1 pound mild bulk pork sausage
1 teaspoon ground cumin
1/2 teaspoon garlic powder
2 medium onions, chopped
2 medium green peppers, chopped
2 teaspoons reduced-sodium beef bouillon granules
2 cups boiling water
1 to 2 jalapeno peppers, finely minced and seeded
1 package (6.20 ounces) fast-cooking long grain and wild rice mix

Steps:

  • In a large skillet, cook sausage, cumin and garlic powder over medium heat until meat is no longer pink; drain. Add onions and green peppers; saute until crisp-tender., Dissolve bouillon in water; add to skillet. Stir in jalapeno, rice and rice seasoning packet; bring to a boil. Reduce heat and simmer, uncovered, until water is absorbed, 5-10 minutes.

1 (8-ounce) box of Zatarain's New Orleans-Style yellow rice
1/4 cup of unsalted butter, divided, 1/2 stick
1 (11-ounce) can of Mexican corn, undrained
1 (10.75-ounce) can of Campbell's Cream of Celery Soup
2 tablespoons of chopped jalapenos
Kosher salt, only if needed, to taste
1/4 teaspoon of freshly cracked black pepper, plus more to taste
1 pinch of Slap Ya Mama Cajun seasoning, or to taste
1 overflowing cup of shredded pepper jack cheese, divided

Steps:

  • Prepared the rice according to the package directions. Preheat oven to 350°F. Butter or spray a 1.5-quart baking dish with non-stick cooking spray. Combine the cooked rice, the remaining butter, corn, cream of celery soup, jalapenos, salt, black pepper, and Creole/Cajun seasoning; stir in 3/4 cup of the shredded cheese, reserving the remaining 1/4 cup. Transfer mixture to the baking dish. Sprinkle the top with the remaining 1/4 cup of cheese and bake, uncovered, at 350°F for about 20 minutes. VARIATION: You can also add 2 cups of chopped or shredded chicken or 1 pound of peeled and deveined shrimp, lightly sauteed in butter first, to make this a main dish meal. Here's what you need: yellow rice, water chestnuts, butter, green giant mexi-corn, onion, sour cream, cream of chicken soup, cheddar cheese

Number Of Ingredients 8

1 package yellow rice
1 can water chestnuts, sliced, drained
1 stick butter
1 can green giant mexi-corn, drained (do not substitute whole yellow corn)
½ cup onion, finely chopped
1 carton sour cream
1 can cream of chicken soup
2 cups cheddar cheese, grated

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cook rice according to package directions.
  • Chop water chestnuts into small dice.
  • Melt stick of butter in a 9 x 13-inch (22 x 33 cm) glass casserole dish.
  • Stir the rice, corn, onion, water chestnuts, sour cream, and cream of chicken soup together until mixed well. Pour mixture into casserole dish and spread it out evenly. The butter may spill onto the top of the casserole and that's fine.
  • Bake uncovered for at least 20 minutes. Depending on your oven it may need to cook longer if you have a cold cooking oven. The center of the casserole must reach a hot temperature to your touch.
  • Remove from the oven. Sprinkle the shredded cheddar cheese on top of the casserole and cook for 10 minutes, or until the cheese is melted well.
  • I hope you enjoy our family favorite casserole! We take it to church dinners and never have any leftovers. It can be made ahead of time and frozen for cooking on those busy holidays!

This is adapted from a Southern Living recipe. Makes a nice side dish for a Tex-Mex family dinner. Uses Rotel tomatoes and Mexican Velveeta. You can choose the mild or spicy versions of each to suit your taste.

2 cups uncooked long-grain rice
2 tablespoons butter or 2 tablespoons margarine
1 green bell pepper, chopped
1 small onion, chopped
1 (15 1/2 ounce) can cream-style corn
1 (11 ounce) can Mexican-style corn, drained
1 (11 ounce) can whole kernel corn, drained
1 (10 ounce) can rotel diced tomatoes with green chilies, undrained
1 (8 ounce) package Velveeta Mexican cheese, cubed
1/2 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1/2 cup shredded cheddar cheese

Steps:

  • Prepare rice according the the package directions; set aside.
  • In a big skillet, melt the butter over medium heat.
  • Saute bell pepper and onion for 5 minutes or until tender.
  • Add in cooked rice, cream-style corn, mexican-style corn, whole kernel corn, Rotel tomatoes with juice, cubed Velveeta, and salt and pepper to taste; stir to combine.
  • Spoon mixture into a greased 13x9 inch casserole dish.
  • Bake in a 350° oven for 30 minutes or until well heated.
  • Sprinkle shredded cheddar cheese on top and bake 5 more minutes or until cheese melts.

1/2 cup reduced-fat cheddar cheese or 1/2 cup monterey jack cheese, shredded
4 ounces green chilies, chopped
4 green onions, chopped
2 ounces red peppers, chopped
1 cup sour cream
3 tablespoons recaito (cilantro-based seasoning)
1/2 teaspoon cumin
chili powder, to taste
salt, to taste
1/4 teaspoon pepper (or more, to taste)
red pepper flakes, to taste

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl, combine cooked rice with cheese, chilies, and green onions.
  • Mix together.
  • In a small bowl, stir together sour cream, Recaito, cumin, chili powder, salt and pepper.
  • Add to rice mixture and stir thoroughly.
  • Spray an oven-proof casserole dish with vegetable oil spray.
  • Spread rice mixture in casserole bake uncovered for approximately 30–40 minutes until cheese melts.
  • Top with additional cheese, if desired.
