3 ounces cream cheese, softened
2 tablespoons finely chopped green onions
1 medium fresh mushroom, finely chopped, optional
1 garlic clove, minced
Dash salt
Dash pepper
1/4 cup crushed pineapple, drained
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese until fluffy. Stir in the onions, mushroom if desired, garlic, salt and pepper. Fold in pineapple. Serve with crackers.

12 medium tomatoes (about 4 pounds)
2 large red onions, chopped
2 medium green peppers, chopped
2 cans (8 ounces each) unsweetened crushed pineapple, drained
1 can (15 ounces) tomato sauce
1 can (12 ounces) tomato paste
3 cans (4 ounces each) chopped green chilies
2 cans (4 ounces each) diced jalapeno peppers, drained
1/3 cup white vinegar
2 tablespoons salt
6 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon pepper

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and chop., In a stockpot, combine remaining ingredients. Stir in tomatoes. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 15-20 minutes or to desired thickness., Carefully ladle hot mixture into seven hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

1 teaspoon chile powder
3 teaspoons dark brown sugar
6 (1-inch) slices pineapple
Vegetable oil, for coating the grill or grill pan

Steps:

  • In a small bowl mix the salt, chile powder, and brown sugar. Sprinkle over both sides of the pineapple slices. Place pineapple slices onto a preheated, oiled grill or grill pan on high heat for 1 minute on each side. Reduce heat to low and continue cooking for 2 to 3 minutes per side or until the pineapple has softened and the sugar has caramelized on the edges.

2 cans (one 20 ounces, one 8 ounces) pineapple chunks
1-1/4 cups sugar
1/2 cup cider vinegar
1 cinnamon stick (3 inches)
6 to 8 whole cloves
Dash salt

Steps:

  • Drain pineapple, reserving 1 cup juice. In a saucepan, combine the sugar, vinegar, cinnamon, cloves, salt and reserved pineapple juice. Bring to a boil.
