1 tablespoon unsalted butter
1 tablespoon olive oil
1 serrano chile, whole
One 15-ounce can pinto beans, preferably organic, rinsed and drained
1/4 cup low-sodium chicken broth
Salt and freshly ground black pepper

Steps:

  • Melt the butter with the olive oil in a saucepan over medium-high heat. Add the serrano chile and cook until the chile begins to brown, about 1 minute. Add the beans and chicken broth. Cook over medium heat, frequently mashing only the beans (not the chile), until the beans are a thick paste, about 10 minutes. Season with salt and pepper. Remove the chile and serve.

1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
2 teaspoons vegetable oil
1 can (16 ounces) refried beans
2 tablespoons water
1 teaspoon hot pepper sauce
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large skillet, saute the onion, jalapeno and garlic in oil for 2-3 minutes or until tender. Stir in the beans, water, hot pepper sauce, cumin, chili powder and cayenne. Cook and stir over medium-low heat until heated through. Transfer to a serving bowl; sprinkle with cheese.

1 (16 ounce) can refried beans
1 cup picante salsa or 1 cup favorite salsa
1/2 cup shredded Mexican blend cheese
1/2 cup sliced green onion
1 tablespoon chopped fresh cilantro
1/2 tablespoon finely chopped fresh jalapeno (optional)
1/4 teaspoon garlic powder

Steps:

  • In medium saucepan, combine all ingredients.
  • Cook until hot and bubbly.
  • Serve warm or room temperature.
  • Makes 2 to 3 cups.

This bean dip is sooooo good. It is easy to make and is always a hit. I make it for my Super Bowl party each year and it is always gone before half time!! Two cheeses and refried beans are baked with mild spices to create a creamy dip. Serve with tortilla chips.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
2 (16 ounce) cans refried beans
½ (1 ounce) package taco seasoning mix
5 drops hot pepper sauce
2 tablespoons dried parsley
¼ cup chopped green onions
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend the cream cheese and sour cream. Mix in the refried beans, taco seasoning, hot pepper sauce, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. Transfer the mixture to an 8x12 inch baking dish. Top with remaining Cheddar and Monterey Jack cheeses.
  • Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.

1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), drained
salt to taste
2 tablespoons shredded Cheddar cheese, or to taste

Steps:

  • Combine refried beans, pinto beans, diced tomatoes and green chiles, and salt in a microwave-safe bowl. Microwave on high for 4 1/2 to 5 minutes.
  • Remove from the microwave and stir until pinto beans are slightly mashed. Sprinkle Cheddar cheese on top and serve immediately.
