SPICY LEMONADE WITH JALAPEñO ICE CUBES



Spicy Lemonade with Jalapeño Ice Cubes image

2 medium jalapeños, stemmed and sliced into 12 slices each
2 quarts lemonade, store-bought or homemade
2 to 3 medium jalapeños, stemmed, seeded and sliced into 1/4-inch slices
2 to 3 lemons, sliced into wheels

Steps:

  • For the jalapeñoice cubes: Place a jalapeño slice in each well of 2 ice cube trays. Fill with water and freeze until solid, about 4 hours.
  • For the lemonade: In a beverage dispenser or pitcher, add the lemonade, jalapeño slices and lemon slices. Let sit, refrigerated, for at least 1 hour before serving.
  • Serve in glasses filled with jalapeño ice cubes.

Steps:

  • Combine 1 1/2 cups vodka, 1/2 cup Pimm's No. 1, 1 cup fresh lemon juice, 1/2 cup each lime juice and honey, 2 teaspoons hot sauce and 1 scant teaspoon coarsely ground pepper in a large container. Cover and shake, then refrigerate at least 1 hour. Shake the vodka mixture again, then pour into a pitcher filled with ice and lemon and lime slices. Stir in 1 cup chilled lemon-lime soda.

Number Of Ingredients 7

1 quart(s) strawberry hulled and split in quaters
2 - jalapeno peppers seeds and ribs removed cut into four pieces
1 3/4 cup(s) sugar
1 cup(s) fresh lemon juice
1 - nice size pieces of fresh ginger abount the size of an nice size strawberry peeled and cut into thirds
3 CUPS OF SPRING WATER
1/8 teaspoon(s) salt

Steps:

  • Combine strawberries, jalepeño slices, 3/4 sugar, and salt in a medium bowl and toss to coat. Let rest for 30 minutes
  • make simple syrup by adding once cup of spring water to one cup sugar. also infuse simple syrup with ginger and one jalapeno cut into pieces. simmer until sugar is dissolve. after cool remove jalapeno and ginger root.
  • Remove and discard jalapeño slices from step one. Set aside 1 cup of macerated strawberries for garnish. Transfer remaining strawberries and any exuded juices and syrup into a blender. Add lemon juice. Blend on high speed until smooth, about 1 minute. Strain through a fine mesh strainer into a pitcher. Discard solids.add simple syrup after it has cool down about 15 minutes. Add reserved strawberries and more cold water to fill pitcher. whisk and combine Add ice. Serve in ice-filled glasses garnished with a strawberry and a jalapeño slice.
