SPICY CHILI

Bold and flavorful Spicy Chili made with ground beef, diced veggies, spices, and a definite kick of heat.

3 lbs ground beef
1 green pepper (, diced)
1 red bell pepper (, diced)
1 medium onion (, diced)
3 small jalapeno peppers (, diced (seeds and veins removed for less spice))
salt and pepper
2 teaspoons garlic powder
1/3 cup chili powder
1 1/2 Tablespoons cumin
1 1/2 cups ketchup
3 Tablespoons lime juice
2 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce
2 teaspoons vinegar
1 1/2 teaspoons mustard
3 cups spicy hot V8 (, or regular)
16 oz can kidney beans
1 14.5 oz can fire roasted tomatoes
salt and pepper

Steps:

  • In a large saucepan, brown the ground beef and ground sausage, using a wooden spoon to break it into small pieces as it cooks. Drain most of the grease and remove meat to a plate.
  • Add onion, bell peppers, and jalapeño peppers to the pot and sauté on medium high heat for 2-3 minutes.
  • Add spices, ketchup, lime juice, brown sugar, Worcestershire, vinegar, mustard, and V8. Stir well. Add beans, tomatoes, and salt and pepper.
  • Return the ground meat to the pot and bring the mixture to a low boil. Turn to a low simmer, cover, and cook for 1-2 hours.

2 tablespoons extra-virgin olive oil
1/2 medium red onion (chopped)
1 red bell pepper (chopped)
2 jalapeno peppers (seeds omitted and finely chopped)
3 cloves garlic (minced)
1 pound lean ground beef (can also use ground chicken or turkey)
2 tablespoons taco seasoning
1 14.5 oz can black beans, drained and rinsed
1 cup corn
1 14.5 oz can diced tomatoes
1/2 cup salsa
3/4 cup chicken broth
1/2 cup chopped cilantro
4 slices bacon
4 ounce cream cheese
Shredded Cheddar Cheese
One jalapeño sliced
cilantro (chopped)

Steps:

  • In a large pot add the extra virgin olive oil. Sauté onion, bell pepper, jalapeño, and garlic over medium heat until tender. Add the ground beef and cook until no longer pink. Add in the taco seasoning.
  • Add the black beans, corn, diced tomatoes, salsa, chicken broth, and chopped cilantro. Bring the chili to a simmer and cook for 30 minutes to allow flavors to blend.
  • Meanwhile, cook and crumble the bacon. Add the bacon and cream cheese right before serving. Stir until melted and creamy. Serve with desired toppings.

1 whole garlic bulb
2 to 3 tablespoons olive oil, divided
2 dried ancho chilies
2 dried chipotle chilies
1 bottle (12 ounces) dark beer
3 pounds beef stew meat, cut into 3/4-inch pieces
2 large onions, chopped
3 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (8 ounces each) tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 teaspoon pepper
1/2 teaspoon salt
Optional: Shredded cheddar cheese and sliced jalapeno pepper, seeded

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Brush cut cloves with 1 teaspoon oil. Wrap in foil. Bake until cloves are soft, 30-35 minutes. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork., Meanwhile, in a large dry skillet over medium-high heat, toast chilies on both sides until puffy, 3-6 minutes. (Do not blacken.) Cool. Remove stems and seeds; coarsely chop chilies. Place in a small bowl; cover with beer. Let stand until softened, about 30 minutes., In the same skillet, heat 1 tablespoon oil over medium-high heat. Brown beef in batches, adding additional oil if needed; transfer to a 6-qt. slow cooker. In the skillet, heat 2 teaspoons oil over medium heat. Add onions; cook and stir until tender. Add to beef., Stir in the remaining ingredients, mashed garlic and dried chilies mixture. Cover and cook on low until meat is tender, 7-9 hours. If desired, serve with cheese and jalapenos.

1 pound ground beef
1 cup chopped onion
½ cup chopped green bell pepper
2 ½ tablespoons chili powder
1 clove garlic, minced
1 bay leaf
½ teaspoon ground cumin
4 teaspoons finely chopped jalapeno chile peppers
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (16 ounce) can chili beans, undrained
salt and pepper to taste

Steps:

  • In a large saucepan over medium high heat, combine the ground beef, onion and bell peppers. Saute for about 5 minutes, or until beef is browned. Drain excess fat.
  • Add the chili powder, garlic, bay leaf, cumin, chile peppers, tomatoes, tomato sauce and salt and pepper to taste. Bring to a boil and reduce heat to low. Cover and simmer for 1 1/2 hours, stirring occasionally. Stir in the beans and heat through.
