SWEET AND SPICY MEATLOAF

2 tablespoons olive oil
2 green bell peppers, diced small
2 red bell peppers, diced small
1 large yellow onion, diced small
3/4 cup panko breadcrumbs
1/2 cup whole milk
2 heads garlic, roasted and mashed into a paste

1 cup ketchup
1/4 cup steak sauce
1/4 cup sriracha
1/4 cup maple syrup
1 tablespoon Montreal steak seasoning
2 pounds 80/20 ground beef
1 pound sweet Italian sausage, casings removed
3 eggs, beaten
1 bunch fresh Italian parsley, chopped
Kosher salt and freshly ground black pepper

Mashed potatoes, for serving

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
  • Preheat the oven to 350 degrees F.
  • Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
  • In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
  • In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
  • When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

1 ounce dried chipotle chilies, stemmed
2 ripe Italian Roma tomatoes, cored
3 garlic cloves, peeled
2 cups water
2 tablespoons olive oil
1 onion, diced
3 celery stalks, diced
1 teaspoon ground cumin
1/8 teaspoon ground nutmeg
11/4 pounds ground beef
11/4 pounds ground pork
1/2 cup fresh white bread crumbs
11/2 teaspoons salt
3 large eggs, beaten to blend

Steps:

  • Combine chipotles, tomatoes, garlic and water in medium saucepan. Season with salt and pepper. Bring to boil. Reduce heat and simmer until reduced by 1/3, about 20 minutes. Cool. Transfer to processor. Puree until smooth. Strain.
  • Heat oil in heavy large skillet over medium high heat. Add onion and celery and saute until tender, about 10 minutes. Add cumin and nutmeg and stir 1 minute. Remove from heat. Transfer to large bowl. Cool.
  • Preheat oven to 375 degrees F. Add beef, pork, bread crumbs and salt to onion mixture. Add 1/2 cup chipotle sauce. Mix until well blended. Add eggs and mix well. Press mixture into 9x5-inch loaf pan. Brush top with some of remaining chipotle sauce. Bake meatloaf until thermometer inserted into thickest part registers 160 degrees F, about 1 hour. Transfer to rack. Cool slightly. Drain off any oil. Turn meatloaf out onto platter. Serve with remaining salsa.

2 slices whole-grain sandwich bread, torn into pieces
1/2 small onion, quartered
1 medium carrot, quartered
1/2 pound 93 percent lean ground turkey
1/2 pound 90 percent lean ground beef
1 large egg
1/2 teaspoon plus 1/8 teaspoon curry powder
Kosher salt and freshly ground pepper
1 tablespoon ketchup
1 tablespoon peach chutney or apricot jam
2 medium red-skinned potatoes, sliced 1/4 inch thick
1 head broccoli (florets cut into pieces, stem peeled and thinly sliced)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F. Pulse the bread in a food processor until finely ground; transfer to a large bowl. Add the onion and carrot to the food processor and pulse until finely chopped. Transfer to the bowl with the bread and add the turkey, beef, egg and 1/2 teaspoon each curry powder, salt and pepper. Mix by hand until just combined. Shape into 4 small oblong meatloaves on a foil-lined rimmed baking sheet. Mix the ketchup and chutney in a small bowl and brush over the meatloaves. Bake until just cooked through, about 20 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add the potatoes and cook 4 minutes, then add the broccoli florets and stem; cook until the vegetables are just tender, about 6 more minutes. Drain; return to the pot. Toss with the olive oil and the remaining 1/8 teaspoon curry powder. Season with salt and pepper. Serve with the meatloaves.

7 1/2 ounces hot tomato sauce
4 ounces diced green chilies
1 egg, beaten
2 pieces bread, toasted & crumbed
1/2 diced onion
onion powder
garlic powder
1 lb ground beef
salt

Steps:

  • Preheat oven 375°F.
  • Heat hot tomato sauce in saucepan over medium heat until slightly thickened; let cool.
  • In a bowl, add 3/4 of the diced onion and 3/4 of the cooled tomato sauce.
  • Add remaining ingredients to the bowl; mix well.
  • Load meat into loaf pan.
  • Pepper the top of loaf, add remaining onion; pour remaining tomato sauce on top.
  • Cover with foil and bake 1 hour.

I modified this recipe from my mom's original. This recipe uses steak sauces, so it's more flavorful than regular versions, I think. And the sauce uses the same ingredients as the meatloaf recipe, so you just need to get everything out once! Feel free to adjust the spices to your tastes, and the measurements are what I guesstimate them to be. I just eyeball it, and you can too. I'd say this yields about 5-6 slices, or 2-3 servings for 2 people. This is the first recipe I've posted, so sorry if it's a little disorganized. Enjoy!

1kg lean minced beef
100g white breadcrumbs
3 spring onions , trimmed and finely chopped
2 garlic cloves , crushed
2 eggs , beaten
2 tsp ground cumin
½ tsp Tabasco sauce , optional
handful coriander leaves, finely chopped
12 cherry tomatoes , halved
6-8 tbsp chilli sauce (we used Linghams), optional
vegetable oil , for greasing

Steps:

  • Mix together beef, breadcrumbs, spring onions, garlic, eggs, cumin, Tabasco, coriander and some seasoning until combined. Be careful not to over-mix or the meatloaves will be tough.
  • Divide the mixture into 8. Use your hands to shape each one into a small oval, like a mini meatloaf. Arrange 3 cherry tomatoes on top of each, then drizzle over the chilli sauce, if using. Cook or freeze in airtight plastic containers.
  • To cook, heat oven to 200C/180C fan/gas 6. Place the meatloaves on a lightly greased, shallow baking tray and bake for 25-30 mins until the meat is cooked through.
  • To cook from frozen, heat oven to 180C/160C fan/gas 4. Place the meatloaves on a baking tray and loosely cover with foil. Cook for 30 mins, then remove the foil increase the temperature to 220C/200C fan/gas 7 and cook for a further 25 mins.
