SPICY PICKLED OKRA

¾ pound fresh okra
4 ½ cups cider vinegar
2 cups water
3 cloves chopped garlic
¼ cup crushed red pepper flakes
¼ cup smoked paprika
4 ½ teaspoons salt
1 tablespoon Szechuan peppercorns

Steps:

  • Wash the okra, rubbing lightly to remove any grit and fuzz. Sterilize 2 (1 quart ) canning jars and lids in boiling water for at least 10 minutes, allow to cool before filling with okra.
  • Combine the cider vinegar, water, garlic, red pepper flakes, smoked paprika, salt, and peppercorns to a boil in a large pot over medium-high heat. Reduce the temperature and simmer for 15 minutes. Remove from the heat.
  • Pack fresh, cleaned okra loosely into the jars. Pour the hot brine over the okra, filling the jars to the top. Seal jars, making sure you have cleaned the jar's rims of any residue. Store the jars in the refrigerator. Allow contents to pickle at least one week minimum before eating, two weeks is best.

12 ounces small okra (whole ~ if using frozen okra, allow it to thaw, then blot dry)
1 1/2 tablespoons olive oil
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
4 lemon wedges (for garnish)

Steps:

  • Preheat oven to 450°F.
  • Toss the okra with olive oil to coat.
  • In a small bowl combine coriander, cumin, paprika, cayenne pepper and salt.
  • Toss okra with spiced salt mixture.
  • Spread okra on a rimmed baking sheet and roast for 12 to 15 minutes, or until tender, turning once.
  • Serve immediately with lemon wedges (squeeze over each serving)!
  • Makes four servings.

6 tablespoons buttermilk
2 teaspoons Louisiana-style hot sauce
1/4 cup all-purpose flour
1/4 cup cornmeal
1/2 teaspoon seasoned salt

Oil for deep-fat frying
Additional salt and pepper, optional

Steps:

  • Pat okra dry with paper towels. Place buttermilk and hot sauce in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt and pepper. Dip okra in buttermilk mixture, then roll in cornmeal mixture., In a cast-iron or other heavy skillet, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, until golden brown, 1-1/2 to 2-1/2 minutes on each side. Drain on paper towels. If desired, season with additional salt and pepper.

1 onion, chopped

1 bunch scallions, chopped
3 cloves garlic, chopped

1 (8 ounce) package sliced fresh mushrooms
1 pinch salt
1 teaspoon ground black pepper
1 cup water, or as needed

Steps:

  • Combine sausage, scallions, and garlic in a large soup pot over medium-high heat. Cook and stir until sausage is browned and crumbly and garlic and scallions have browned a bit, about 10 minutes. Mix in okra, diced tomatoes, and tomato sauce until well combined.

Kosher salt
6 ounces trimmed green beans
7 ounces okra
1 sprig dill
1 clove garlic, smashed
1 teaspoon coriander seeds
1 1/4 cups distilled white vinegar
1 tablespoon sugar
1 teaspoon red pepper flakes
1/4 teaspoon cayenne
1/4 teaspoon smoked paprika

Steps:

  • Bring a medium pot of well-salted water to a boil. Have an ice bath ready.
  • Boil the green beans until just crisp-tender, about 3 minutes. Add the okra and cook for 30 seconds. Drain in a colander and immediately transfer to the ice bath to cool. Drain the vegetables and pack them into the Mason jar along with the dill and garlic.
  • Heat a medium saucepan over medium heat and add the coriander seeds; toast until fragrant and a shade darker, about 2 minutes. Add the vinegar, sugar, red pepper flakes, cayenne, smoked paprika, 1 1/2 teaspoons salt and 1 cup water. Bring to a simmer, stirring until the sugar dissolves. Pour the brine over the vegetables. Add a little water to the jar to cover the vegetables if necessary. Cool to room temperature, then cover the jar and refrigerate for at least 6 hours and up to 3 weeks.

14 ounces of whole baby okra (or equivalent)
2 cups diced tomatoes
1 cup diced onion
1 tablespoon chopped garlic
2 tablespoons diced jalapeno peppers
8 ounces tomato sauce
3/4-1 cup water (approximately)
garlic pepper seasoning
seasoning salt
black pepper
allspice
corn oil, to fry okra

Steps:

  • Fry frozen okra in hot oil until golden brown(this will ensure okra stays closed and not slimy.
  • Set okra aside.
  • In a skillet combine tomato, onion, garlic, and jalapeno pepper and fry in about 1/8 cup oil until it becomes saucy.
  • Then add water and tomato sauce to skillet and stir.
  • Add okra and seasonings and let cook for about 5 minutes on medium heat.
  • Set aside for about 10 minutes and stir fry will thicken slightly.
  • Enjoy!

1 pound small to medium okra, whole if small, or cut into 1/2-inch pieces, stems trimmed
1 onion, preferably Vidalia, chopped
2 cloves garlic, very finely chopped
1 tablespoon finely chopped fresh ginger
2 teaspoons ground cumin
2 teaspoons ground coriander
1/4 teaspoon cayenne pepper
1/4 teaspoon ground turmeric
1 (28-ounce) can tomatoes (preferably San Marzano), chopped, with juices
Coarse salt and freshly ground black pepper
2 tablespoons chopped fresh cilantro, for garnish

Steps:

  • Line a plate with paper towels. In a large skillet, heat the oil over medium-high heat. Add the okra and cook until lightly browned, about 4 minutes. Transfer with a slotted spoon to the prepared plate. Set aside.
  • Add the onion to the residual oil in the skillet and cook, stirring occasionally, until golden, about 10 minutes. Add the garlic and ginger and cook until fragrant, 45 to 60 seconds. Add the cumin, coriander, cayenne, and turmeric and stir to combine. Add the tomatoes with juices, and stir to combine.
  • Cook until slightly thickened, about 5 minutes. Add the reserved okra and stir to combine. Decrease the heat to medium-low and cook until the okra is tender, about 10 minutes. Taste and adjust for seasoning with salt and pepper. Garnish with cilantro and serve immediately.

Steps:

  • Cook the okra according to package directions, then rinse under cold running water to stop the cooking, and drain. Preheat a large skillet over medium-high heat. Add the oil, then the onions, bell pepper, and garlic. Sauté until the onions turn translucent, about 3 minutes. Add the okra, tomatoes, tomato sauce, salt, and black pepper. 2 pounds medium okra pods
4 small dried chiles
2 teaspoons yellow mustard seed
1 teaspoon whole black peppercorns
8 cloves garlic, peeled
4 cups distilled white vinegar
2 cups water
2 tablespoons pickling salt (see sidebar)

Steps:

  • Wash the okra and trim the stems to 1/2 inch. Place 1 chile, 1/2 teaspoon mustard seed, 1/4 teaspoon peppercorns, and 2 cloves of garlic in the bottom of each of 4 sterilized pint-sized canning jars (see page 279). Divide the okra evenly among the jars, placing the pods vertically, alternating stems up and down.
  • In a medium saucepan over medium heat, bring the vinegar, water, and salt to a boil. Carefully pour the boiling mixture over the okra in the jars, leaving 1/4 inch of headroom between the top of the liquid and the lid. Seal the lids.
  • Process the jars in a boiling-water canner for 15 minutes (see page 279). Store the unopened jars at room temperature for up to 1 year. Once the jars are opened, store in the refrigerator for up to 1 month.

  • Rinse okra in a colander under hot water.
  • Heat oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion, stirring, until golden, about 3 minutes. Add tomatoes (including juice) and chile and boil, stirring, until tomatoes are softened and liquid is reduced by half, 5 to 10 minutes. Add okra and cook, gently stirring, until okra is tender, about 5 minutes. Stir in salt and pepper and discard chile.

Here in Texas we have a long hot growing season and okra just grows wild. I had to find something to do with all the extra so I'm sharing some of the recipes I have used this year.

4 c 5% white or cider vinegar
1 c water
3 c sugar
12 clove garlic
1 Tbsp pickling spice
1 tsp red pepper flakes
1/2 c pickling salt or kosher salt
1/2 tsp celery seed
1/2 tsp black pepper corns
6 chili peppers/ cut small slice in side of each

Steps:

  • 1. Sterilize 6 wide mouth jars, lids and rings place jars on kitchen towel on counter/ leave lids and rings in hot water. At this time fill water bath canner with water and bring to boil....when comes to a boil turn heat down until jars are filled and ready for bathing.
  • 2. Wash and drain okra, trim stems close to the body of the okra. Peel 12 cloves of garlic set aside. If you are using chili peppers wash and cut a 1/2 inch slit into one side of each pepper.
  • 3. Heat the remaining ingredients, bring to a boil and simmer 5 minutes. Turn heat to low to keep hot while packing jars.
  • 4. Put 2 cloves garlic in each jar. 1 chili pepper per jar( if using). Pack the jars with the okra, one up, one down pack jars tight. Tops of the okra should be 1/2 inch from top of jars. Pour hot vinegar mix to with in 1/4 inch of the top of jar. Run thin knife between okra and side of jar to remove bubbles. Add more liquid if need. Just use equal parts vinegar and water. No need to heat.
  • 5. Wipe the rims of the jars with a clean cloth. Place sterilized lid and ring on each jar. Tighten firmly but not too tight.
  • 6. Place jars in water bath with 1 to 2 inches covering tops of jars. You may need to remove some water to keep pot from running over. Bring to a boil and process 15 minutes. Carefully remove from bath to towel on counter. Allow to cool undisturbed until jars are sealed.

1 medium onion, diced
1 medium green bell pepper, diced
1 medium red bell pepper, diced

1 (2.25 ounce) can sliced black olives, drained
2 (16 ounce) packages spaghetti

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 10 minutes. Remove from heat.
  • Combine spaghetti sauce, okra, sausage, water, mushrooms, hot sauce, onion, bell peppers, garlic, and olives in a large pot; bring to a simmer. Rinse ground beef and add to the pot. Continue to simmer for at least 1 hour.
  • While sauce simmers, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Spread spaghetti on serving plates. Cover each with some Cheddar cheese. Add some sauce and top with Parmesan cheese.

7 ounces okra, chopped
1 red pepper, deseeded and diced
1 (14 ounce) can chopped tomatoes
2 teaspoons thyme, chopped
1 -2 teaspoon vegetable bouillon granules
1 (14 ounce) can kidney beans, drained
2 bay leaves

Steps:

  • Preheat a non stick frying pan and dry fry th onion and garlic until soft. Add the okra and red pepper and cook to soften.
  • Stir in the tomatoes, thyme and bouillon powder. Add the kidney beans and bay leaves and allow to simmer for 20 minutes Serve.

This quick and easy recipe is hot! You may also substitute collard greens for the turnip greens. The okra, once cut, will thicken the sauce as it cooks. Posted for ZWT 4.

1 lb turnip greens, stems removed and cut into 1/4 inch slices
12 okra, end removed and cut into halves
1 medium onion, chopped
1/4 cup pine nuts
3 jalapeno peppers, seeded and finely chopped (red is preferred)
1/4 cup water
1/4 teaspoon salt

Steps:

  • Cook and stir onion and pine nuts in oil in Dutch oven over medium heat until onion is tender, about 3 minutes.
  • Stir in turnip greens, okra and remaining ingredients. Heat to boiling; reduce heat. Cover and simmer until turnip greens are tender, 18 to 20 minutes.

SPICY OKRA WITH CHILES, GARLIC, TOMATOES & BASIL image

1/2 cup ghee, lightly toasted clarified butter or oil
2 pounds *okra, bias cut into 1-1.5 inch pieces
1 large *onion, thinly sliced
1/3 cup finely chopped fresh ginger
1 Tablespoons finely chopped *garlic
1 pound fresh *tomato (3-4 medium tomatoes, 8-12 plum tomatoes) cut into a
medium large dice
2 Tablespoons coriander seeds, ground
2 tsp ground turmeric
4-5 whole dried red chiles
2-4 green *Serrano chiles
Juice of 1 lemon
1/2 cup roughly chopped *cilantro leaves
1/2 cup torn *Thai basil leaves
Salt

Steps:

  • Heat 1/4 cup of oil in a large skillet with a heavy bottom over medium heat. Add okra, turmeric and coriander and lightly brown on all sides, stirring once in a while. If you don't have pan large enough to hold the okra in one layer cook it in batches if necessary, divide the spices along with the okra. Remove okra and wipe pan clean. Heat the pan over a medium flame and add the rest of the ghee/oil. Add garlic and red chiles, cooking to a very light, golden brown. Add ginger and sauté for a few moments before adding onions. Salt the mixture lightly, turn down the heat and cover the pan. Cook the onions until they are very soft and fragrant. Turn up the heat to medium high and add the tomatoes and any liquid that may have accumulated. Cook for a few moments to render some juice before adding the sautéed okra and Serrano chiles. Season the mixture again with salt and if it seems very dry add 1/2 cup of water to moisten it before covering it and returning the heat to medium-low. Cook for about 15-20 until the okra is tender, but not yet falling apart. Stir in lemon juice and basil, adjust seasoning and top with cilantro just before serving.
