SPICY THAI PASTA SALAD
This robust salad is delicious on its own, but easily can be turned into a main course by adding a protein such as shrimp, chicken, or tofu.

- Whisk sesame oil, vegetable oil, soy sauce, balsamic vinegar, fish sauce, chili-garlic sauce, lime juice, rice vinegar, and sugar for dressing together in a small bowl until well combined. Set aside.
- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Drain pasta, rinse with cold water, and return to the pot. Drizzle dressing over the pasta, stir gently to combine. Add peas, carrots, bell pepper, green onions, cilantro, peanuts, and red pepper flakes; stir until well combined.
- Serve at room temperature with lime wedges, or chill in the refrigerator for about 1 hour or longer.

- Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
- Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.

SPICY THAI SHRIMP AND PASTA SALAD

- 1. In a blender or food processor, combine vinegar, chili sesame oil, soy sauce, ginger and mustard. Process until well blended. Season with salt and pepper to taste. Cover and chill. 2. Cook peeled and deveined shrimp. 3. Cook pasta al dente and rinse in cold water. 4. In large bowl, combine pasta, shrimp, artichoke hearts, green onions, cilantro and mint. Toss with enough dressing to coat. Arrange bell pepper on top.
SPICY TUNA MANGO PASTA SALAD
Steps:
- - Prepare the pasta according to normal directions, drain, cool, and pour into a large mixing bowl. Set aside. - In a smaller mixing bowl, add the Green Curry Paste and pepper to the mayonaise and mix until thoroughly blended. Start with 2 tablespoons and add to your taste. Remember that the tuna, pasta, and mango will offset the bite, so you want it a little spicier than you think it should be. - Add the mayonnaise to the pasta and mix thoroughly. Use a rubber spatula to clean the bowl well. - Cook, cool, and shred the tuna (if preparing fresh) or drain the canned tuna well and shred with a fork. Put the shredded tuna into the small mixing bowl. - Peel and chop the mango into quarter inch dice. You want the mango pieces to be about the same size as the cooked pasta shells. Add the mango to the tuna and mix well. - Add the tuna mango mixture to the pasta, using a wooden spoon or your hands to blend well. - Plate the prepared salad and chill for serving. Add thin slices of mango to the top for garnish if desired. - OPTION Split the salad into casserole dishes lined with breadcrumbs or crumbled saltines, and heat it in a 300F oven topped with shredded parmesan cheese until melted. Do not overheat as the sauce is mayonnaise based and may get oily but the breadcrumbs can only absorb so much liquid.
SPICY TOMATO PASTA SALAD
This is a great make-ahead summer salad for a crowd. If you don't like it spicy, omit the crab boil. If you like it REALLY spicy, use liquid crab boil--but only an ounce or two.

- Pour Italian dressing into large bowl and add dry ranch dressing mix, stirring well.
- Add diced cucumbers, sliced tomatoes, olives and basil, cover and marinate a couple of hours.
- In a large pot, place enough water for pasta and drop crab boil bag into water.
- When water comes to boil, place pasta into water and cook until almost done, then turn heat off, add the frozen shrimp and let sit in crab boil water until pasta is tender.
- Drain shrimp and pasta mixture into a large bowl.
- Pour dressing mixture over pasta and shrimp, mixing well.
- Cover and let chill before serving--overnight is even better.
SPICY PESTO PASTA SALAD

- Make the pesto: Combine the olive oil, red pepper flakes, 1 clove garlic and the lemon zest in a saucepan. Cook over very low heat until the garlic is tender, 30 to 40 minutes (do not let the garlic burn). Strain the oil.
- Pulse the pine nuts, basil, arugula, parmesan, remaining 3 cloves garlic and the lemon juice in a food processor until finely chopped. Add the flavored garlic oil and pulse until smooth. Season with salt and pepper.
- Make the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente, adding the peas during the last 2 minutes of cooking. Reserve 1/4 cup cooking water, then drain and rinse under cold water to cool. Toss with the pesto, arugula, sun-dried tomatoes and reserved cooking water. Cover and refrigerate until ready to serve. Sprinkle with parmesan.
GRAY'S SPICY THAI CHICKEN & PASTA SALAD
Steps:
- 1. Lightly salt chicken breast (bone-in). Bring a pot of water to a boil and add chicken. When water boils again, cover and gently simmer 5 minutes. Then turn off heat and let sit 10-12 minutes until breast is cooked. Remove breast and let cool. 2. Meanwhile, cook pasta, drain and run under cold water. In a large bowl, toss pasta with sesame oil and set aside. 3. When chicken is cool, pull meat off the bone and into shreds about 1/4 inch wide and 1 1/2 inches long. Set aside. 4. Toss noodles with cucumber, jalapeno, ginger, basil, and red onion. Set aside. 5. In a small bowl, combine lemon grass, garlic, lime juice, chili oil, fish sauce, and sugar until sugar is dissolved. Set aside. 6. Refrigerate everything until ready to serve. 7. When ready to serve, toss pasta mixture with chicken, sauce mixture, and cilantro. Sprinkle peanuts on top. Serve chilled or at room temperature.
SPICY ASIAN PASTA SALAD WITH PEANUTS
This is the most absolutely wonderful salad! It's perfect to serve at any dinner party. If you want more heat then increase the cayenne pepper. The green beans can be substituted with fresh snow peas. Plan ahead the noodles have to be chilled for 2 hours. If you want to make this into a main dish throw in some cooked chicken or shrimp. Prep time includes chilling time.

- Cook the pasta in a large pot of boiling salted water until only JUST firm-tender; drain VERY well, and transfer to a large bowl.

PERFECT SPICY SAUSAGE PASTA SALAD
Gorgeous!! Morish!! ...and the easiest Pasta Salad to make by far!! One helping is never enough!! Prep time does not include the time taken to *cook the Pasta which usually takes about 10 minutes in the microwave. I add plenty of salt and a good dollop of Olive Oil to the water. (I find the Olive Oil flavours the Pasta) 'BEER STICKS' are about the size of Frankfurters, but the meat is like that of pepperoni OR salami. They are called Beer Sticks in N.Z. but there may well be another name used for them elsewhere.

- In a large pot of salted water, boil aspargus for 3 minutes. Remove immediately and place in an ice bath to stop the cooking process. Drain asparagus in a colander. Slice and set aside. Add pasta to the same boiling water. Boil according to package. Remove and drain in a colander. Run cold water over pasta until cool. Drain. Set aside. - 1. Bring 4 qts water to a boil and add pasta. Cook according to package directions until pasta is al dente approximately 9-11 minutes, drain and rinse with cold water.
- 2. Add spicy canned coleslaw (optional) to pasta and chill for 30 minutes to an hour. *See Evelyn Horsley's Canned Cole Slaw Recipe on JAP - to make it spicy I simply followed the recipe and added 2 finely sliced or chopped jalepenos and 2 finely diced serrano peppers to the batch before canning into jars.
- 3. For the sauce: In a mixing bowl combine all remaining ingredients except crab & cheese. Refrigerate covered until you are ready to put the salad together. *Spicy Sweet Mustard - There are lots of mustards on the market so either purchase one or I made my own version taking a little of JAP'ers Evelyn Horsley's & Dana Ramsey's spicy pepper mustard recipes adding honey or sugar and making some adjustments to my taste.
- 4. After all has been chilled add 3/4 of the sauce to the pasta and mix well. Add 2-3 Tablespoons of milk or water to the remaining sauce and mix well then pour into pasta and stir. This just makes it so the sauce isn't so thick.
- 5. Add cubed cheeses of your choice and finely chopped immitation crab and combine well. Garnish with green onion if you like
- 6. You may serve this immediatly but I really prefer to chill this salad for at least another hour to let the flavors marry. **Not a spicy person just use regular course ground mustard in the sauce and don't put the spicy in your canned coleslaw.
