This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

8 pig feet, split
2 celery ribs, chopped
1 onion, chopped
¾ cup white vinegar
2 tablespoons red pepper flakes
2 tablespoons seasoned salt
1 tablespoon chopped garlic
1 teaspoon ground black pepper
2 bay leaves
water, or as needed to cover

Steps:

  • Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
  • Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

Growing up in the south, pig's feet was something we had a few times a year. My mom always made the best TROTTERS! This is my Asian revamped version. This isn't for everyone, but it sure is for me! Cooking with Love & Passion sw :)

3 lb pig's feet, sliced
4 lime kaffir leaves
1 chunk of galangal, sliced
6 whole garlic cloves, sliced in half
1 habanera pepper, sliced in half
3 star anise
1/2 cinnamon stick
1 Tbsp mixed peppercorns
1 Tbsp black soy sauce
1 Tbsp soy sauce
1 Tbsp fish sauce
3 Tbsp dry sherry
2 Tbsp brown sugar
*garnish- spring onions, toasted sesame seeds & cilantro*

Steps:

  • 1. Boil pig's feet for about 15 minutes in Dutch oven and drain. Add pig's feet back to Dutch oven. Cover with water. Add remaining ingredients to Dutch oven, bring to a boil. Reduce heat to low and cook for 2 hours, until pig's feet are tender. Remove pig's feet from Dutch oven. Increase heat to concentrate the juice. Plate up pig's feet, pour juice on pig's feet and top with garnish. Enjoy!

1 kg trotters
2 pieces garlic
2 pieces Red chilli
1 piece ginger
1 piece shallot
6 grams soy sauce
6 grams dark soy sauce
10 grams cooking wine
4 grams salt
10 grams sugar

Steps:

  • Step 1: Cut the trotters into pieces, then soak in water for 8 minutes.
  • Step 2: Bring the water to a boil, then put the trotters in and cook for 4 minutes.
  • Step 3: Heat up the pot, add some oil to stir-fry the prepared ginger, green onion, chili and garlic.
  • Step 4: Add two spoons of bean paste and stir fry for 3 minutes.
  • Step 5: Put the trotters into the pot and then add light soy sauce, dark soy sauce, cooking wine, sugar and salt, stir-fry evenly, then add water, bring to a boil over high heat, and simmer until the trotters are cooked through.
  • Step 6: The finished product, just sprinkle with chopped green onion, it is really delicious.

2 chicken bouillon cubes

  • First step is to make sure that the pigs feet are thoroughly washed.
  • Next, add the pigs feet into the slow cooker.
  • Now add in the onions, garlic, seasonings, cubes, and water.
  • Place the lid on top of the slow cooker.

6 pig's feet
2 fresh red chile peppers
2 tablespoons salt
2 cups white vinegar

Steps:

  • In a large stainless steel pot, place pig's feet and enough water to cover. Boil feet 2 hours or until tender; drain. Rinse feet in hot water to remove excess fat. Remove as many bones as you can.
  • Put 1 chili pepper and 3 pig's feet in each one quart jar. In a separate bowl, mix salt and vinegar together. Pour vinegar mixture over pig's feet to cover. Seal jars and refrigerate for at least 3 days to 1 week before eating.
