt in a medium bowl and stir to combine. Add the canola oil to the hot skillet and swirl to coat. Add the shrimp and cook until the shrimp is no longer opaque and just cooked through, turning only once, about 2 minutes. Transfer the shrimp to a serving bowl and cover loosely with foil to keep warm.
  • Stir 2 tablespoons of water into the skillet with the dripping, using a wooden spoon or heat-proof spatula to scrape up any browned bits at the bottom of the skillet. Reserve 1 tablespoon scallions for garnish and add the rest to the skillet. Cook until the scallions are slightly softened, stirring frequently, about 1 minute. Add the beans and a large pinch of salt and cook until warmed through, about 1 minute. Turn off the heat and reserve.
  • In a large bowl, stir together the chipotle mayonnaise, lime zest and juice and a large pinch of salt. Add the coleslaw mix and half of the cilantro and stir to combine.
  • Serve the shrimp alongside the beans, coleslaw, remaining cilantro, scallions, sour cream or Mexican crema, lime wedges and warm tortillas.

These Shrimp Tacos are easy to make; breaded plump shrimps are tossed in a sweet & spicy sauce and then stuffed into soft flour tortillas along with some lettuce, tomatoes and some drizzled sour cream to top everything off.

Number Of Ingredients 12

1 lb large raw shrimp (thawed)
10 small flour tortillas
2 to matoes (diced)
3 cups shredded lettuce (half of an iceberg lettuce)
1/2 cup flour
1/4 cup cornstarch
1/4 tsp salt
1/3 cup buttermilk
SAUCE FOR SHRIMPS:
1/4 cup mayo
1/4 cup Asian sweet chili sauce
1 tsp Sriracha hot sauce

Steps:

  • Rinse and pat dry thawed shrimp. Remove the tails from the shrimp.
  • In a large ziploc bag combine the flour, cornstarch and salt; set aside.
  • Pour 1/3 cup of buttermilk into a shallow bowl.
  • Dip the shrimp into the buttermilk, then throw into the floured ziploc bag and close; shake to coat shrimp evenly.
  • Heat 1/3 cup of oil in a deep skillet over med-high heat and fry shrimp in batches a few minutes on each side until crispy. Shrimp cook very fast so like a minute on each side. Remove and place on paper towels.
  • Finely dice the tomatoes and then finely shred the lettuce; set aside.
  • To make the sauce combine the mayonnaise, sweet chili sauce and sriracha hot sauce. Stir well to combine.
  • Add the breaded cooked shrimp to the sauce and toss to coat well.
  • To assemble the tacos place the shrimp (about 4) in the center of each small flour tortilla and then top with lettuce, tomatoes and drizzle sour cream over the top, (I used a small ziploc bag for that). Serve.

1 tablespoon Chinese five-spice powder
1 medium orange, zested and juiced
2 tablespoons soy sauce
2 tablespoons vegetable oil
1 tablespoon minced garlic
1 teaspoon crushed red pepper flakes
Kosher salt
1/2 cup sour cream
2 tablespoons fresh lime juice
Tortillas, for serving
Thinly sliced radishes, for serving
Diced avocado, for serving

Steps:

  • In a medium bowl, toss together the shrimp with the Chinese five-spice powder until evenly coated. Add the orange juice, orange zest, soy sauce, vegetable oil, garlic, red pepper flakes, and 1 teaspoon salt and toss to combine. Cover and refrigerate the shrimp for a minimum of 30 minutes and up to 2 hours, if time allows.
  • Heat a large saute pan over medium-high heat. Add the shrimp in batches and cook them in a single layer until they are cooked through, about 1 minute on each side. Transfer the shrimp to a serving plate.
  • In a small bowl, whisk together the sour cream and lime juice with 1/2 teaspoon salt.
  • Drizzle the shrimp with the sauce and serve with tortillas, sliced radishes and diced avocado.
